    INGREDIENTS:
    200g Peas
    100g Berlotti Beans
    100g Broad Beans
    1 Onion
    1 Celery Stalk
    100g Courgette
    1 Leek
    1 Broccoli
    3 Potato
    1 small Pumpkin
    1 large Carrot
    1/2 Cabbage
    20 cherry tomatoes
    1 handful Basil
    3 clove of garlic
    6 Parsley Stalk
    Handful pasta

    My dad always browned a little bit of panchetta (bacon is fine) before putting in the veggies. Gives extra fond and a lovely meaty background! :)

      ***** Pretty close, but we didn't throw the whole garden in the pot like G! I also liked to put an insane amount of Parm cheese to top it off, kids will be kids!

    This is one of the healthiest and yummiest dishes that I've seen. And Gennaro has a highly radiating charisma that would encourage anyone to cook. He's a legend. I really want to try this dish.

    I love Gennaro! My favourite thing about him is his Italian/uk accent ;) you're so cute! Amazing gardener too like all Italians! Jamie needs a Lebanese version of Gennaro on his show too.

    What is so great about the Italian kitchen is that it's so often completely vegetarian without being specifically 'vegetarian'.

      this is probably due to the fact that meat used to be quite a rich-people food, while fruit and vegetables used to (and still are) very cheap to buy and easy to grow in Italy

    I made this recipe because my lover asked for a good veggie stew!
    I was following your channel at the time and I finally decided- Let's make a Gennaro dish! Oh my goodness, it was soooo delicious!!!! The Basil, parsley, celery and garlic, they all made such good flavors for the other vegetables! I added a little bit of nutmeg (about 5 grams to the recipe provided) and it tasted absolutely incredible! This was a fantastic recipe as promised, I cannot wait to make your Octopus Linguini for my next pasta party!

    I omit the pasta, the potatoes and the beans when I use this minestrone as an all-day-all-hours snack (You could also blend it until it's nice and creamy). I put them in when I need a meal. Love this recipe, especially with a bit of chili!

    I use the parsley stems and for some reason I've been putting them in at the last 10 minutes or so. Then my 11 yr old girl was going to put them in at the end like the parsley leaves and I said no it's got to cook . So happy to see you use the stems of parsley not just the leaves. You are the first person I've seen use the steams !! NO WASTE!!!!!!

    I often cook one pasta and vegetable meals. My nonna taught me her green beans, vegetables and pasta thick soup in the mid 1990s. I use that basic recipe as the base for about 60% of my cooking. It's fantastic. I change the basic green beans and vegetables to whatever legumes and vegetables I have on hand. I often cook in bulk and freeze the extra leftovers. I cook cucina povera about 90 years after the great depression.

    Made this again last night. Didn't have any pumpkin, but we have a local Asian market so I used Red Kuri squash. So easy and delicious - served it with garlic bread on the side for dunking.

    Gota say Jamie Oliver is one hell of a rare chef. I love looking over the videos he posts its often full of good advice :) . Also i like Italian cooking they use a lot of spice in everything they make

    Oh man this looks out of this world delicious. I'm seriously thinking of trying this out next week when I can get to a good vegetable market. Only problem is getting Pumpkin probably, and maybe those squashes (I think that was squash he used, it had a different name I've never heard of before).
    Still, love you Gennaro! You are so awesome! Keep up the incredible work you do good sir.

      ***** It was really good! I ate with my friends and they were impressed :D Although, as the only kind of pasta I had was spaghetti, I decided to use that and just mush it into smaller pieces. I thought I would put them in a plastic bag and then break them in there. Well little did I know the pasta would break the bag and end up all over my kitchen! Oh well I'm wiser now. The soup was delish nontheless :D

    I love minestrone, but I have a question. How can you put all the vegetables and beans at the same time knowing that they don't all have the same cooking time. Wouldn't we have some overcooked vegetables?

      +iughioo Personally, I like that the pumpkin and some of the other vegetables make the soup thicker because it cooks faster. Don't know about all the other veg.

    I like to cook my pasta separately and only add it to individual bowls bc if you have leftovers and have to reheat it turns to mush inside the minestrone. Also, sometimes I like to have a guilt free 2nd bowl without the pasta! :)

    When I lived in Italy I dated an Italian girl who taught me how to make Minestrone (extremely similar to this one, with the small difference of not adding Parmesan), I almost wanted to marry that girl for it.

    Ah, brings back memories, a decade or more ago, when I went to secondary school, they served this at the canteen a few times a year, only they had minced meat in it. It was delicious! If I were to make it with meat, at which point would I put the meat in?

      Depends on the meat, tender cuts need only a little bit of time while tougher cuts require a long cooking time, even more than some vegetables, so i'm thinking probably first brown the meat, cook it until it's how you want it, and add it at the last minute.
      Tougher cuts usually work best with stews and such.
