    As soon as I finished watching this video, I looked in my refrigerator for odds and ends to use up. I found two peppers that were past their prime, and roasted them. Then I made a salad including a small piece of cauliflower leftover. Now I’m going to make some rhubarb crisp from rhubarb I grew and froze. I love all your great suggestions and your positive attitude! Thanks!

      @@FrugalMoneySaver I just watched your video from two years ago on the difference between being cheap and being frugal. I’ve always noticed that cheap people often waste money because they don’t consider other factors. Often they have failed to look ahead and plan, and they buy poor quality because the only thing they consider is the dollar amount. Being frugal, like you said, is being mindful. It’s actually some work, but it’s so worth it!

    I found myself tossing out tomatoes until I started slicing Roma tomatoes very thin and tossing them with olive oil and Italian seasonings in a low and slow oven. Then I use in pasta or freeze them. SO yummy and no waste!

    I live in Florida and I haven’t started composting yet so I have found the best way to keep my ruined produce from stinking up our trash in the heat, is to put them in our garage freezer until trash day. When I go to to collect the week’s worth of ruined veggies it can be an eye opening amount if I haven’t been diligent about using things up. I kept letting green onions go bad so I just cut off the bad parts and stuck the root ends in a pot outside. Now I have green onions whenever I want.

      If you have a local garden club they may collect food waste for compost! Our community garden will take compostable food waste (and so do several local families who keep pigs!)

    I’m in Ireland. I never waste any food. I find washing and preparing everything into glass storage boxes in the fridge is great for us. If I have any food left over I make soup with it or cooking and freezing it. Another thing I have done is using more frozen veg and we take leftovers for all work meals.

    I live on a sheep ranch in West Texas. I don’t throw any old food away. I have two Great Pyrenees sheep dogs and 6 barn cats. We have the cats because we have rattlesnakes and we always know when one is around because the cats have them stirred up. I make cat gravy all the time with any old leftovers that we don’t eat. I use old grease and old milk or water. I hide the food in the gravy. I’ve put potato peels, old vegetables, anything I we don’t eat. Then I cover it with cat food. It makes the cat food go further and they are healthy cats. They still eat mice, because that is their protein.

    In England we call this bread and butter pudding. It is a great favourite still and is lovely made with croissant or panettone instead of bread.

      Also lovely made with hot cross buns. You can make a savoury version by making cheese and chutney sandwiches or cheese and ham sandwiches with leftover grated cheese and shredded ham (or bacon) and leave the sugar out - put two eggs in though to firm it up.

    Excellent topic, I cannot believe people are so wasteful, even some who claim to be frugal, act as though it is normal to waste food and everything else. My parents survived and thrived through two World Wars in the UK, and never wasted anything ever. Waste not, want not! That was the motto we lived by, and it is every bit as useful now as it was then. I have lived frugally all my life, an couldn't imagine being any other way. Love your channel, by the way!

    I totally have changed how I shop as well. I only buy what I know I will use. I only buy enough produce for what I need. I try to freeze anything I can’t use right away. But buying less in the first place is the thing that does it the most as far as having no waste.

    Amazing show! Never heard how to roast peppers. The bread pudding looks delicious. I actually have frozen tomatoes whole, put in a plastic bag, take out, as they thaw the skin slides right off and then use them in cooked dishes and they are just like fresh ones.

    You can roast peppers on a spit like a chicken and then scrape off the pealing later. If you have a gas stove you can put them over the flame and keep turning them until you have roasted all the pealing and then put in a plastic bag or other container to cool then peal them. Save the bag if you use a roasting bag so you can wash it and reuse it.

    If you store cut up Persian cucumbers or tomatoes in glass jars in refrigerator they stay much longer. I prepare salad greens ahead and put all add on in glass jars so everyone can make their own individual salad. Chick peas, olives, feta, onions all in glass jars. Works great and stays fresh longer.

