  • Many complain that you can't froth milk properly with Dedica's stock steam wand. However, by switching between "cappuccino" and "hot milk" modes at the right time you can actually get very close to what commercial steam wands do. Here is my take on making a cappuccino with Dedica EC685 in stock.

    Hi Yevgen. Looks amazing. I’ve some questions. What is fat percentage of milk? Is steam wand setting set up on “cappuccino adjustment”?

      Sorry for not responding right away, I missed your question. Actually as for the fat percentage I use anything between 2 and 3,2% as it is not fat that matters but protein. Look for the milk with higher protein as it is easier to froth. Usually barista milk editions come with higher protetin content.

    Great video! What measurements do you recommend for a single shot? Is it just half what you did in this video?

      Hi! I think it all depends on your preference. Traditionally single shot was 7-9 grams and double shot was 14-18 grams of ground coffee. However a single shot dose was never enough for me so I always brewed or ordered in coffee shop a "double espresso" as my base drink. The single 7 grams shot is just very little coffee for me 🙂. So 14-18 grams of coffee is my "normal single shot", I don't do less than that.

    Hi Yevgen. Great video. You really can make good latte art even with the panarello. Quick question, when I run the milk frother, it doesn't froth as long as your machine. Is there something wrong with my machine? It just barely gets warm before the lights flash and I have to release some of the hot water.

      Hi, thank you! The steamer should run for as long as it's on. Try intentionally turning your steam knob all the way into the "steam" section with a little bit of force to make sure you really active the steam mode. I had similar issue to what you described for several times until I realized that I didn't turn the steam knob all the way down.

      Hi! I always use high temperature setting. I think thermoblock in such a small machine does not provide for a good temperature stability, so brewing on the high king of gives you more flexibility.

      It is recommended to use cold milk (from the fridge). This gives you a more control over the frothing process.

    Подскажите пожалуйста, никак не получается толковый латте арт на этой кофе машине.
    эспрессо и молоко подготавливаю правильно (визумально все как видео уроках), а вот в момент влития молока, даже когда почти прислоняю пинчер - все равно рисунок сверу не формируется, а уходит вниз. Сверху остается только когда в конце остатки более взбитые из питчера доливаю..
    В чем может быть дело? Думаю может чашки маленькая.. у меня на 180 и 200мл..

      Если честно, сложно сказать. Если уходит вниз, то скорее всего молоко слишком тяжелое, т.е. недостаточно взбитое. А в конце как раз остается сама пенка. Может быть слишком рано выключаете стимер? Попробуйте дольше покрутить молоко.

      Hi! This one comes from China 🙂I not sure it has any brand, you can try getting it from Aliexpress. Many sellers currently sell these. Just look for "51mm bottomless portafilter for Delonghi Dedica" at the website, you find the option that suits you best.

    How did you insert the portafilter into the machine with one hand? My machine needs to be held with another hand for it to stay at one place

      This is a third party portafilter which fits very smoothly. The original portafilter pretty tough though, I wouldn't be able to fit it one-handed.

    Hi! Is there really a difference between the hot milk and cappuccino setting on the steam wand? I get the same result either way.

      Hi! Yes, there is a difference. In the cappuccino mode you mostly inject large bubbles of air into the milk. You can't really swirl the milk in cappuccino mode. In the hot milk you basically inject air (micro-bubbles) and it is good for swirling your milk. The main idea is to start with cappuccino mode in order to stretch the milk by injecting the bubbles of air, and then to switch to the hot milk in order to swirl the milk turning into the micro foam. The timing, as well as the angles, are very crucial.

      Hi! This is a good question. I use a smaller 350 ml pitcher and fill it about half way (around 160-180 ml). I was never successful with the larger 600 ml pitcher and more milk (it takes too long and I just can’t make a good vortex) so yes, I steam milk for each cup of cappuccino separately.

      Hello my friend, I do everything by eye. I start with little bit over half of the jar of milk. After the milk “expands” to approximately 4/5 of the jar and I start hearing that paper clipping noise I switch to “hot milk”. Hot milk mode is basically spinning the milk to better integrate bubbles from “cappuccino” mode.

