Mango sticky rice is one of my favorite desserts. The recipe I used made a large batch since I would make it for my coworkers as a lunchtime treat (actually cooked the rice in my office in my rice cooker so it would be fresh & warm). Your straight-forward recipe turned out perfectly on the first try! I only had coconut cream so I added 1/2 cup of water to the can and added that to the pot, then a splash of water for the sauce. My mum makes great sticky rice the traditional way and was so impressed she's even talking about it the next day. She said it tastes just like it does at Thai restaurants and would be great with other toppings as well. So happy to have this in my recipe rotation, thank you so much!!!!

Oh amazing, i might try this with a tian op candle ibstead of pandan. I still remember vividly my first mango sticky rice with toasted mung beans. Its such a simple but amazihg thing. And its comforting whilst involving fruit and not being a heavy dessert like chocolate.
Thanks for the method! I’m Thai and tried this out and it worked better than the other microwave method i was using. The boiling water soak is probably key. However, the amount of coconut milk was way too much for the rice. Probably could have used half as much. Coconut milk should maybe be like 60% of the dry rice weight but this recipe has more milk than rice.

A mango that you think is ripe but actually isn't feels like one of the greatest affronts ever because the potential there is SO great but the reality soooo disappointing. This is one of my favourite desserts. Every time we get Thai I get sticky coconut rice (sometimes without mangoes when they’re no in season). My local Thai restaurant uses black sticky rice. I looooove it.

I swear you make my favorite foods! I made this for the first time last month. I will definitely try your recipe though. If you have a rice cooker with a "sticky rice" setting, this can be used to make the sticky rice without soaking as well (I have heard the brown rice setting might work, but haven't tried it). Just be sure to rinse the rice well as Sheldo mentions. Instead of using the lines in the rice cooker that are meant for Japanese sticky rice recipes, use 1.5 cups rice and 1 cup water by volume (or 1 part rice to ⅔ parts water). If it turns out too soft, reduce the water a little next time. My other recommendation is to try this with durian instead of mango (both are really good).
I use the microwave method to make Chinese dishes with sticky rice too! It’s very adaptable and very useful. You’re making me crave Che! It’s so good, so comforting.

We're out of mango season here, so tinned mango it was. I only had half a small bag of glutinous ring and a tin of coconut cream in the cupboard so had to bodge the quantities a bit but it still came good. The rice is tender, and the finished the dish is the right amount of sweet and salty to cover up my mistakes. Can't wait to have another go.

Just tried this recipe. It's very easy and delicious. Although if you are like me who doesnt like sweetness that much (let's say if you find kinder chocolate egg/bar too sweet), halve or even use 1/3 of the recommanded sugar.
In 2013 my wife and I were on our honeymoon in Paris, France. We had a lovely meal at Thai Vien 2 in the 13th Arrondissement and the waiter asked if we wanted to look at the dessert menu. I love dessert, so I naturally said yes. My wife typically passes on dessert but humoured me. Reading through the desserts, I commented on the fact that they serve mango sticky rice. My wife thought that was the dumbest thing she had ever heard... Obviously that meant I had to order one. It took a significant amount of convincing. but she tried a bite. We had to order a second one. Fast forward 9 years and mango sticky rice is still something she raves about. Thank you, Sheldo! Now we can make it at home.

If you have a rice cooker with a "sticky rice" setting, this can be used to make the sticky rice without soaking as well (I have heard the brown rice setting might work, but haven't tried it). Just be sure to rinse the rice well as Sheldo mentions. Instead of using the lines in the rice cooker that are meant for Japanese sticky rice recipes, use 1.5 cups rice and 1 cup water by volume (or 1 part rice to ⅔ parts water). If it turns out too soft, reduce the water a little next time. My other recommendation is to try this with durian instead of mango (both are really good).
This is great! Vietnamese desserts often makes use of stinky rice, like in the famous Che Dau Trang.

I use the microwave method to make Chinese dishes with sticky rice too! It’s very adaptable and very useful. You’re making me crave Che! It’s so good, so comforting.

We're out of mango season here, so tinned mango it was. I only had half a small bag of glutinous ring and a tin of coconut cream in the cupboard so had to bodge the quantities a bit but it still came good. The rice is tender, and the finished the dish is the right amount of sweet and salty to cover up my mistakes. Can't wait to have another go.

Just tried this recipe. It's very easy and delicious. Although if you are like me who doesnt like sweetness that much (let's say if you find kinder chocolate egg/bar too sweet), halve or even use 1/3 of the recommanded sugar.

In 2013 my wife and I were on our honeymoon in Paris, France. We had a lovely meal at Thai Vien 2 in the 13th Arrondissement and the waiter asked if we wanted to look at the dessert menu. I love dessert, so I naturally said yes. My wife typically passes on dessert but humoured me. Reading through the desserts, I commented on the fact that they serve mango sticky rice. My wife thought that was the dumbest thing she had ever heard... Obviously that meant I had to order one. It took a significant amount of convincing. but she tried a bite. We had to order a second one. Fast forward 9 years and mango sticky rice is still something she raves about.