    I went for a long walk today while listening to several of your videos. I was tired when I got home and didn't feel like cooking. Typically, we eat out 2 times a month (down from 4-6) but today I went through my fridge and reworked some leftovers into a delicious Asian stir fry. Thank you for the inspiration.

    That bread pudding, glorious! Great challenge! It’s the things that get shoved to the back of the refrigerator that get wasted in my house. I try to clean things out once a week before I go shopping to prevent this, but it does happen. Here’s to improvement!

    You can also add mashed ripe banana to the bread pudding milk and egg mixture, and add a little cinnamon and nutmeg.

    DH never used up the milk, even if we just got a quart. I use it if it is just slightly sour for pudding, baking and pancakes/waffles. I also freeze it in smaller packages. No more waste.

    Those roasted peppers look amazing! This week I thawed two pork chops by mistake; I meant to thaw only one. (I wrap my chops separately, so I don't how I managed to thaw two, but I did.) I cooked both of them and ate one for supper with some roasted peppers, cauliflower and carrots. I had about a serving of the roasted peppers, cauliflower and carrots left over, so the next day I combined the extra pork chop (chopped it up), the roasted peppers, cauliflower and carrots with a frozen package of Green Giant riced cauliflower and brocolli in butter sauce. I ate one meal, plus now I have enough for two more meals - a total of four meals - all because I thawed an extra pork chop.     I save the heels of bread, all kinds, dry them, cube the slices, and then make bread pudding when I have enough. I save bits of meat, broth, veggies in a freezer container, then when full, add to it to make veggie soup. I put clean peelings, all kinds of bones, egg shells, (for extra calcium) in a freezer bag, when full, I make broth. Hardly any food item gets into the garbage.

    I stopped the video, 6 minutes in, and froze three banana pancakes, leftover canned green beans to make a Shepherd’s pie, realized spring mix that said due by March 26th was dry and edible and decided to make a salad for dinner and regretfully threw out 4 baking potatoes that sprouted badly. Thanks for keeping me on my toes!

    Can't wait to try the garlic press without peeling the garlic!! I learned from you before to freeze individual pieces of produce on a tray first then to put in a ziploc. Bought 6 peppers recently for $1 which was half off, froze em, and they will be used in a stirfry. I buy less produce due to cost now and try to plan well to reduce waste. When cabbage was on sale, bought 3 and made chicken cabbage asian salad every several days, what a treat.

    I usually make breadcrumbs with my bread heels. Thanks to your idea I made baked French toast tonight and it was even better than when I make it with a whole loaf and I have some freezer room now.

    Produce is a big one for us too and lunch meat. Either I buy too much or not enough. I tried prepping all the produce and put it all in Mason jars. It really did help. Put the avocados in fridge, only pull one out night before to use the next day. It's working so far. Thanks again for sharing. You two are so enjoyable to watch.

    I love all of the tips you shared! I have a quarter loaf of homemade bread in my freezer I think I'll use to try that bread pudding.
    When I have a lot of veggies or fruit and know we cannot eat it all in time, I always cut them up and freeze for later. Helps with meal prep and I can buy a little extra when the produce is on sale without worrying about it going bad. I put my veggie scraps and chicken or turkey bones in a freezer bag to make into a lovely broth when I have enough. All of my kitchen scraps get composted and used in the garden.

    Dehydrate the peppers and grind it to a power of use it as slices or break it into chunks. Seal it into a jar so you have it when you need it.

