One tip for the summer when you want yummy meatloaf but don't want to heat up the oven (and your whole kitchen) is to mix up your meatloaf as you would normally but instead of baking it in a pan, form your meatloaf mixture into patties and either grill or pan fry them. Serve them on a bun or on two slices of your favorite bread like a meatloaf sandwich or just on a plate with a microwaved baked potato and a green vegetable or salad. Bonus is you can get hubby to do some of the heavy lifting if you can get him to grill the meatloaf patties!
My mom substituted part of the hamburger with sausage (maybe 1/4 - 1/3). It gives the meatloaf a bit more of a spicy taste, especially if you use Italian sausage and then she always used saltine cracker crumbs and a couple of beaten eggs as her binders. No cheese or ketchup but she would add onion and sometimes a green pepper, depending upon what she happen to have around. I swear she never made her meatloaf the same way twice and it was terrible trying to get her to write a recipe of it. She was always one of those cooks who added a little of this and a little of that to her recipes. They were always delicious but never exactly the same way twice. But it was always delicious and the leftovers were made into meatloaf sandwiches the next day!

My mom did about 1/2 pound pork sausage to 1 pound meatloaf. I think it was a popular way to do it in the fifties and sixties (the latter of which I was privy to).

@@MandyintheMakingI didn't know about the Special pan for Meatloaf but I've used a Bread pan for years. But I also used to use a Cooking bag when cooking some Veggies on side of the Meatloaf. Cut up some Potatoes, Baby Carrots and some Celery. That's the my Grandma did it.

Being that I live alone, I used to never make meatloaf. Even though I love it, there would just be too much leftover. Then I had a revelation! 😂 I made mini meatloaves, ate one that night, and then I wrapped and froze the rest. Now I can have a mini meatloaf once a week without all the prep and mess! 😀

My family makes a meatloaf you didn’t try but it’s very simple. Ground meat- I use Bison, Lipton onion soup mix, saltine crackers, egg, ketchup, garlic and pepper to taste. Sometimes i put in a little corn. We don’t really add salt to anything and I’m sure there is plenty in the soup mix and the crackers. Cook as normal, add Ketchup to the top at the end and let it brown up. I might add some dub sauce next time because you inspired me with that. We shall see. Enjoy!

Mandy, I hate touching raw hamburger when making meatloaf too. I make the panade with the dry crumbs, egg, milk, and seasonings first. Then when I add the burger, I use a fork to "fluff" it and break it up as I incorporate the other ingredients. This also helps keep the meatloaf light rather than dense.

On really hot summer days I'm not a fan of putting the oven on, so I'll mix up my meatloaf as usual and form meatloaf patties and take my oversize electric skillet outside and cook them that way. It takes less than half the time & doesn't heat up the kitchen. 😊

A little tip for when ur making meatloaf (or meatballs) if u want to check and make sure it seasoning is on point before baking the whole thing, break off a little piece and flatten it out and cook it in a sauteed pan...it's super quick then u can taste and check for seasoning. Once I learned that trick I do it everytime to make sure I don't need to add something.

I used to use my bare hands to mix my meatloaf. Not anymore. I wear gloves and I wet the gloves under running water before I start. It helps keep the meat from building up on the gloves. If you want to use your bare hands, then soak your hands before mixing. Periodically put some water on the gloves or your hands to keep them cleaner (just wet them).

Got another one for you to try. Being in Texas, this is a Texas thang. Very simple...use 2-3 lbs of 80/20 ground beef; mix well with 8-16 oz of Pace Picante Sauce (depending on how much ground beef you used), bread crumbs, egg, and a small amount of wash-your-sister sauce (not even 1 T, maybe just 2 tsp). Bake for 45 minutes, remove and cover with Whataburger spicy ketchup. Cook for another 20 minutes to set the ketchup.

We love meatloaf too and use 6 lbs ground beef that's how much we love it!! My co worker made me a meatloaf pan dinner...you must try it. Make your meatloaf anyway..put in middle of pan...we use canned drained, green beans on one side, then use Yukon gold potatoes on other side...cut into small chunks..season with salt pepper, garlic powder, onion.powder..put olive oil on..we do side same with green beans...so whole meatloaf is surrounded by this stuff...oh my goodness. You have a complete dinner in one pan! How many cans you use or potatoes is up to you. We have also made another sheet pan with green beans and potatoes! When you bake with the meatloaf, all that from meatloaf cooks with veggies. We use 80/20 meat. You must try it! Enjoy! We eat meatloaf cold leftover!

Hello Mandy.. thought maybe you enjoy this.. I have been eating Meatloaf for over 50 years, my Mother's, Wife's and Cracker Barrel's, I always enjoy my Meatloaf with a POURED topping of apple sauce, thats right I pour it right on top the finished Meatloaf, so my bites are 50/50 to 50/25 apple sauce. my Mother made the best homemade apple sauce, seasoned with a bit of cinnamon, canned in Ball jars for the Winter. I also pour the apple sauce on other meats. baked chicken, Pork Chops.

I always use extra lean hamburger and italian sausage (1 lb each). You can use the mild or spicy kind, depending on the intensity you're looking for.

Those mini BBQ cheese meatloaves were so good! I made the mistake of not halving the recipe, though, and good gosh it made a lot. 😅 I gotta make those for our next game night, so other people can help eat them (and enjoy them!). Your recipes have convinced our friends that I'm a good cook! ☺️

As a retired preschool teacher. We did this activity for letter D. The students made the hole using their fingers. They would bring there donut up to where we were frying them. We would put sugar and powder sugar into bags. They chose their topping and I would put the donut in and roll the bag and secure it. Then they would shake them. Take it out and put it on a plate with their name. Then at snack time they would have this treat or they could take it home, in a baggie. That brought back a memory I enjoyed. Thank you Becky.