      I start with “cappuccino” mode to stretch the milk to about 30% and then switch to “hot milk” to make it swirling and incorporate the bubbles.

      It all depends on beans, but usually somewhere between 1 and 3 of extra-fine.

      It all depends on technique and, which is also important, the milk itself. I found it that only high protein milk (like above 3g or protein) turns into micro-foam easily with this wand. Everything below 3g (like 2,6-2,8) tends to turn into large bubbles. Keep refining your technique with proper milk :-)

      @@painpeace3619 it's not fat but protein that makes a difference. Look for milk with higher protein (3g or higher). Over here it's usually 2,5-3,2 fat milk. But again, sometimes I see a low protein 3,0g fat milk. Fat alone will make big bubbles. Look for milk with higher protein.

      Hello my friend, I didn't change anything. The double-shot setting on Dedica aims at mililiters, not the time, I believe. So the finer you grain the longer it will take to get to the volume you need. The espresso shot should extract for 25-30 seconds.

      Добрый день! Да, все правильно, от помола. Чем мельче помол, тем больше сопротивление и соответственно медленей поток и лучшая экстракция кофе.

      Hi! I never used that machine, but briefly looking at the specs I guess it would be more about your preferences. The main difference is the heating system. Dedica has a thermoblock, meaning it reaches operating temperature really fast, you can steam as much milk as you want without having the machine to warm up again (I usually make 4 milk drinks in a row for my wife and kids and that's why Dedica is a better choice for me), etc. Gaggia has a boiler, I assume a very tiny one, meaning longer heating times, maybe worse temp stability because of the size, maybe one cup of frothing milk at a time, on the other hand it has cup warmer, but overall it is a very basic tiny-boiler machine. Also I like the overall design and the footprint of Dedica more than Carezza. Both machines have pressurized portafilters and panarelos. So it depends on your preferences.

      Hi! I don't have delonghi coffee grinder, but for a proper espresso your grind setting is somewhere around extra-fine. The exact setting will depend on your coffee beans, roast level, dose, etc.

    This is really inpressive but it is not "very close to a commercial steam wand". Dont get me wrong i dont want to play it down but even with a good not commercial steam wand you get better results relatively easy. Still damn impressive! Are you planning on upgrading at some point or do you love getting the best result with this maschine?

      Thank you for your feedback! I know what you mean and I agree. I haven't thought seriously about upgrading yet, as the war in my country changed the way we live and the things we buy. Eventually I would like to get a machine with proper 9 bars pressure, OVP, wider portafilter and better temperature stability. But that's something to think about after victory. Cheers!

      This is a slightly pasteurized milk (we have raw milk that lasts for 2 days, then slightly pasteurized that lasts from 7 to 12 days, and fully pasteurized that lasts for a year or so) if this is what you mean, but I didn’t do any tricks to it, this is how it is being sold by the store.

      @@UNKNOWN-jk6jb I am not sure, it all depends what do you mean by pre boiling. I think milk proteins are denaturated and destroyed when you boil it, which my affect the quality of your froth (as the proteins are crucial for good good froth)

    I have the exact machine, but when I push the far left button to start the extraction, it often just drips a bit and does nothing. I then have to push the same far left button 2-3 times before it starts the extraction process fully. Anyone know why it won't start the process after just one button push like it should?

      The process is that after you push a button the machine does a pre-infusion (drips a bit) and then stops for several seconds, and then it runs the actual extraction. Did you try to wait a few seconds? It sounds like your machine does the pre-infusion only. Perhaps there is an issues with programming? You can actually reprogram the buttons to change the extraction timing, I don't remember though whether you can change the pre-infusion.

      I think your panarello wand does not have "hot milk/cappuccino" settings, so it always injects bubbles into the milk for frothy cappuccino. I'd assume it would be more challenging to froth the milk for microfoam with your panarello.

