Actually, a lot of cooks agree that good canned tomatoes are much better than the fresh tomatoes you can find most of the year in most of the world. If you have your own garden with tomatoes, and it's the season, then that's another story, that's for sure ^^

I just went back and watched the pizza basics episode (to see if there was any difference in technique/recipe). Crazy to see the evolution of video style since then. Way more assertive and polished now. I didnt think there was any room for improvement on original Babish, but it shows how hard this guy works to constantly improve. Worked in a grocery store with a wood fired oven, me and my friend learned to just slide that paddle, sharp twist it, and yank out just to have the pizza 180 near damn perfectly. It was beautiful. Hated when they replaced it with a regular oven.

The beginning really made me appreciate how good I've gotten at deboning whole rabbits, lol. I just went back and watched the pizza basics episode (to see if there was any difference in technique/recipe). Crazy to see the evolution of video style since then. Way more assertive and polished now. I didnt think there was any room for improvement on original Babish, but it shows how hard this guy works to constantly improve. New house and fame all well deserved 👏👏
Worked in a grocery store with a wood fired oven, me and my friend learned to just slide that paddle, sharp twist it, and yank out just to have the pizza 180 near damn perfectly. It was beautiful. Hated when they replaced it with a regular oven.

The ribcage and forelimbs are especially fiddly to get meat off of, but once you get too frustrated to continue you can always give up and throw it into the freezer stock bag like babs does.
