      I make a dry mix that you just add the veggies/meat and water to whenever you get ready to make it.

      @@lyndiafentress4405 if they have dairy in it, you technically aren't supposed to "can" them per safety guidelines, but I have seen people do it. I prefer to do my dry mix recipe and make it fresh when needed, only takes a couple mins.

      No possible way I could have said it any better. I too am 73, I homesteaded for 20 years in the 70's and pretty much had to make it all up as I went along. It's true after all...old dogs CAN ABSOLUTELY learn new tricks. Thanks!

    Love the apron!
    When I was young, aprons were out of style. My mother-in-law started her day by putting on her apron and it remained until bed time. I thought, Oh, how old fashioned!
    Then, I started learning the “old ways” and started preparing my own baby food and meals from scratch. Even when I worked 60-70 hours a week, my weekends were spent making meals for the week.
    I quickly learned that an apron saved my clothes from a lot of stains!!
    It took years to find an apron that was actually comfortable but if you’re going to actually work, an apron or two are absolutely necessary accoutrements!!

      @Kindred K9 Standard Poodles msg is naturally found in such foods as mushrooms and tomatoes. It's what gives that umami flavor. 😋

    To make your cream of mushroom soup gourmet put a little thyme in with your mushrooms and onions while you are sautéing them. Make it with half and half instead of milk.
    After the soup is nearly done put in a cap full of sherry or white wine into it. Let it cook off a little.
    Now you have delicate, delicious gourmet soup. It makes casseroles extra special, also.

    My Mom always had a can or mug of bacon fat in the fridge and then came the time when we were told that was bad for us and along came vegetable seed oils. Now we're back at square one😅 Thank you for this.

      Lol we must be the same generation. My mum always had cold fat (from bacon etc) in the fridge. It’s crazy that we went from A to Z and back again. You have to wonder about the impact on processed food leading to ADHD etc and allergies.

      I save all my fats when I do chicken broth beef broth and turkey broth and put them in ice cube trays and freeze them. Then bag them up and put them back in the freezer. I don't do that muck bacon but I do have my fat cup in thr fridge. Wonderful for drop biscuits.

      There’s even a book talking about how animal fats were used!
      When we buy a cow for processing, I always request the fat be given in bags so I can melt and freeze. It can be canned, too. I was raised that chicken fat should be saved and used for frying. It has a mild flavor.
      I gave up pork when my best friend died of an antibiotic resistant bacteria a few years ago. I properly cooked pork also has lots of parasites (and bacteria due to processing methods these days) and pigs are the vacuum cleaners of the earth. Junk in, junk out.

      Thanks for the recipe on making cream soups. I buy my canned soup on sale for $6.50 for 12 tins (.54 cents a tin. Quick and easy for me . I always have a case or two of cream of mushroom soup on hand as well as cream of tomato soup. I use the soups to make gravies and use them all the time for my casseroles and when I make cabbage rolls. These are bought on sale otherwise they can be as much as $2 for one tin. I even make sauces for stroganoff I'm just tough to add sour cream or yogurt. Bovril makes a wonderful colouring for gravies.

      @@teslaandhumanity7383 No. It’s is a common flavor enhancer that is used in Japanese, Thai, Chinese and Korean food foods. I looked it up to confirm and the internet said it is known is some places and Chinese salt. 🤷🏽‍♀️

      Me to. Years ago I got severe cramps in my leg from canned soup. Thought it was a blood clot. Knocked me to the floor. Never touched it again.
      The last time (years ago) I had Chinese takeout with MSG I got such a rash I was crazy for 3 days. Doctor gave me steroid shots.

    I just recently made cream of celery soup with a harvest from my garden and I used white beans instead of flour to thicken it. An immersion blender is great to purée it a bit and I love the taste and texture! 💕

      I used to have a neighbor in her 50s who genuinely didn't know that apples grow on trees.
      Age has NOTHING to do with it.