    Я вчера так расстроился с кофемашиной,что сегодня не хочу делать кофе!
    5 лет пользовался 685 ой моделью,а вчера купил 885 ую!
    Сплошные разочарования !
    Элементарную ложку для кофе ,на которую раньше в 685 ой говорили что она плохая - теперь она стала вообще - ужас!
    Фильтра для холдера - вообще мрак !
    Я ещё успел купить 685 - когда не было резинок внутри корзин - теперь вместе с остатками кофе - резинки могут выпасть в мусорку ,да и вообще - для кофеманов - это НЕ ДОПУСТИМО !
    И наконец - Капучинатор !!!
    Это просто fuck,с первой минуты всбивания молока!!!!!!!! Молоко сильно нагревается,и у меня не получается сделать красивую пену как в прошлой модели !
    Жду такой же рожок и ручную кофемолку, надеюсь хоть в этом порадуюсь!
    На видео всё чётко - молодец!

      С капучинатором там главное поймать правильный угол и глубину погружения + время. По идее на 885 сделать правильное молоко проще, просто нужно набить руку спалив несколько литров молока) А вот сам кофе безусловно заиграет только на бездоннике.

      Можно, да, но нужно чем-то закреплять резиновую трубку, чтоб не сорвало, и эстетический вид с резинкой у машины уже не тот. Идея была попробовать как работают режимы hot milk/cappuccino именно с панарелло.

    Myślałem, że 14g to maksimum dla tej kolby. Powyżej tej gramatury kawa wychodzi kwaśna.

      Kawa jest kwaśna tylko vgen są niedoekstrahowana. Trudniej jest ekstrahować 18 gramów kawy niż 14, więc to może smakować kwaśno. Aby zrekompensować większą ilość kawy, należy odpowiednio dostosować ustawienie mielenia.

      @@yevgenshatalov Dziękuję za odpowiedź. Wydawało mi się, że dobrze zmieliłem kawę, bo mam uzysk 2 razy więcej naparu niż kawy w około 25 sekund. Wydłużając ten czas kawa nie dość, że jest kwaśna to jeszcze robi się jednocześnie gorzka. Myślałem, że to raczej ekspres nie daje rady. Jestem wdzięczny za wszelkie sugestie, bo jeszcze wiele nauki przede mną 🙂

      @@leju666 Gorzka kawa jest wtedy, gdy jest nadmiernie ekstrahowana, więc masz rację, trzeba znaleźć ten złoty środek. Dotyczących ten ekspres, spróbuj przejść na proporcje 1:2,5 a takze zmniejsz ekstrakcję do 20-22 sekund. Możesz też spróbować trochę grubszego mielenia na 18 gramów niż na 14.

      @@yevgenshatalov Dobry pomysł, spróbuję w taki sposób. A czy temperatura wody ma jakieś znaczenie? Może warto wcześniej trochę rozgrzać grupę@ albo wręcz przeciwnie ?

      @@leju666 zwykle zależy to od ziaren kawy. lżejsze pieczenie ziaren wymaga wyższych temperatur dla lepszej ekstrakcji. W każdym razie, zrobienie pustego shota z tym ekspresem przed parzeniem kawy w celu rozgrzania grupy to jest dobry pomysł. Zawsze robię to samo.

    Noticed a few flaws, measuring coffee grinds weight, but spilling quite a lot of it (roughly 0.5g), not tamping level, stopping the timer wayyyyyyyyyyy to late ( about 4s, as you're supposed to stop when the machine stops, which is 22.5s, which is also an underextracted shot)

      Hi! I agree, this one in particular is not the perfect shot 🙄. Indeed, it is not leveled perfectly and I did lost some coffee while dispensing it. Something I noted as well while watching the actual footage 🙈 But I still decided to leave it as is, as the focus of this video was steaming milk. I have another video, actually the one before it, where I did a more thorough work on pulling out the shot. I’d say better tamping, dispensing and timing 😉 Feel free to review that one and provide the feedback.

    what is this spinning technique does? this spinning here? 0:34 seems like your basket is for 15g - 16g max isnt it ? just saying

      Hi! It is just for better distribution of coffee. Technically, the basket is 18 grams, but different types of coffee usually have different volume after being grind (like lighter roasts are usually fluffier and take more space until being tamped, if you know what I mean).

      The spinning of the grind cup helps with getting all the powder off the cup and also makes a "mountain" on the portafilter so it will be easier to aerate and tamper without spilling on the countertop. But our friend Yevgen here was rushing and he spilled some grind nonetheless. :)
