I tried this today and the result was amazing! Unfortunately, I couldn't get all of the ingredients and at the end my pot was too small, so I had to leave out the cabbage and the cauliflower, and I had to replace the pumpkin through the sweet potato. I love minestrone! I also love borscht, goulash soup, bouillabaisse, lobster bisque and some less known soups made from local products in my area. I don't think minestrone is the world's favourite soup, but it's very popular in Italy. I found several world soup ranking lists on the internet. Minestrone was in top ten in a few of them and in top 50 in most of the others, but never number one. That will not stop me from enjoying it!
I am wondering why you did not put any garlic, basil, or any other italian seasonings. I always include those in my soup. Also many minestrone soups include cheese rinds for added flavor. Your soup looked fabulous. I just found your channel today. I am looking forward to more videos from you. 💟
Ciao Joan in the video I said I usually use the parmigiano rind but my wife doesn't like it so i didn't use it..also yes you can add any ingredients you like. Usually basil is not fresh in.winter so I don't use it but you can literally use any vegetable/ingredients you like. Thank you very much. Have a nice Sunday. Almost exactly like mine but I cook longer in crock pot and use homemade vegetable stock that I make from my kitchen scapes no cauliflower sometimes cabbage but we usually add spinach a few basil leaves and 1 clove of garlic
@@vincenzosplate I made it finally. Used a stock with bone, leftover parmesan/grana padano rinds and left over guanciale skin. Also added some dill and bayleaf for flavour with basil tomato paste. Turned out good.

@@vincenzosplate That really depends. Locally produced produce that is in season is always better no questions asked. After that things start to get a bit murky. Local produce that is then cryogenically frozen (-70/80 C) or even machine frozen (-40 C) is of a very high quality. After that comes produce that had to travel half of the globe to your table, and actually ripens in transit with the help of additives, but technically is fresh (it has half of the flavour and even lover than that for nutrition). And the last stage is produce that had to travel a very long way and was then frozen and after that shipped to the chosen destination (sadly this is what a lot of frozen food consists of).
It's good to know I can add in whatever veggies I want. I think the mirepoix and tomatoes are essential though. I like to use kidney beans, black beans, and great northern beans. I would do kale in there too maybe in place of the broccoli or cabbage. I think it is nice to add noodles but it is healthier to avoid the carbs. I'd this with a steak though lol.
I have made a few variations of Minestrone over the years, some of which used chicken leg and thigh meat. Was it originally a vegetable-only dish? I have not used pumpkin. I have used proper turnips (not the huge "swedes" or rutabagas but the small white ones with the purple tops). Otherwise, the carrot, celery, onion, zucchini, and beans are there.
Great variations! Minestrone traditionally was veg-based. Pumpkin adds a lovely twist. Those small white turnips sound perfect. Keep experimenting, it's all about taste and tradition! 🍲🥕🥒🇮🇹

Lovely dish. I prefer white beans over lentils an more greens (escarole, kale and chard) and garlic in after carrots, celery, fennel and and leek. I use a huge bunch of herbs (rosemary, thyme and sage) but like you remove them before serving. I also use more tomatoes than you and will sometimes use a bit of crushed canned tomatoes as well. I bet if I tried your pumpkin trick, I wouldn't need that. Next time! .

The mixture of celery, onion and carrots is called soffritto. It can be bought frozen from the supermarket but I prefer freshly made ones...🤩🤩🤩

Lovely dish. I prefer white beans over lentils an more greens (escarole, kale and chard) and garlic in after carrots, celery, fennel and and leek. I use a huge bunch of herbs (rosemary, thyme and sage) but like you remove them before serving. I also use more tomatoes than you and will sometimes use a bit of crushed canned tomatoes as well. I bet if I tried your pumpkin trick, I wouldn't need that. Next time! .

@@vincenzosplate i did it, my family loved it, especially with the broccoli and cauliflower, I never cooked it like that before. I grated a bit of parmigiano reggiano on top. and it was : oh yeah, oh yeah, great!!
I tried making this tonight. It tast very good but mine looked a bit more yellowish instead of orange. I guess thats because I used a butter squash instead of the pumpkin?

Love your videos, but one thing: Peccorino Cheese is not counted as vegetarian (also Parmigiano), cause of the rennet. So if people want to go vegetraian, they should use cheese which is made with microbial rennet
