You are the first person I've ever seen other than my grandma who soaked the bread in the water and squeezed it out for making meatballs! ❤️ I prefer them fried though. I think it brings out more flavor.
MY DAD USED TO SOAK HIS BREAD IN WARM MILK, HE ALSO PUT FRESH RICOTTA IN HIS MEATBALLS. OUR FAMILY CONES FROM CALABRIA. MY HUSBANDS GRAND MOTHER USED OAK MEAL INSTEAD OF BREAD CRUMBS SOAKED IN WATER, SHE ALSO TAUGHT ME TO WET MY HANDS TO ROLL THE MEAT BALLS, SHE WAS AN EXCELLANT COOK AND CAME FROM JUST OUTSIDE MESSINA. LOVED YOUR PRESENTATION.
Just made these an hour ago! I’m good at baking but not cooking.. the instructions are easy enough to follow, the meatballs turned out sooooo tender and moist! My little one ate half a batch already (I made each meatball weighing 35g each)!!! Thank you so much Vincenzo!!😊
I love the use of puréed carrots as a sweetener, not sugar. I've been adding sugar for years and I'm a bloody chef! Never again! Thanks 4 the tip, dude, I've learned something👍
You can use the appropriate veggie puree in other recipes as well. My Thanksgiving turkey gravy has the extra bits of veggies from making stuffing pureed into it. It makes it a bit lighter but without watering it down.
Just made this holy crap. Thee best meatballs I've ever had. Absolutely stunning sauce. Make sure to use high quality pasata. Phenomenal recipe that's going into the family reciepe book.

Vincenzo made these a few days ago and omg! So good! I had to use all beef as I cannot eat pork but they still turned out amazing. My husband says they’re the best. I made extra to freeze and my son and husband asked to have them two days in a row instead of freezing them. I think that means two thumbs up! Thank you as always for your lovely recipes.
Phenomenal recipe! I really love how you sprinkle technique guidance throughout (eg moisten palms while making, shake the pot instead of stirring), those make a HUGE difference and help us level up as cooks as well as follow this recipe better. Great work! Your Ciabatta recipe is next on my list to try!
Vincenzo, I’ve made this meatball recipe twice now and it is seriously the most amazing recipe ever!!! Last night my husbands didn’t stop talking about the meatballs the entire evening. Thank you so much for your fantastic videos and recipes ❤
I made these last night. I have been using Pierre Franey's (Hotel Experience) meatball recipe for the last 30 years. Mine always come out dry. No bread crumbs, just parmesan so quite expensive to make. Pan fried so they burn easily. The family just hates it when I make meatballs. Your recipe is easy and the results are very good. I also like the fact that I can oven cook these slightly in advance, then finish in the sauce in about 20-30 minutes. This gives me a lot more flexibility when serving. Thank you very much for creating this video and the time you must have put in to get this delicious and foolproof! My wife went to secondary school in Italy hence knows what is good. Your sauce ingredients (carrot, celery and onion) are her favourite. I usually make a straight tomato sauce which she endures but does not enjoy. Yours is authentic and appreciated. I make your style when I am after Bolognese sauce but will now switch to it for almost everything. It is just better than straight tomato in most cases. Thanks again!
I understand the challenges you've faced with previous recipes, and I'm glad to provide a solution that suits your taste and preferences. The flexibility of being able to oven-cook the meatballs in advance and finish them in the sauce is indeed a time-saver and allows for a smoother cooking process. Thank you for taking the time to share your experience, and if you ever have more questions or want to explore other recipes, I'm here to help. Happy cooking to you and your family! 🍝🇮🇹

I allready discovered the secrets of a good soffritto some years ago, and it has been a real gamechanger since. But I never tried to mince it this fine. Thank you!