    Hi Emmy and Paul. I really like your channel and look forward to your videos. Like you, I find that I am most likely to waste produce. If I have tomatoes that are going over I just freeze them raw. They will be fine to add to a sauce. If I have wilted lettuce I cut it up (usually more in slices if I can) and sauté it in just water until fully wilted down. This can be added to a soup or other dish immediately or frozen. For cucumbers, I found that as long as they are not soft, you can slice them and add them to a jar with pickling juice. You can reuse the juice left over from a jar of pickles you purchased (there is always lots leftover when the pickles are gone) or you can make your own very quickly and cheaply. This really does work. You have to let the cucumbers set for a while in the frig but they will be good to use.
    I also put together any berries, grapes and/or cherries that may be fresh or frozen and need to be used up. I cut them all up and put in a little water and simmer to bring out the juice and get them really soft. Then add lemon juice (if available) and sugar. The amount of sugar depends on your taste. I also will look to see if I have any of those little jelly single serve packets you get from drive throughs (yes I save them). These add taste and pectin. Puree a bit with the stick blender then cook until thickened. Each batch is different. Makes a good mixed berry jam.
    Any water used for cooking potatoes or other veggies (like carrots) should be saved (not thrown down the sink). If not using it to make a gravy for the meal, freeze once it is cooled. This can be used as the liquid when making stock from bones. If you peeled the potatoes for a mashed potato dish, put the peels in a container with a squirt of lemon juice and covered in water. Keep in frig and use in the next week to make crispy potato skins in the oven. Be sure to dry off the skins well and lightly coat them with oil of your choice and salt. Bake in single layer at 375 - 400 until the skins puff and are crispy (maybe 30 - 40 mins depending on your oven). Makes a great side dish or snack. You can add grated cheese the last few mins for extra goodness. You can use these under chili or top with anything that strikes your fancy.

    I saw a good hint in trying to keep celery fresh longer and that is cut it in half and wrap it in foil . It works for me .

    Sunday pasta sauce is what our family calls spaghetti sauce with a variety of leftover meats simmered in it. The odd pork chop, pieces of chicken, or cubes of beef. You can collect them in a bag in the freezer bone and all and pull them out to add to your sauce. Yum!

      You can make savory bread pudding too. The dressing I make for Thanksgiving is actually a bread pudding, made with stock (rather than milk) and egg. I make mine without meat, but you could add sausage or bacon. It is delicious and makes a nice side dish.

    Cucumbers can go bad quickly in my house so I buy the mini cukes, slice them in half lengthwise and scoop out the seeds. Then I sprinkle with everything bagel seasoning and spread soft cream cheese on top. Put the cream cheese sides together and slice into thick slices. Great finger food snack for my lunch! You can also use any dip you like. Dill hummus is great as well!

    save those seeds,and cores from apples,cabbage,lettuce,celery
    tops of carrots.
    potatoes.
    grow it yourselves if space allows.
    join a community garden
    join an agriculture co op
    get to know shop owners/managers.
    get to know farmers in your area.
    they might just cut a deal with you.
    also, gfs,Costco are good ,for some items,or a large family.
    you can also look into restaurant supply stores for certain items for cheap.
    learn how to properly store the items so they won't go bad.
    sell by is not expired.it means it has to be gone by that date to make room for new inventory.do not store in original packages.jan from NYC did a video on this.

    We have a similar recipe that we call Overnight French Toast... love it!
    I agree that my biggest waste is with cucumbers and tomatoes... I have found that other veggies last longer if I do not remove the core... like lettuce or cabbage, and I cut the produce off around the core... learned this from my mom who lived thru the depression, and I leave things like grapes on the stem. I sometimes replace zucchini for cucumbers in a salad because they last much longer in the refrigerator. We live in a remote area of Arizona and I try to shop once a month for essential and get eggs & milk locally in between shopping trips, so making fresh veggies and fruit last longer is important

    Looks delicious, I might make French toast out of the German stollan😋. Combine an egg with a bit of milk mix it and let the bread soke the moisture for a while until its soaked up ( a leftover spoon of mixture can be labelled on top of the toast while baking) . Bake it slowly on low to medium heat in a pan with a tiny bit of butter on both sides. This particular bread is sweet already but you can ad some homemade icing sugar before serving. Take a spoon of suger in a mortar and pestol and ground it! Or put sugar between baking paper and roll it with a baking pin.

