I just realized that tomatoe confit is essentially my grandma's pasta sauce. She would blanch the tomatoes first then roast them with garlic, onions and lots of herbs. Once roasted she then then pureed them until smooth and finally canned them. Still my favorite pasta sauce recipe.
He didn't actually make tomato confit, though, he roasted his tomatoes. To confit them, they should be basically submerged in oil and cooked at a low temp for a long time. It's effectively sous vide but with oil.

This felt like a classic episode of BWB. I think he's either edited out too many flubs, gotten too comfortable with the culinary decisions to recreate, or has gotten that damn good at cooking to where he doesn't overly question himself as much anymore.
