    For the non Thais, sticky rice is different from the normal rice. Look for “glutinous rice” printed on the pack. Yes, you need to wash the rice. I would say rinse the water 3 times should be enough.

      Yes, we do have different types of sticky rice some are black/purplish, white & light brown. Its completely different from the normal rice.

    Hey mark, ive grown up in the south my whole life. My bfs friend comes from Thailand, and she has cooked for us. She moved back and ive been craving her food. I have tryed some of the recipes you have posted and everything you have made is exactly like hers (only we like a ton of hot chilis)! Thanks for posting your travels. Cant wait for the next

    My mom loves to have her sweet rice stickier so she'll pour 1-2 cups of water ontop the semi-cooked sweet rice, stir and let the rice stand for 5 minutes and then steam it again. Always so yummy! Thanks for sharing Mark. Always a pleasure to see your videos!

    I remember when I was little, my grandmother would always cook rice in those wood basket.. Not same as the Thai basket. It's soooo good and soft. It smells good too! Memories!

    We just returned from Thailand a couple of days ago. Are you Thai? I am in love with the Thai people now. Your facial expression warms my heart because I feel like that is how all of the Thai people look. They were the most kind, humble, and friendly people I have ever come across in all of my travels.     In Malaysia, on certain occasion, we add some turmeric powder when soaking it with water. It will give beautiful color to the sticky rice.
    Usually we eat it with rendang, curry or grated coconut mixed with palm sugar/gula melaka and pandan leaves.

      Mark Wiens Sorry I forgot to mention that we also cook the rice with coconut milk mixed with a little bit of salt (for creamy taste), and pandan leaves (for aroma). You can also use pandan leaves extract to give the rice nice green colour and flavor.

    Sticky rice will stay pretty wet and edible for a good day or so, it takes a few hours to cool down and harden a little. Sticky rice is best when it's fresh. You can eat it with some beef jerky or some pickled catfish and eggs, or pickled pork. Or you can even use pickled leafy veggies. That's part of the Laotian way to eat it. I myself like to press the rice into a patty and add a little fish sauce. It also goes well with ranch.

    Neat to see this video. I grew up on sticky rice in TX. We used short grained rice, rinsed it well, and are it hot with butter and sugar like oatmeal, cream of wheat and grits. Sometimes we added cinnamon and raisins (shortcut rice pudding). Have it with bacon, toast and scrambled eggs and you have a yummy breakfast!

    Sweet rice works very good for this which I’m pretty sure is what he’s using it doesn’t come in the package saying sticky rice it’s sweet rice or another similar to it it’s gelatinous rice

    Great video! Just wish more people would acknowledge that sticky rice is a staple in LAO cuisine... we literally call ourselves “louk khao niaw” which translates to “children of sticky rice”. I know that sticky rice is eaten in Thailand especially in the Isan region (that’s because they are actually originally Lao people)... but it’s not a staple, Jasmine rice is the staple for Thais.

    I used a combination of this recipe and 2 others including a sticky rice vinegar which called for Mirin (I used Sherry) in addition to orange and lemon slices added to the rice vinegar and sugar and Kombu/kelp, Also there was also a variety of different stages of cooking and cooling the sticky rice before you take the lid off as well as how much water you should add after soaking it just before cooking and I opted for a little over 2x the amount of rice that I thoroughly washed and soaked for multiple hours like you advised, having incorporated your "pre-soak" methods as well. Then I just boiled/simmered and cooled it in a stainless pan with a heavy bottom for a total of about 40 mins with just 15 mins on low after boiling for a minute . I utilized the "cutting" method to fluff the rice in a separate casserole and sprinkled the vinegar dressing over it. Yumm.

      Trip Nick when I was little, my grandma would sometimes make me sticky rice with peanut butter in it. Flatten a handful of the sticky rice over your palm and spread a thin layer of pb over it & roll it up. You’ll need something to drink with it, but you should try it, it’s really good.