    I’ve been trying to do this lately with a focus on not wasting my garden harvests! Our consistent waste is bread, cheese and not using leftovers in time. Most things get thrown in the freezer now!

    Emmy and Paul, what a coincidence! Today was refrigerator clean out day for me. I made soup with ground turkey leftover veggies. I even shredded a small part of a head of lettuce into the soup. I took baby peeled carrots and put them in leftover pickle juice. They are very good after they soak. I turned cabbage into coleslaw with celery, and a wrinkled bell pepper in the mix. Last week’s soup was from a ham bone with split dried peas but it is almost gone so a new soup was in order. As to your question, I often have trouble using up all of an English cucumber as well as random apples. I’ll see how it goes this month. I liked your bread pudding dish. I have never made that but may try if there is left over bread or cake or something like that. I bet raisin bread would be good.

    Oh, my what a wonderful looking bread pudding!! I could just imagine the aroma of the kitchen and sound of the chair scooting away from the table as we sat down to enjoy!! Thank you and thank you for being so imaginative when it comes to using up what you have and showing us how to think out of the box. I used to always find myself wasting buttermilk. I have since learned I can freeze it and that has helped.

    To the peppers I would also add some balsamic vinegar and some oregano, makes the most delicious side salad, here in my country Portugal we also add roast peppers to the basic lettuce, tomato and cucumber salad, the peppers take the salad to a different level. I often roast peppers and freeze them in their juice and water, and I use them everytime I need a salad.

    Emmy I am the worst when it comes to buying too much and the food goes bad. I am so guilty of that. It is just my husband and I and it is so difficult to cook for just 2. Thank you for your channel! You and Paul are true blessings!!

    We tend to waste produce also. I have about 2 ounces of cream cheese, one thick boneless skinless chicken breast and about two tablespoons of cooked spinach. So I am going to slice the breast in half, season it, spread the cream cheese on top, lay the spinach on top of the cream cheese and top with some grated cheese and bake until done. I am going to try this roasted bell pepper recipe! I have some right now that need to be saved!

    You are so right. Produce is our most likely to be wasted. We have come up with a plan that is working for us. The plan is to wash, dry and package or process all produce we bring into our house. Then if we see we haven’t or won’t get through it before it spoils, we freeze it and use it from the freezer. You are right on about waste and all of us being better at avoiding that. My mom was a huge influencer in the way I make meals and also create from bits and pieces left around the kitchen. Thank you for your channel. I appreciate it.

    Hey Emmy, I'm always amazed and impressed at how you create such yummy meals/desserts out of seemingly random ingredients 😋 I'm really trying my best to use up everything but I've struggled with cottage cheese and Greek yogurt recently for some reason so I've either frozen it so I can incorporate it into a recipe later or I've donated it to our foxy friends who visit every evening for their supper 🦊❤️

    I feed our chickens the veggie/fruit scraps that cannot or won't be used for anything else. (Cucumber peel, squash seeds, etc). They pay me back in eggs. I started to re plant my celery and green onions and romaine after I use them. They don't always go full sized like before. But, any part of regrowth is free food at that point. If we have a serving of leftovers or fruits or veggies that need to be used up, we don't let them sit and go bad. I freeze them in a container and have a meal or two. That tip is self explanatory, but it took rising food costs for me to actually follow through on more often. So, while we probably still waste a bit of food, we are slowly improving. No need to not use every bit of what we can. If you make roasted chicken thighs, save the bones. Make broth. If there aren't that many of them, freeze in a bag and add to it until you do have enough.

    Milk! I don't drink a lot of it but it is handy for cooking- I have started subbing either sour cream or Greek yogurt (and a little water) for milk in a lot of recipes and so far, everything has come out tasting fine! I also occasionally get plain cream (no sugar added, for coffee) and that lasts much better than regular milk.