    I have friends that ask me " is cheaper and faster to just buy the salsa, or can beans, vegetables etc etc etc" I tell them, yes ,of course it cheaper and faster, but the flavor are totally different, I know what goes in my canned foods, and I LOVE doing it.     This looks great! So sick of the oversalted versions from the store. Plus since I used my Instant Pot as my crock pot, I can make the "Cream of" soup on the saute mode and then add my other ingredients for my recipe, thus only one pan to clean at the end. Also, I have found different brands of "cream of" soups vary widely in their taste, and making your own would be the what it should taste like. Thanks for this!

    Campbell's soups now have genetically engineered ingredients or gmo in them. I just threw out all my soups I bought on sale awhile back. I'm not eating that garbage. Thank you for sharing.

    I love this channel! You have so much practical homesteading knowledge and I’m thankful you take the time to share it. My grandmother was an excellent homesteader too, but unfortunately she has left this world. My mother didn’t like to cook and after a few years, we didn’t keep a garden anymore. I now have some physical disabilities and I believe they are due in large part to a lifetime of the poisons allowed in the current American diet (and water and air). Many ingredients used in American foods are illegal in other countries because of their toxicity. To maintain our health, we must be mindful of what foods and drinks we serve ourselves and our families. You are an excellent resource to help people see how they can take positive action to live their best life. Thank you! God bless you.

      I personally think the older generation liked a long time (born 1900 - 1940) is because they were not surrounded by plastic, hormones in all your food, preservatives in all your food. Plus they moved a lot more then younger folks did, because they had to. So they may not have 'exercised' as such, but I think they got more physical activity in, just in the course of their day than newer generations do. If you think of it too, back in the day a lot more people farmed then do today and I know farm work is not easy.

    The cream soups at the store have TERRIBLE UNHEALTHY ingredients which is why I don't buy them anymore. THANKS for these recipes!! P.S. Ritz Crackers are BANNED in Europe due to the unhealthy ingredients 😉 so glad you didn't use them in your casseroles!

    Hello I'm new to your channel and have never made homemade cream of soups, I agree with Gabby Lowry after reading the comments, but you made it so easy to follow and not rushed. I like that. I've just retired a few months ago and I have always had fast boxed or take out foods, so I have the time and I am learning how to make foods the old fashion way and healthier.

    I have been thickening my sauces with flour and water for years
    Instead of water substituted milk for cream soup just like you said canned soup is very, very bad for anyone’s health!
    It is well worth the effort and tastes great! Thank you!

    it's basically a white sauce which can be used as the base for gravies , creamed soups , or mac and cheese or eggs benedict sauce by adding more butter and tarragon.

    If your soup doesn't thicken properly you can also just take a wire mesh colander/strainer that fits inside the pan yet allows the soup above the bottom of the strainer, place it in the pan and using a wisk add flour directly to the soup. Remove the strainer. This keeps lumps out of the soup.

    I made mushroom cream of soup for a chicken spaghetti recipe. It was wonderful tasting. I am so happy to know I can make this from whole foods and no longer have to use a can of chemical goop. Thank you! I can't wait to try the crackers.

    I have made cream soups for the last couple years and will use dehydrated mushrooms also. I also add garlic powder to the recipe. I can make this soup for pennies and know that it is so much better tasting and more nutritious. When you are cooking in large batches the cost of cream soups really add up. The recipe you just made would have added 12 dollars to the cost of a meal, for many people that would keep them home from a church get to gather.

    Didn't realize Campbel's had added so many extra ingredients. I have a few cans, glad there aren't too many.
    Thank you, Ruth Ann, this recipe looks easy to manage about the same as making gravy.
    As a mom of four grown children and one mature teen, who works and has purchased his own car, it is refreshing to hear your children playing and sword fighting in the background 😊 ! Brings back good memories of my kids playing and also how my brothers and I played when we were growing up.
    Their playing didn't seem to faze you, Ruth Ann 😊. My mom use to say "no blooding curdling screams all is well," haha!

    This awesome! I no longer live in the US but still feel the need to make a few of my mothers “comfort foods” I grew up on. A few of them call for “cream soups” (celery, mushroom and chicken were mom’s staples) which are not available in my country. Now I can make the recipes!     I use white pepper in my soups and for the celery soup I season with celery salt. I them use the immersion blender to make it smooth.

