My husband and I are from California and we spent 10 months in the UK last year. One of the main things that we miss is THIS is not chicken! It was one of our absolute favorites! I hope and wish and pray that we get that brand here in the US someday soon!

I loved when you said that curries are a British comfort meal, here in the US they can be but Mac and cheese, mashed potatoes, and chili are the first comfort meals that come to mind :)

I received your cookbook a few days ago and made the Dirty Fries yesterday. It was so good! That walnut meat takes it to another level .Now on to another of the recipes. Does anybody else run to get the cookbook before you sit down to watch? 😂
If you're baking in a frying pan I highly recommend sunflower oil or another high smokepoint oil (though sunflower is cheapest by far). at 7.05 you can see all the smoke from the olive oil that's just burning and evaporating. Sunflower will stay in the pan much longer, functioning as a conduit for the heat from to pan to the mixture next to having it not stick to the pan.

Thanks for the recipes Maddy!This is my 1st time posting a comment and it is about something I have been struggling with for a long time - and with what has been happening in France with the farmers, even more so. How do you deal with seasonality? Tomatoes/zucchinis/eggplants in winter for sure come from far away, or from heated greenhouses and I struggle with the climate impacts of such crop growth ☹️
I do my very best!! Always trying to shop local each week and buying the veg that’s in season. As my job is a recipe creator I often have to share recipes outside of these specifics but I do what I can when I can ❤️

For my fellow Americans, I would suggest the chick’n made by Daring. It is the absolute best vegan chicken I’ve found here. However, I think based on the measurements given, you would need three bags, so it gets a bit expensive. So perhaps do a combo of Daring and then tofu or tempeh.
@@rileylawson9958 in this particular preparation, I wouldn’t sauté it like the directions say. I’d thaw it and then toss into the pan at the step in this curry recipe says to do. I used Daring in a vegan chicken pot pie, and didn’t sauté it. I just added it in after all the vegetables had vsautéed and I made the cream sauce. Let it heat through prior to filling my baked puff pastry shells. It was delicious.
omg bang bang brocolli..agreed i skimped on the coating and didnt want it.. then made it as it should be and ate the whole head over 2 days..could have eaten in one, but had other stuff..
A vegan comfort food of Mine IS falafel, i Bake them. The First I could cook was a oven Curry with cauliflower, chickpeas and pears, ITS our traditional Christmas food since I was 16. Every year second day of Christmas and incedently, IT Happens to BE vegan
I had to look up Maris Piper potatoes, I don't think we have them here in the U.S. That's a pretty exotic name for something that looks like our standard russet here in the States.

Nearly every recipe I see has garlic and some sort of heat. Can you help me w9tk out how to do this recipe without the ingredients that upset my tummy. I don’t as I have a vitamix which is a very high speed blender and I just blend slowly at first and increase the speed until it’s totally smooth. If you don’t have a high speed blender then definitely soak!
@@zellalaing5439sunflower seeds! They are also quite plain and neutral in taste, which is the main reason people use cashews. They don’t have as much starch as cashews, but they still have some, and if you need to add extra you can use tapioca flour/starch or cornstarch. Or if it’s something savoury, some cooked potato. Also you don’t have to soak them in boiling water for as long as you do cashews, if at all.
As a meat eater I love watching these as ways to cut back and also save money. I love it too because I could make the walnut meat but still use dairy cheese so thank you for the recipe ideas!
Speaking of Mexico, I went to Oaxaca recently and actually the indigenous cuisine there (aztec/zapotec) is originally vegan. Meat only got introduced when the Spanish intruded on Mexico. Took a vegan cooking class and it was absolutely lovely.
I'm following Bryan Johnson's Blueprint diet...Please try it. It's delicious and it keeps me vegan and healthy. You need to change the white potatoes to sweet potatoes and you need to eliminate processed sugar.

Maybe add a cup of cooked rice? That would help to bind it. A tablespoon of tomato paste, too? Now I want to try it! Maybe cut back on the walnuts and add lentils? I need some burgers for the freezer! Good suggestion!
@queenbka thank you! I need to try it. I added rice to a veggie burger recipe once and it was the best texture. Great chew and not mushy. I didn't get the flavor right because I used too much worchestershire sauce and haven't tried again. But I will!

You can also buy vital wheat gluten (for making seitan) in person at many grocery stores not just online!

That isn’t smoke, it’s water evaporating from the mushrooms in the walnut meat mixture 🤩

I’ve found the Daring chicken to be a bit dry when I sauté it like the bag recommends. Do you have tips for alternative cooking methods?

What would you say is a good nut alternative to cashews? Theyre the only nut I don't like and I really can't stand them, yet love all others.