That's fantastic! Glad your kids enjoyed them. Your twist with beef broth sounds intriguing. Keep experimenting and cooking up those delicious memories! 🍞🍝👨🍳
Vincenzo! I made these Meatballs again tonight. I make these every week, usually on the weekends. I soak the bread in beef broth and I added some ricotta to the meatball mix (the ricotta was part of my previous meatball recipe) and they are fabulous. My 10 year old wants to make them with me next time because she wants to learn how to cook and loves these Meatballs. Thank you Vincenzo.
The flavor of these meatballs was AMAZING! I accidentally soaked my bread slices too long so the end result was a bit too moist, but that is on me. I only had ground beef (although it was super fresh beef from a 1/4 cow I purchased direct from the farmer who raised it so it was good quality beef) so I would be curious to see what would change with the texture and flavor if I followed the recipe exactly. I also did not have that super amazing, “made from scratch” sauce like the video shows, I used store bought canned tomato sauce and added a bit of tomato paste, but the rest of the recipe was from here. This might be my new favorite tomato pasta sauce. If I would have had time I totally would have made fresh pasta. Maybe next time I will be a bit more prepared. I LOVE this recipe and this is probably my favorite cooking channel. Thank you so much.❤
My nonna use to soak the bread in milk instead of water and then she cook them directly in the sauce. This last step make the recipe way longer, but it’s really worth it
As a Swedish person, I also love meatballs. And I take them very seriously. So this one guy asked me which one I like the best. And I told him that it's a sinful comparison to make. Italian meatballs and Swedish meatballs aren't competitors. They're family. Meatballs are made all over the world, not only in Sweden and Italy, but also in Greece, Persia, Turkey and even in China. And each meatball is in its own right, a piece of art. It's one of my life goals to travel to all countries who has meatballs on the menu. Got to try them all. :)

I've been a subscriber for a long time and yet I only learned that Vincenzo is Sicilian while watching this video! I am only half Sicilian, but my father came from the old country (Ragusa) and his last name was Tomino. Love these videos Mr. Prosperi.
When I want a sweeter tomato sauce, I grow my own tomatoes and grapes everything but I add in a cup of catawba grapes when I cook down the tomatoes. The grapes really work well to make the tomatoes just taste so much better. Its really good when you want to make your own fermented tomato paste. I know you know what I mean. the real stuff.
Mmmm. Planning this for Saturday night. Yes I’m using veal. Mmmm. I also can my own sauce here in Southern Ontario. I use San marzetti tomato’s … sometimes I mix with Roma. Depends what is available. I have a hopper. So good.
This is my secret recipe for Homemade Italian Meatballs. Very unique, juicy and moist.

Do some Sicilians cook them from raw in the sauce?

I love this channel - it's about the food and not about showing off (like for instance Giada De Laurentiis).
I'm grateful for your support and I'm glad that you enjoy my channel. I hope to continue to inspire people to cook and enjoy delicious food for many years to come.
Use milk instead of water for your meatballs try it! Fantastic!
And also a combo of beef, veal and pork.
Sounds great!😋
I do and they are so delicious 😋
I also use milk to soften the bread always
The idea of adding a blended soffrito to the meat ball mix is clever, I will try that.
I'm glad you found the idea of adding a blended soffrito to the meatball mix clever! 🍝😊 It can add a wonderful depth of flavor to your meatballs. Enjoy experimenting with it in your recipes! If you have any more culinary questions or need tips, feel free to ask. Buon appetito! 🇮🇹👨🍳👍
I've been a subscriber for a long time and yet I only learned that Vincenzo is Sicilian while watching this video! I am only half Sicilian, but my father came from the old country (Ragusa) and his last name was Tomino. Love these videos Mr. Prosperi.
Hi Jeff, I'm not Sicilian, I'm Abruzzese 😊 But I love Sicily soooo much!
Vincenzo, I can't wait to try this! Where is the homade tomato sauce recipe? If you don't have it, would you recommend another one?
Yay! Another yuum!
yayyy, stay tuned 😋
What would I be without this channel? Well, terrible at cooking probably.
Love the dish, it looks fantastic. I will definitely try it 😋
oh you're super kind 😍 thank you a lot!
Please try this recipe soon and let me know!
I know you know what I mean. the real stuff.
sounds interesting
I am going to give that a go...
Vincenzo, these meatballs are amazing. Thankyou for sharing your recipe. Grazie molto

Mmmm. Planning this for Saturday night. Yes I’m using veal. Mmmm. I also can my own sauce here in Southern Ontario. I use San marzetti tomato’s … sometimes I mix with Roma. Depends what is available. I have a hopper. So good.
