    This is fascinating because the far and away most commercially caught fish in UK waters is mackerel but Brits don’t want it. They want cod and haddock from Nordic waters. All the mackeral goes to Spain and France, and with brexit, that’s gone into decline. If the UK developed a taste for mackerel, it would solve a lot of problems. Cheap, abundant, very healthy protein source that would support the local fishing industry. Oh well.

      I looooove mackerel. My late mother would cook it with a sauce of onions and fresh tomatoes. I make a similar sauce for various fish dishes. It’s only now as an adult watching her protein intake that I’m aware of how healthy mackerel is (I do still like cod too though, but I tend to cook it differently.)

    When you cook the fish the same way in the 2 dishes; are they really 2 different dishes? They're just different sides and garnishes. These chefs have no imagination.

    So I’ve learned, that my mum was a Michelin cook. Because every thing said is what she did. No wonder my food always disappointed. At least I grew up with fantastic food

      Methinks the yelling drama (and certain expressions) are there for the camera. Chef may be blunt in real life, and yell on occasion; but I doubt it’s all day everyday. That wouldn’t make good for food, that’d be more of a recipe for mayhem. The goal is a knowledgeable & skilled team that gives you their very best.

      @@m.theresa1385 A professional kitchen is extremely noisy: one has to yell to be heard. So the yelling is just a practical necessity and professional cooks know that it isn't personal at all.
