      You'll outlive my mum who died just after her 66th birthday of brain cancer at age 66; I just turned 64; been vegan for several years; I don't know what caused her brain cancer but we looked after my Dad together and they were so close and Alzheimer's robs your partner of their memory of you; however it happened, health is the most important thing, after kindness and faithful love and friendship where one blends with the other.

    As a Non Vegan, but lover of Vege dishes. I wouldn't change anything about your dish. Looks awesome. I have a challenge. Can you make a Vegan Eggplant Parmigiana? I recently made the traditional one and I loved it. Thanks in advance.

      Pick up Limes has one also Avant Guard Vegan, (sp I should know, sorry) but Jill probably has a brilliant totally guilt free one! (I LOVED Avantgarde Vegan's sticky eggplant; vegan parmesan I was in heaven, no kidding that guy is making other food look seriously boring.) Cheers! I really do recommend Rich Roll's yesterday's release podcast on TH-cam with these guys; their story is incredible. For verisimilitude, I'd go with the other 2 because they're not stingy with oil and tamari; you wanted a credible vegan version and there you'll get it. This stuff is more about health; I don't use a lot of oil but thinking things over. You can do a balsamic reduction for all kinds of stuff and don't miss extra salt and oil etc. Interesting altogether. Will definitely try this one. Caveat; anyone thinking they can fry with water and doesn't have a non-stick something with a lid is asking for grief, let's get real.

    I've got the book and learned bunches from them, my husband is diabetic and really learned it is the saturated fat and cholestrol in all meat, dairy that is the culprit - his A1C was way over 7 and now about 6.8

    This sauce was aaammmaazzing! Thanks for sharing it with us! The first time I made it just as recipe follows. I decided next time to just make the sauce, keep in fridge and add it to whatever. This way it made it versatile. I love it bc I don't need to have cooked potatoes or cashews. I made it in 1 minute. It's so good I could literally drink it (mmhmm, I did), lol. I do think once again, of all the cheesy sauces I have tried, this is by far my favorite. You are on fire, lady!

      @@tallmantoo To clarify, I don't expect these sauces to taste like real cheese, but when people doing the videos roll their eyes in near ecstasy about how good the sauces taste, I do expect them to at least taste good, which I haven't found to be true, for me. I'm starting to think that maybe I'm not a nutritional yeast person.

    Looks so yummy. As you can probably tell by my TH-cam channel name, I am also whole food plant based. My family is not there yet but am working on them. HA. So I still have to have a meat based recipe at least once a week (down from almost every day). YAY. Celebrate the achievements where you can. :-) So glad I found your channel.       I just started my whole food plant based journey. My family is not. But we went from everyday meat to once a week. With a meal like this I can transition my family over to more whole food plant meals.

    Looks yummy! I’ll have to try your version of cheese sauce. I make a similar casserole except I never tried kale in it, and I usually add some slightly chopped or mashed chickpeas - gotta get those legumes in!

    This looks great, will have to try it soon, thanks! :) I'm imagining it would work just as well with macaroni too, to turn it into a healthy mac n' cheese but with veg added, something I've really missed since going vegan, will have to give it a go and see how it turns out.
    Would also be great with some quartered brussel sprouts, not that the way you've done it isn't great already, just drawing inspiration from it. Could also top with some halved cherry tomatoes, would look so pretty with the greens. :)

    This recipe sounds great, but I would make it slightly differently so it fits around my dietary needs, great idea, unfortunately I really couldn’t see the end results as there was no close up of the finished dish. Thanks for sharing

    Hi Jill, thank you for your great recipes! I’m wondering if there is anything I could use as a substitute for onion and garlic in this recipe please? I have found that eating low FODMAP helps me with some gut issues I am experiencing and so onions and garlic are out at the moment. Love to hear what you can suggest! 🙏☘️

    What brand of low sodium vegetable broth do you use? It's really hard to find low sodium vegetable broth in my area. The have low sodium chicken and beef but not low sodium vegetable broth. Great video.

    I'm thinking this could possibly be adapted, swapping the broccoli and kale for cauliflower and mushrooms, and adding basil and lemon juice, to be like Cauliflower Marranca, an old favorite from the Moosewood Cookbook. I used that cookbook a lot starting in the 80s but from my newly vegan perspective, it uses too much cheese!

      : On that same note, I make a similar rice and spinach/onion mixture and squeeze some lemon over the top (Greek style I guess) 🌹

    Love this recipe however I replaced the cashews with an equal amount of silken tofu and the rice with cauliflower "rice".

    This does look great and will try. If you don't use Liquid aminos since it is not organic so what can you use instead and also don't have white wine vinegar just ACV. Is that okay for this recipe? Thank you for your great channel

      You could use some miso paste or low sodium tamari in place of Braggs and ACV should be fine just different flavor.

    Do you need to soften the cashews by soaking for your magic bullet or will it work without? I know your powerful large blender will do raw unsoaked but just bought a manic bullet pro and thought I would have to soak it since I don’t have a powerful blender yet.

    what type/brand of rice do you use? I have never cooked rice and have rarely eaten it in my lifetime but this does look like a yummy dish.