Hey Mandy! I hate the gooey feeling when mixing meatloaf by hand, too. I prefer to wear disposable gloves when mixing meatloaf. My fingers don't get gooey, I don't get stuff caught under my fingernails and cleanup is as quick as taking off the gloves and throwing them away!

My name is Pat and I recently turned 74. I live in Pennsylvania. I started cooking at age 24 when I got married. I watch your show and save some of your recipes. We had your fav. Pork chops tonight. But I must share that my husband is not a garlic fan. I only used 3 cloves of the garlic to start. Then I used Cajun instead of the garlic powder. Joe is still raving about the meal and the sauce . But I don't think he will put it on his oatmeal.😊 thanks

I made “I-don’t have-fresh-onions” meatloaf last week. Ground beef, egg, seasoned bread crumbs, salt, pepper, *minced dried onion to equal one small onion” (more or less) and some milk. Mix, put in a 350 degree oven for 1 hr. Removed and placed my
topping (“glaze”) of preference -Chili Sauce - over the top - back in the oven for another 15 minutes. My husband loved it, and it made great sandwiches. Must try some of your recipes when I make “real” meatloaf! 🥰

SOLD, I've never tried Meatloaf but I'm definitely going to try that Cracker Barrel one. Eeek I also want to try the mini ones too. I'm soo excited cos I have all the ingredients in for both of them, the dilemma is which one to make first. Oh shoot, I also want the Taco one. Mandy you've given me a real dilemma, which one first, I'm going to have to toss the dice for this one. Hubby is going to have to eat meatloaf once a week for the next three weeks. Thank you sooo much for sharing Mandy xxx

I'm a long time subscriber and I love your shows. These meatloaf recipes all look delicious. I will have to give them a try soon. I smiled at the face you made when you had to dig in with your hands to mix up the meat mixture. I always hated that, too. Now I put on a pair of disposable vinyl exam gloves to do that. Then I can just peel them off when I'm done and my hands are neat and clean. Crumbling crackers in a big freezer bag is quick and easy if you just run a rolling pin over it a few times. If you want coarse crumbs, just smack the bag of crackers with the rolling pin until they are the right consistency. It saves having to wash out your food processor and attachments.

In stead of bread crumbs, or bread at all I use couscous, farro, cornbread crumbs, quinoa depending on what flavor I want. All kinds of vegetable either from frozen, pico degio, or dehydrated which means lots of seasoning, moisture, from stock, soup, or sauce. I make minis so we can just grab them when we want. They can be tex mex or whatever. And I use wild boar, venison, beef or veal, bison. Go for it. Cheese and sauce on top.

SC midlands. Mama is diabetic. Last time I made meatloaf I used sugar free Mustard BBQ in meatloaf pan. Loved it. Grace should have her own container of cheese always on the counter and table when you use wrong cheese for her. After all she the star.

All of these look amazing and can't wait to try them on my crew. The one thing I noticed you left of was the Dukes mayo on the tomato slices. Also, Dukes is a great addition to your mashed potatoes. My crew won't eat them any other way.

I saw a recipe for meatloaf that called for panko bread crumbs instead of regular bread crumbs. They are lighter which works better in meat loaf. I just wanted to pass this little tip on to you and your viewers. I haven’t tried them yet but I do plan on making a meatloaf soon. Thanks for sharing these recipes. I’ll be trying a few of these if not each of them.

The ketchup and mustard brown sugar I used to make that in a roast pan for a bush camp crew fifty or more years ago. But head cook said to put finger holes in it so it could go through the meat. I love it. Yours all look yummy. But we had no cheese in it. ⭐️⭐️⭐️⭐️⭐️⭐️⭐️💓💚🥰🤗

Mandy, love, love, love the Cracker Barrel Meatloaf. The mini meatloaf is also a winner. Just a hint for the topping sauce. I use 1/2 cup of ketchup and a 1/2 cup spicy ketchup, 1 Tbl spoon spicy mustard, and 1/4 cup brown sugar. My family wants it on any meatloaf I make. I usually double it because they add it on the cooked loaf. Give it a try. Helen😊

We make something similar to the bbq minis! We make them about twice as big but oblong! We just make regular meatloaf with ritz n cheese! The cheese makes it super moist! It melts n you don’t know it’s there! Then we cut up 4 quartered red potatoes, 2 medium onions quartered, 4 whole cloves of garlic, 2 carrots cut in 3/8 slices, 4 small corn on cob and 4 whole jalapeño! Place 1 meatloaf on doubled long foil and surround 1/4 of veggies carefully around the loaf place 1 T thin sliced butter on veggies and salt n pepper them! All potato n then all carrots etc, seal the foil packet! Place on big sheet pan and bake in 350 degree oven for 30 min! Each person gets a packet! I forgot to tell you my son in law does not meatloaf so we don’t add a sauce on top! He loves it!!! The garlic is almost sweet n do not cut the pepper! They are not hot if whole! Or put banana pepper or none! I think you will love these!

I just recently discovered your channel and am really enjoying it. I especially like the way you and hubby interact together. When I make meatloaf I usually use half ground beef and half turkey, Lipton Onion Soup mix, dub sauce, some kind of bread crumbs or crackers, an egg and cheese. It's been so long I can't remember anymore. But I pat my meat out into a big rectangle and put the cheese in the middle and roll it up, jelly roll style. If you've sealed the ends well enough you have a swirl of cheese throughout when you slice it.
