My mama used to tell me always make enough for the uninvited guest. She grew up during the depression on the Osage Indian reservation. She was Cherokee but Indigenous people occasionally go from reservation to reservation. During the depression men would set out walking cross country to look for work to find work for their families ( they would live on bare minimum and send the money back home to their families. It was a very different time in America. Those men knew they could knock on the back door of the farm houses and get a meal, and if the weather was inclement they could sleep in the barn. It was desperate times for millions but our country was kinder back then

As for what to serve unexpected guests, I almost always have chicken fingers and plenty of canned or frozen vegetables. If I didn’t have that I might prepare something using canned tuna or canned chicken, but I probably would have my supper planned and can always stretch it to go further. As my aunt used to say, “please stay, I will just put another pea in the pot”. 😊 miss her dearly.

How about a quick antipasti platter or tapas spread? Raid the fridge and pantry and arrange any combination of cold cuts, cheeses, olives, pickles, canned tuna, sardines or other fish... boil and slice a few eggs, fry up some sliced sausage. Top with slivers of onion, a sprinkle of capers if you have them, add a drizzle of olive oil. Slices of boiled potato make it more filling. Serve with crusty bread, toasted bread triangles or crackers. Quick and easy, but can be laid out to look fancy and festive. Cheers!

I needed to feed lunch to 5 adults the other day and didn't have a real plan. But was able to make egg salad which made tasty sandwiches, spinach salad (spinach, mandarin oranges, feta cheese, green onions, and walnuts), and chips. They told me what a treat it was to have egg salad sandwiches! Peeling eggs is stressful because they don't usually cooperate well, but I plan to do this more often. Economical too!

I love having unexpected guests for dinner. A humble meal is always more delicious when eaten with friends and family! I recall years ago fixing a simple salad made quickly by picking some fresh veggies and herbs from the garden, mixing up some homemade vinaigrette, and serving with some crusty rolls from the freezer. My friend raved about that meal and still recalls our time together with great fondness. Loved this video!

Well, my chicken isn’t thawed for dinner tonight, so I’m pulling out some precooked ground turkey out of the freezer, canned beans, canned corn, olives, salsa, rice (which I’ll make), and lettuce/tomato and we will have taco bowls. I’m out of tortillas and I don’t feel like making them, but I could if I wanted. I do have cornbread mix so I might put that together into muffins. This meal is something I could almost always put together fairly quickly for an unexpected guest because we usually have these things on hand!

A baked potato bar! I feel like many of us keep even just the basics on hand for this - potatoes (any kind, even sweet), sour cream, green onion, cheese - and you could fancy it up putting out ranch dressing, bacon bits or any other kind of meat you have left over (one of my favorite combos is bbq pulled pork over a sweet potato). It’s easy, comforting, and filling. Plus, who doesn’t like potatoes?

Steak, hamburger and chicken. Used oil lamps life saver. My son bought me a solar charger for my phone. I love the push mower. I have extra yeast and 25 lbs of flour and dry milk. Tuna or chicken cold ( added a can of corn to add color and stretch it). Serve on a leaf of lettuce, spinach or kale. It can be served with crackers if you have crackers or made into a sandwich. If you don't have either of those but have some kind of chips you can serve that. If you have pickles it can be served with a pickle spear or a few pickle chips. Add 1/2 sliced banana, apple, peach, pear, or nectarine to the plate.

I don't have the harsh winters like you, so I don't need the wood which I would never make it as pretty as Paul👏👏. I have the radio and lights(solar), panels and small powerbanks which keep my phone, fans and lights charged. We have fierce cyclones, flooding and severe thunderstorms that disrupt power supply especially in summer and preps are the norm. I am going to invest in rooftop solar and batteries which can run the house like off grid if necessary and sell the power when not needed back to the power grid. The price of solar is becoming more affordable and will eventually power our cars from home😃. I actually save a bit of money (around 10%) using the rechargeable lamps in the house every night and recharge during the day from the power banks. Even on cloudy days my small panel gets enough to keep me going. Love your ideas, always making me think. Cheers

