ok so the idea is genius, instead of oil for the tatare use warm bone marrow and instead of salt and spices use herbs and flowers.... but when does he taste it to see if needs anything else?
I noticed this too but I think this is actually part of the philosophy. It should taste purely of the ingredients involved. The combinations have been tested and the cooking methods perfected, there is no need and it is dishonest to start adding a dash of everything. You taste the life that the animal lived and the type of soil the peas grew in.
