  • New Orleans Pecan Pralines are on the menu in Chef Anna Olson's amazing kitchen, and she is going to teach you how to make this delicious recipe from scratch! Follow along with the recipe below!

    Recipe
    Makes 3 to 4 dozen pralines
    Ingredients
    3 cups (350 g) coarsely chopped pecans
    1 ¾ cups (350 g) granulated sugar
    1 ¾ cups (350 g) packed light brown sugar
    ¾ cup (175 mL) whipping cream (35%)
    6 Tbsp (90 mL) 2% milk
    6 Tbsp (90 g) unsalted butter
    1 tsp (5 mL) vanilla extract
    1 tsp (5 g) salt
    Directions
    1. Preheat the oven to 350 F (180 C) and line a baking tray with parchment paper.
    2. Sprinkle the pecan pieces in an even layer and toast for about 15 minutes until browned a little. Allow to cool and transfer to a bowl.
    3. Place the granulated sugar, brown sugar, cream, milk and butter into a medium heavy-bottomed saucepan and bring to a full boil over high heat, stirring constantly, until the mixture reaches 230 F (110 C) measured on a candy thermometer. Add the pecans all at once and continue to cook to 237 F (114 C) while stirring constantly. Remove from the heat, stir in the vanilla and salt and then let sit without stirring until it cools to 212 F (100 C), 10-15 minutes.
    4. Line 2 baking trays with parchment paper. Once the praline mixes cools to the correct temperature, use a wooden spoon to stir it vigorously to “seed” it, so that it thickens to a satin consistency and is thick enough to spoon out. Drop spoonfuls of the praline mixture onto the baking trays. If you see the sugar spreads a little after spooning, just let the mixture sit in the pot for 30 seconds to a minute - it will start to set. Since the praline mixture does set quickly, you may find that it starts setting in the pot, or the scooped pralines have a dull finish instead a satin sheen, you can return the pot to low heat and stir to melt a little until.
    The pralines will keep for up to a week in an airtight container.

    Oh man, this is the smell down in Savannah’s river front district...the smell wafts out the candy store, drawing me and most customers in...I know that smell but a lot of ppl have never experienced a “Pecan Praline”.... Usually they are just pouring out a batch as we walk by so we float in and we all watch in amazement as the gooey candy is drawn out and stirred until the employees began to spoon the rich buttery goo onto parchment 📜 paper. They tell us these are to hot to handle but they have plenty already bagged and ready for sale ....and sell they do. Usually while u wait ur place in line they proffer free praline bites just to satisfy and allow you to savor the delicious 😋 candy...and man oh man I love them. Way to go Anna. You have made my day!

    Oh Anna , one of my favorite delights...I love them from Savannah Ga. River Walk...there’s a confectionary with their doors opened wide as they cook the pralines...so I’m drawn in by the smell and wait patiently for a fresh hot praline!       I used to love going there until they upped the price to $24 a POUND and they now prepackage their divinity. My first stop was always Savannah's Candy Kitchen - now I just make my own. This recipe Anna is using is the same as my mom's and is spot on as good as hers!

    It looks similar to maple candy. You boil maple syrup, stir it until it thickens, then pour it out. You feel the crystals but they immediately melt in your mouth.

      @@ohyum Instead of milk we use 1 can of sweeten condensed milk and we use just white sugar 3 cup of it and i tablespoon of clear karo syrup and 1 cup of salted butter and 1/2 cup of water the rest is the same

      lindsstace it looks like a Thermapen! They are pricy but amazing. They work for candy, meat, etc. Every kind we’ve ever had has crapped out until we got that one.

    Anna, with the price of vanilla pushing $40 dollars for a 16 ounce bottle - what is a good imitation vanilla - I shudder at the thought of using imitation, but the current cost is overwhelming.

      I hear ya! She said she spent time in NOLA, but never learned how to pronounce "pecan." It's like "puh-kahn" and not "pee-can." The word is actually Native American and came into English via French.

    Mispronunciation of “new orleeeeens” and “pray-leens” leads me to believe this woman never spent time in New Orleans. It’s “Prah-leen” and “new or-lens”, and “pek-ahn”. Pralines are not supposed to have graininess to them, they are also not “fudge”. They are a specific type of candy of their own. I wish more research was put into this.