    Great tutorial, that rice seems to be perfect!
    I have a question, what about to "wash" the rice?
    I'm askinng because In some countries the rice is washed before cook to avoid the use the white residual water (looks like coconut milk)
    Do you wash the rice before prepare it or do you keep it to obtain the sticky effect?

      Mochileros Hey Nelson, muchas gracias. For this recipe I didn't wash it, I just soaked it overnight and some of the white starch came off in the water while soaking. Then I just drained that water before cooking. Hope you are doing well!

      Maybe the white water helps to make the sticky effect. I usually use the "umami" and garlic to enhance the taste but never tried the sticky style. I will...! Cheers!

    Well don’t you wash the rice before you leave it overnight that’s how I was taught to prepare it . And once cooked while the rice is still in the basket roll it into a ball by swirling the basket! Makes it easy to pick up and put in the container !

    What is the maximum amount of glutinous rice that can cook in that bamboo streaming cone please. It's for a party but I am concerned how far up the steam would go through. I suppose I can turn the rice to keep all evenly cooked. Any suggestions please. You did mention 1 kilo but more? ..Thanks.

    in Minneapolis Minnesota we have a large Hmong population and I've tried something they called purple sticky rice. idk why it was purple but it was so good and ever since then I've been in love with sticky rice.

    What we do in Scotland with the sticky rice after we cook it is, while its still hot we add a tin of evaporated milk and some sugar and eat. We also like it plain with plenty of salt and eat it with a pork chop or steak. Delicious!

    Another great video Mark! I love your 'how to's '; they're so accessible. I'll certainly keep your tips in mind for the perfect sticky rice, never knew how they accomplished that...
    My tip? Take a wide pronged fork and stir throughout the cooking time. Although my rice is not sticky (but will be soon thanks to your video), I always manage to stream my rice to exactly how I want it: light, fluffy and tender.. perhaps you know this already, but if you dothen maybe it'll help someone else...

      Yes, its called those 3 names. However when you go buy a bag or rice, it will usually say sweet rice which means sticky rice.

    I just wanted to share a great method for fast sticky rice. I only soaked it 1 hour and wrapped the rice in a clean damp cloth that was the thickness of a scarf, although i imagine using a clean dish cloth will give the same result. Tie a knot in the cloth so the rice is enclosed like a ball. Use about a inch to inch and a half water in a standard pot and bring to boil and turn to a simmer. Put your cloth ball in the pot but only so it is being held between the pot lid and rim of the pot, and so the ball doesn't contact the water. Leave for 20 to 25 mins and turn off heat and let it sit there for another 5 to 10 minutes. The result is just how sticky rice should be. Of course the longer soaking of the rice is always the best advice but honestly you are unlikely to notice a difference when trying this method.

      Yes, you can steam those regular rice, too. You can use like the one he meant it you could go buy a steamer. You need another pot of boiling water. When you steam the rice for 45 minutes. Once the rice is ready, take out the rice into the bowl and pour hot boiling water above the rice. Soak it until there no more water in the rice, but have to stir it 3 or 4 time. When there no water and restream the rice again for 45 min.

      It would probably be hard and inedible otherwise. Imagine steaming pasta instead of boiling it. I think you get the idea.

      Glutinous rice is rice that is more glutinous than normal rice. If it didn't have gluten it would not stick the way it does

      In Thai culture, sticky rice in particular is eaten with your fingers. Most often you take a small amount from the common pot/bowl, roll it into a ball and pop it directly into your mouth. If you buy a single portion, you tear apart a small amount from the whole and do the same.

      TheOriginalOrkdoop , if you cover it, you don’t need to flip. If its just wrapped in cheesecloth or muslin and not covered then, do about 15 min on one side and about 10 min on other side:)

    Some peeps suggest using boiling water after rinsing to soak the rice instead of waiting overnight. Then drain after 20 min. Steam as per your instructions.

      yes that is what I had when first tried this at work, it was with some kinda hot sauce they would make, it was so GOOD!!! (Don't work no more and I miss the sticky rice & hot sauce!!!! :( . There was LOTS people that were from Thailand at the work place.