Hi Emmy & Paul! At this point my pantry is so well stocked with shelf stable foods I'd be able to whip up a lot of meals for unexpected guests. Lol! Let's use just one main ingredient, canned chicken. Here's some ideas:
Chicken and rice casserole with a can of cream of mushroom or chicken soup, a can of vegetables and some shelf stable Velvetta type cheese and bread crumbs.
Pasta and sauce with canned chicken.
    Chicken salad and crackers.
Quick chicken egg drop soup with canned or boxed chicken broth and perhaps some ramen noodles.
Baked macaroni & cheese using a box of Deluxe style mac & cheese, canned chicken and veggies and bread crumb topping.
The list goes on and on!
Great job Paul. Need to look into getting that solar powered radio, clock, flashlight, charging port device! That little gadget is awesome! 👍

I love my little Dollar Tree solar lights. In an emergency they can be brought into the house and have a bit of light. Perfectly safe for kids to carry around to. Off subject. I unfortunately go through plastic gloves doing dishes. The other day I turned one inside out, found the tiny hole, put on some super glue, let it dry and it worked great. I use 2 egg whites beaten in some water, add a good quantity of garlic powder fill a gallon jug about 3/4 full, sit in the sun a couple days (it really stinks) put it on my plants to keep the deer away. Needs applied every few days or when it rains but if you check the label on spray to keep animals away at about $15 a bottle. We have a huge deer problem.

Place the tortilla chips on a piece of foil on a baking tray in the oven, add grated cheese on top, and bake for a few minutes. Meanwhile, I’d get out salsa, sour cream, and some guacamole I have in the fridge. I think that would be delicious.

I would make hummus it's quick and easy I always have chickpeas and tahini in my pantry. I would cut up veggies and if I didn't have Peter or bread I would put some kind of cracker or chips with it. Great video!

I save my egg whites in a 2 cup container in the freezer, and when it's full I make homemade angel food cake from my Farm Journal cookbook. Its delicious by itself or with strawberries and whipped cream. Cholesterol-free except for the whipped cream.

This was a great video lots of helpful advice, I can a lot of food each year so I could pull out a quart of roasted pork make a baked potato and salad, or I could open a quart of chili, beef stew, vegetable beef soup, chicken noodle without nood.es, or my chicken pot pie starter, or a quart of chicken to make a quick chicken salad zandwichesI also keep frozen rolls, shaped and my brown n serve , I keep all kinds of homemade pie crusts and homeland pie fillings as well as pecan and pumpkin pies that I have baked and frozen. My mom always taught us to keep well stocked pantries , freezers, and refrigerator, by raising gardens and preserving as much as we possibly could. No one would have to leave hungry.

For company I would make a charcuterie snack board
I have cheese on hand always, pepperoni, crackers, homemade jams, mustard, olives, homemade pickles, roasted peppers and homecanned chicken to make chicken salad or chicken noodle soup.
Also maybe some crudites and homemade ranch, hummus, or tzatziki.
We have home canned bruschetta topping and bread in the freezer too to go with any of these options.

There is no such thing as an unexpected visitor here. The fridge is full of quinoa pilaf, a cucumber, bean, and tomato salad, leftover three bean chili, and everyone loves to watch me make masa tortillas while they chop scallions and greens. A bit of homecrafted beer and wine is always on tap. Maybe that's why there are no unexpected visitors. 😇 We know people are coming and we welcome them. But our friends and neighbors also grow food and raise livestock, so nobody comes by empty-handed. I plan to visit an older neighbor today, with food and a scrabble board while my husband and sons work on her garden and yard. She loves our native grape wine! So we are visitors and we host visitors.

Hi Emmy and Paul. I usually prepare our meals to have leftovers so there is extra if someone drops in. Otherwise, we usually have cheese/crackers, fruit and veggies. Can always make spaghetti as well ... that goes far. Have a great weekend.

When we lived in Florida we had 3 hurricanes back to back and we bought a generator ( each hurricane we lost power for a week each time). We never took it out of the box, never lost power again before we moved up north and someone got a brand new generator when we moved to the Midwest.