    My mother-in-law lives with us , she doesn’t always eat what we do. So she might eat part of a can of soup and half of her grilled cheese. She leaves little bits like that. We save what we can and try and add it as a side in a different dinner. But the bits and pieces of bread…the birds get that (possibly the raccoon or a opossum lol). But some thing gets fed lol. Great video and I will take the challenge. ☺️☺️

    Every Sunday I bake some cookies and some form of muffin or bread that we use as a breakfast for the first few days of the week. The cookies are for packed lunches. We always have a bit of cookies leftover. Recently I started making the cookie dough and par freezing it, bagging up the dough balls so I can make them as needed. Now I rarely toss cookies, we get “fresh” cookies in the middle of the week, and since I can vary the doughs we can have a variety. Now to figure out how to get my family to eat the ends of the quick bread so I don’t have to toss that. Suggestions??? That Stromboli looked delicious! Thank you for sharing.

    I enjoy watching all your videos. l saw one today where you showed the dent in your little freezer. l saw a video where a man had that same dent in his car and he poured very warm water over it and a 🪠 plunger to pull the dent out. You could put an old towel in hot water to warm the dent and plunge the dent out. He just pulled it out slow and it worked. Thought l would share that idea with you. Love you folks. keep on being you.

    P.s. I wash my cucumber and make sure it's dry keep peel on slice in coins put them in a air tight container put a paper towel cloth napkin on top store upside down . I have had cucumber for up to 2 weeks. Change the paper towel every other day.

    If you leave a little more on the onion part with the roots you can put it in water. It will sprout new roots and then you can plant it. You'll get free oniongreens for salads, soups and such. It works with a lot of veggies. It you have sprouting garlic, onions or potatoes and a little gardenpatch plant them. ;) No need to throw them away.

    Without a doubt cucumbers. I love cucumbers, but buy too many at once. When I would come home from the store with cucumbers, my husband would shake his head and would say "you might as well just throw half of them out now" I've gotten better as I've gotten older. I buy less and cut the entire cucumber up and divide them in separate containers so I can easily grab them for my lunch at work. I love roasted peppers. They are so easy to make and taste so delicious. Thanks for sharing all of your recipes.

When I came out of the store, there was a couple that I made eye contact with and I said "You guys better brace yourself", the man said to me "an arm and a leg?" and I said "well, I have a leg left"!     Hi Emmy and Paul. Really enjoy these no waste food videos --- always great ideas! We only purchase the produce we need for the week, so we don't have to worry about food waste there. However, produce has not been lasting as long as it used to so sometimes something may go bad. We inspect our produce quite well but sometimes it is bad on the inside with no indications when we inspect it. That is really annoying. I mentioned this to the produce manager at our grocery store one day just in passing. She asked what we had to throw out and immediately replaced the items for no charge. That was very much appreciated. Hope your weekend goes fantastic.

    Very good challenge. Even me being on frugal eco lifestyle , sometimes forget half of an onion or a lemon. Hate myself when this happens. So good pointing at this. I have to look more often in refridgerator and not wait until left over creating friday. Kindest regards!

      Hi Monique, If I have lemons or limes that might go bad, I wash and zest them. I put the zest in a ziplock bag and freeze. Then I juice them and lay that flat to freeze in another ziplock. I can just pull them from the freezer and break off a bit whenever I need to "brighten" up the flavor of any dish. So yummy!

    I've really made an effort to make sure I'm not letting things rot in the refrigerator! My biggest challenge is beans I'll use half a can and they only last for like 2 or 3 days in the refrigerator and they go bad. So I'm trying to use them either in a hot dish or salad...We eat whole food plant-based so we really eat all of our produce that's not an issue. I sometimes use a small amount of dairy like sour cream and that'll usually go bad. I am going to try to use it in baking so that I'm not throwing it out! I'll check back it'll be interesting to see what else we come up with!

