I can't eat leaks, shallots or onions, (unfortunately anythingbut garlic is a no go from the onion family), what would you recommend as suitable replacements?
Can you eat scallions, chives or garlic chives? If so, they'll work great as alternatives. Other less than ideal alternatives are asafoetida, fennel and celery.
I love puff pastry, but somehow the bottom always stays soggy and raw, baking it longer makes the rest burn... how do you get it right?
I've seen that sometimes people cook the base of the pie a bit first, is that something I need to do or is it a different pastry? That pie looks proper bo! I tell thee!
The rule I use is if the filling is complete liquid, I blind bake the pastry first. Pumpkin pie, custard tart, lemon tart etc, are all things I would blind bake first. Chicken pie, mince pie, beef & ale pie etc are all things you can put straight in the oven 👍🏼 hope that helps!
