Fruit Slice Recipe BASE: 5oz/140g self raising flour 5oz/140g light brown sugar 5oz/140g butter or marg, chilled pinch of salt TOPPING: 6oz/175g dried mixed fruit (soak for min 4 hours or overnight) 2oz/55g almonds, flaked 2 large or 3 small eggs, beaten 4oz/100g light brown sugar 3oz/85g self raising flour caster sugar to drizzle top Line 8”/20cm traybake tin (or any tin that fits your airfryer) I lined my Cosori dual blaze direct. Soak fruit min 4 hours or overnight in tea (I used earl grey - delicious). Drain and pop into a large bowl. In another bowl, pop the BASE ingredients: butter, flour and pinch of salt, rub together with fingertips and add the sugar - continue rubbing until combined - it will be a bit crumbly. Pop onto lined basket and using a wet spoon press down until bottom is covered. Pop in AF on BAKE setting at 160c/320f for 10 mins. Add mins if you need too. While cooking, get other bowl, add the flour, almonds, sugar and beaten eggs to the fruit and mix til fully combined. When base is cooked and completely cooled down, add the topping, level off and pop bake into the AF on same temp for further 20mins. Look for 98c/210f to indicate its baked. Leave to cool in basket before taking out and gently score lines for cutting once out of the basket.

That looked lovely Kerry, must have a try, always have mixed fruit in the pantry. I use a Pastry Blender to mix butter into flour for breadcrumb texture, it’s a wooden handle with 3-4 wires, keeps your hands cleaner ❤
Kerry I cooked the base and when it was assembled it took over 20 minutes to cook, I don't know if it was because I did mine in a tin, I did lower the ingredients by about an ounce xx

Would it help the edges Kerry if you rubbed a bit of butter around the edge of your tin, I do when baking it keeps the paper stuck to the side . The finished cake looks very tasty . Yes soaking your fruit always makes it taste nicer . Let’s hope it’s ok when it cools , fingers x I may like it with custard . Maybe ?. Maybe need to try first .

Hi Kerry, can you please confirm if you used demerara suger in the base or light brown sugar? Your float up recipe states demerara sugar but the recipe pinned in the comments states light brown sugar. You could probably use light brown sugar or demerara but I would image that demerara sugar would make a more chrunchy base. I would definately like to try this recipe as it looks delicious, thank you!

It does actually look like bread pudding but you can’t compare as you’ve never had it, which I find very hard to believe ! My mum never made it Valerie😄👍💕and she was an eastender! I think she was deliberately avoiding the foods of her childhood - we had a lot (& I mean a lot!) of soup and baked potatoes when we were kids! (not at same time) Ironically I don't cook a lot of baked potatoes or soup lol!
