Very good improvisation. Is the duration for soaking the rice different on how it'll be cooked? For Chinese steamed savoury glutinous rice dish (the one with mushroom, dried shrimp, Chinese sausage, peanuts), different recipes suggest anywhere from 2 hours to overnight. I made times 3 times with varying result. In my maiden attempt, I soaked it overnight but the rice became brittle and broken. The next attempts were 2 and 4 hours but I didn't see much difference. Maybe has to do with the quality of rice 🤔.
Hi Pretty Catmint, I really love your enthusiasm in cooking the sticky rice. Normally a recently harvested sticky rice will need less soaking time, maximum 2 hours. I really missed my younger days when we get to eat newly harvested rice, the aroma and the texture of the sticky rice was fantastic. However, if it is an old rice (harvested one year ago or longer) need to soak at least 6 hours or more. From my experience those packet of imported rice from oversea are mostly considered a year old or more harvested rice. Also sticky rice have many type of varieties and grade. The softness and grains are also different. By the way, the rice I cooked this time is considered a good type, it's very soft and delicious my family loved it. I will surely go back for more. What type of rice did you use? Just plain short grain white rice? Is there a difference between short grain white rice AND sticky rice? Is sticky rice just plain white rice? Thank you so much!! This video is very helpful because I don't own a steamer and cannot invest in one at this time.

The glutinous rice grain is different from the normal rice as the color is milky solid, the texture is sticky and clump together once it is cooked. Whereas a normal rice grain is translucent in color and not sticky once it is cooked.

If one doesn't own a steamer but wishes to cook sticky rice, I would recommend to make one. Otherwise, purchasing a steamer is an option as well. Hi LeftPinkie, thank you for the feedback 😀 Yes, sticky rice/ glutinous rice is best steamed, always, for us Thais. It is only boiled when we make it into porridge-like desserts. So even if the kitchen lacks a proper steamer, the homemade one will work in a pinch! Hope it helps 😀

Yes pre-soak overnight or minimum 6 hours