    My first generation Italian grandmother (Mia) taught me how to make roasted peppers too. After you do what you have done...add EVOO, fresh garlic, capers, diced anchovies and salt and pepper. Refrigerate to marinate. I eat it as is but it is really good on crustini. One of my FAVORITE dishes!

    Thank you Emmy and Paul for another great video. I think it’s great how Paul is so enthusiastic about all of your recipes. I made your coleslaw recipe that uses brown sugar and chopped apples and served it at a bridal shower today. It was a huge hit and I need to send the recipe to quite a few ladies. It was the perfect combination of sweet and tangy. I would say our biggest area of food waste tends to be bread, so I appreciate the bread pudding recipe. And I will be looking for ways to use every last piece of bread creatively over the next two weeks. Thanks for the challenge!

    I'm with you for zero food waste and I'm also anti-excess-plastic. So I don't buy produce that's packaged in plastic, I don't use plastic wrap, use parchment instead of foil, and all my leftover food containers at home are glass. I try not to save on one thing just to forsake something else.

    I just went to Idaho today with my dd. She had an appointment and I went along for the ride. They have a Fred Meyer there so we went for the clearance deals, plus I grabbed a couple things they had on sale. I have to really control myself with those markdown stickers, especially with the produce, because that’s my biggest food waste category. I bought a reasonable amount of produce, but the biggest share of my bill was meat markdowns. Today I will freeze all of it. Meat prices are so high, so buying stuff on clearance makes sense.

    Hi Emmy and Paul, hope you are keeping well. Another great video, so informative and real. I just wanted to add another idea. I try and keep the seeds from veg when possible. I dry them and store them and then I grow my own veg from those seeds. I have been using home harvested pepper seeds for the past couple of years, and had great success. Its really satisfying to know that every part of the vegetable has been used. Hope this is helpful xxx

    I find myself tossing eggs consistently. I don't use that many eggs, but I try to use them before they expire. My grocery store will not sell just 1/2 dozen eggs. They will only sell a whole dozen, so I find that they expire before being all consumed.

    I try never to waste food. Brown bananas I freeze for smoothies or make banana bread. I try to plan my meals so I only buy what I’m going to make for dinner. We have leftovers sometimes but not all the time. Like for example I make lasagna last Sunday I put it in the fridge my husband took the last piece for lunch today, he said it was delicious. Always use your scraps, you’ll be surprised what you can come up with.

    Hello, Emmy and Paul! I so enjoy your content- thank you. It's informative, encouraging and relaxing. I am all about zero food waste. It was very cold last week (as you have shared), so I wanted soup for lunch one day, rather than what I had in the fridge. I looked in the freezer, found leftover turkey meatballs and made a delicious quick soup! I only added onions, carrots, zucchini, garlic powder and chicken stock, and, WOW! It feels great to transform leftovers into something new that turns out so well. Every Christmas season, I have leftover marzipan stollen from Trader Joe's (yum)...so I am thrilled to have your idea for bread pudding. I will definitely make that later this year! In the meantime, I will also try it with a frozen half-loaf of home-baked sourdough a friend gave me. Blessings to you from DC metro...Jeannie

    Thanks for all the great comments and ideas. For those who end up with spoiled lettuce grow "cut and come again" lettuce or arugula. Use a shallow container and fill with a couple inches of moistened potting soil. Sprinkle some arugula or leaf lettuce seeds on top and cover lightly with a very thin layer of soil. Place on a saucer in a sunny window and lightly moisten every 2-3 days. When leaves reach 2-3" tall, cut across and eat the cuttings from the top inch. Leave the rest and they will regrow. Makes for fresh greens continuously. If you like and use them, start a second container and alternate your "harvest" days.

    Celery. I buy it because I want to make a soup or sloppy joes and then I can't eat it all before it goes bad. I need to put it into the dehydrator immediately after making my meal out of it. I really enjoy having dehydrated celery on hand.
