Great idea! I purée my veggies for Italian meatballs. But for meatloaf I fine chop and caramelize them before adding to mixture. I bake loaf with a pan of water under the rack. Keeps it moist. Delicious?

I make mini loaves and do half with BBQ sauce and have plain for those in my family who like gravey. Hey u did add the Boursin Cheese to the Mash Potatos! Since I've seen u do that I can't make Mash Potatos without it! Lol
Funny, my mom always pureed her onion and peppers because she knew I wouldn't eat the meatloaf if I saw the chunks of veggies! Today I still puree my veggies for anything I want the flavors without the texture. I know this recipe is bussing! Thanks for sharing! Christ blessings to you!

I just made this recipe for supper and didn't like how the wire-rack method turned out. For regular meatloaf, yes, that would be perfect. But for this recipe, the garlic cream cheese just melts and ends up on the sheet pan under the rack and I would prefer it to pool on the bottom of the loaf. So next time I'm going to use a regular sized cake pan, to encourage a crust on all sides, but without losing the Bourisins. Also, I added about 1/3 of jimmy dean sausage tube in the burger mix. Yum. Great recipe - thanks.

I believe you misspoke. Potatoes are naturally gluten free. I think you meant that adding cold liquid to warm potatoes causes them to be more starchy. As someone with Celiac Disease, I'm hyper aware of gluten. The meatloaf looks delicious!