    ❤❤❤Thank you so much for this. My youngest son is on chemotherapy and has a allergy to metal, silver and tin. Ive been struggling so hard to find a way to get rid of all the canned goods in my home (getting rid of the silverware was already tuff enough and pricey). I will never buy canned soups that you have made again, we actually eat alot of them that you have made, his favorite is chicken. Truly, thank you🎉🎉🎉

    I stopped using Campbell's canned soups many years ago because of all the additives in the soup which I chose to avoid. I will buy some organic soups, but only the top brands and only after I have read what ingredients are in the soups. I love your cream recipes and hope to make some soon. You use all the ingredients I wish to consume and can't wait to try them. I am all for healthy, holistic eating, but I am not vegan or a vegetarian. However, I do consume products that are non GMO, do not use any of the toxic ingredients which can cause cancer, not do I use foods that are not antibiotic and hormone free. So happy I found your channel.

    Just bumped into your channel...and I said... "I wonder if she has the same recipe as I do...???"
    Pretty darn similar... I LOVE the added onion...besides that...the only difference is for my liquid... I sometimes I use half whole cream and half whole milk...However...I generally use just whole milk...But... I'm going to try your recipe tonight. . & see if "the boss" notices...(lol) [we aren't getting any younger... and he IS supposed to be following a reduced calorie diet...]

    I just made your cream of recipe as a gravy and…WOW!!! Everyone loved it! 🎉 literally only one serving left. I even made it gluten free and it still tasted amazing. My daughter said it’s her new favorite!
    Will never have to buy those overpriced cream soup cans or gravy mixes again.

    ANOTHER TIP: To avoid the undesirable flavor of FLOUR in your soup stir it in the fat until it begins to thicken and turning brown. Same for gravies.
    The bad flavor of flour will then totally eliminated.

      @@delladearest2511 Yes, when you add the flour to the fat (bacon grease/butter etc), if you cook that mixture just a bit more, it will eliminate the 'flour' taste, as well as give your cream of XX soup a darker coloring (brown). You want to cook the fat/flour mixture for a bit anyway because it cooks the flour to a safe temp - uncooked flour is harmful. That is the only difference between white gravy and brown gravy - how long you cook the fat/flour mixture....browning it also gives it additional flavor, but it does turn it from white to brown.

      I was taught to cook the flour 5 minutes. The fat and flour mixture should bubble lightly.

    i am so glad to see flour on your apron and the kids making noise upstairs. This is like REAL LIFE. Many times I watch cooking videos and and they are so perfect, it makes me feel inferior. I don't know what it is, but flour just jumps up and sticks to me just by looking at it.

    I'm not supposed to eat dairy or grains. So I made this with cassava flour and coconut milk and it was fabulous! Everyone gobbled it up and the picky teenager went back for seconds! I love watching your videos so much. Thanks for sharing your wisdom and knowledge with us!

    I loved your son’s reaction when you said you were adding fat🤣🤣🤣 I’ve been making cream of soups for a few years now and instead of fat I use vegetable broth. Taste’s just as good and helps keep your cholesterol down

      Please consider watching a short video by Dr. Anthony Chaffee about cholesterol, the numbers and "science" are not what everyone thinks! We NEED animal / saturated fats FOR healthy cholesterol levels! The sugar companies bribed 3 Harvard professors years ago to say the heart disease, cholesterol, etc. were from fats when it was really from sugar! Dr. Ken Berry has over 800 videos on all kinds of geeky topics including cholesterol! Definitely check out the comments sections too as they are FULL of people's stories of healing and improving their health issues!!!

      Our brains need cholesterol though, keeps them spongy and neurotransmitters functioning i.e. helps prevent dementia. Also, higher cholesterol reduces anxiety and depression, and some kinds of cholesterol is good for our hearts. Figuring out that not many of us need cholesterol medication does cause anxiety and depression to Big Pharma companies tho.

    I never buy canned soup at all. I make my own and I have been making my own for years. So many recipes call of canned cream soups but I don’t like them. I’d 100 times rather make my own and I’ve done so for 50 years. Thank you for this.

    I love how you make it seem so simple - which really, it is! I often make a SMALL pot of soup to go with our dinner and I start making it while I prep the rest of the meal. We just have it alongside the main course - not as a separate course because I can't be bothered faffing around like that. We used to always have soup to start and I think that's one reason why obesity wasn't such a big problem when I was a kid. Great video! Cheers from Oz!!

    Use the last two inches of your celery and plant it butt-down in a medium pot, it will keep on giving with a little care I promise you! Works with onions too but for scapes 🌼 thanks for this recipe!

    My oldest is deathly allergic to dairy, and store bought cream soups are full of it. So I’ve been looking for a delicious alternative and I think this is it! He’s wanted me to make some chicken recipes, but without the cream soup, I didn’t have a non expensive alternative. These look fantastic and I can’t wait to try it. Thank you so much!

      If dairy is an allergy, canned coconut milk is a good milk replacement.

      I think she used dairy in this version but you could probably substitute unsweetened almond milk or coconut milk.

      Creamed cauliflower will sub for dairy milk to thicken... or xanthan gum... Will also make it keto friendly ☺

    I really like the way you add the onion...why have I never figured that out. This will really speed up my process. I use cream of soups for cooking for a while so I've also been looking for cream of recipes for the reasons you mentioned. Really appreciate your video.

    This is great. I love adding a can of cream of chicken soup to my homemade chicken soup, but after reading the ingredients it's not very desirable. I didn't realize that making "cream of starter" was so simple. Thank you.

    My reason to start making homemade cream soups is cost. Publix Supermarket here in Florida priced Campbell's to $2.05 for one can of soup. This is insane. Thank you for your video. I'm now encouraged to make my own.

      I've not bought Campbells'soups for decades, as they taste the worst of all tinned soups. I usually keep a tin (mushroom) on hand for emergency use, but choose from other brands. Mushroom is so easy to make, once you have the mushrooms! I sometimes thicken with cornstarch (cornflour in English), but have used rice flour as well. Or mealie meal.

    These canned soups are too expensive for me, thank you so much for your video. Also, I almost always end up tossing half and half, heavy cream and celery, now I can make and freeze my own cream soups. I think they add corn starch or something similar, flour is okay with me. These small changes are simple ways to save the planet. I am a new subscriber

    Thank you for taking the time to show how to make Cream Of Soups. I’ve tried several times and it never turned out but now that I watched this I realized I added to much liquid to mine. I do make my own gravy that way but never thought it could make cream soup by adding different ingredients. I’ve had to change cows cream to goats cream and I can certainly use fat instead of vegan “butter” and I can use one of my other flours in place of the regular flour. I realized that nothing can replace the flavour of the original cow’s cream. 😊 That casserole looks so delicious.

    I just made some to use in my venison tips recipe. I used your base and added a jar of home canned mushrooms. I used a jar of mushroom broth with the cream as my liquid. Oh my, it is delicious!! Thank you for sharing!!!

    Over the last two years, I have had many "firsts"ie garden, learned to can etc. I have just added another "first". I made home made cream of broccoli soup. I couldn't believe how good it was! Now my asparagus is coming up..that will be my next cream of soup.

      I'm with you there. Why do they add so much sodium? By the time you've added other ingredients, the whole casserole/crockpot recipe is way too salty. It is a pain to have to read every label for soup, broth etc. Happy to find this video.

      Hi! Please consider watching videos by Dr. David Brownstein about salt - proper salt with necessary minerals like Redmon Real, Celtic Gray, and Himalayan Pink salt. Salt is crucial for good health and I learned so much in his videos on salt and iodine. He says 97% of Americans are deficient in iodine and its needed for every cell in our bodies and deficiency causes sooooo many health issues, especially with hormones but lots of others too.     Thank you so much, you are a true blessing! I have several family members with dietary restrictions, so making our favorite Thanksgiving dishes can be challenging. I've been trying to find organic versions of many of these prepared "ingredients", and this year my usual replacements are missing from store shelves. Now I'm armed with a recipe to make my own!! I just need to find one for evaporated milk and I'm good to go for Thanksgiving and Christmas. 😊
