I was thinking, those quest cookies look so crunchy. I think if you crush them and add a little butter they would make a delicious crust for a Keto cheesecake 😍
A nice important quick tip while using the microwave continuously (like the cottage crackers) ,after the second batch,wipe off the inside of the microwave with a towel ,as the cooking of any food with high water content like cheese will leave a good amount of moisture trapped inside the microwave ,which will either delay cooking time or food will be less crunchy although the same cooking time is used throughout.thanks for uploading ♥️♥️.
I’ve made the cottage cheese chips with generic cottage cheese and it worked great! I just use a piece of parchment paper on the turntable of my microwave and spread out about 1/2 a cup thinly. It takes about 5 minutes for it to brown enough, then I let cool and break into pieces.
I just used my round Silicone mat that I had purchased to make the microwave tortillas by Serious Keto. I did use a little bit of spray. You were correct about needing to experiment. I used the Walmart Equate brand and it was the Small Curd. I made large chips because I don’t have your patience to make small chips. I will now always keep Cottage Cheese in my refrigerator. I can’t tell you how happy I am to finally have a use for those Silicone mats since I never made those tortillas. Thank you ladies.😘❤️😘😂
Hi Emily and Sarah😀, I learned from a married Keto TH-cam couple a couple of years ago that you can take one of those protein bars and cut it up into four squares (I’ve done them whole even) and put them in your Air Fryer @350, middle rack (I have air fry oven), 3 to 4 minutes depending on your air fryer. They turn out like a cookie right out of the oven. Warm cookie and soft on the inside. Imo they taste much better than from a microwave.
I do this method too, only cut the bar into 8 pieces for bite sized “cookies” and if they get hard because I usually do 2 bars at a time, just zap for 6-8 seconds and it softens them up again. Great grab and go treat.
I make a thing my friends call ghetto nachos. Nuke pepperoni on a paper towel. When it’s crispy, sprinkle with cheese & nuke again until the cheese is melted.
Hey guys! I just tried the cottage cheese chips. Really really good! I used large curd 4%fat cottage cheese and added bagel seasoning and cooked them on 80% power. I have a 900 watt microwave. Took a few minutes and just when I thought it wasn’t going to work- it did! They melted all together into a circular mass so I just broke them apart like the other lady. Thanks for such a fun and easy and tasty recipe!
The uneven cooking happens in all microwaves. That’s why the turntable is now standard on microwave ovens. Turning doesn’t help the center spot which is obviously a hot spot in your oven. Thanks for the video. Love y’all. ❤️
So I did look at the ingredient's of trader joes small curd cottage cheese and compared it to other brands. Daisy btw has no stabilizers. trader joes has Nonfat Milk, Locust Bean Gum, Agar for stabilizers. I looked at several other brands and while they had stabilizers some including the Locust Bean Gum none of the others included Agar. This leads me to believe that the key component is the Agar. Agar is made from seaweed and causes things to gel, the gel is stable until 85°C or 185° F this is more than twice as high a temperature to other gelling agents. I think this is the key ingredient that is in trader joes cottage cheese that allows this to work. this also makes me wonder if the Agar could be added to your mozzarella cheese before making keto fathead dough to make it more stable when making things with it since it might help it keep it's shape at slightly higher heats.
Great value brand works great either 2% or 4%. Lucerne (Safeway/Albertsons store brand) also works great 2%/4% and has 4 carbs per half cup instead of 5. But don't ever buy the 1% lucerne brand. It actually has SEVEN carbs per half cup. I already made that mistake and didn't notice until after i had eaten a serving of it.
I had some Ketowise Peanut Butter Cups. Each pack has 2 patties which I broke into 8 pieces total. Baked in toaster oven and they spread out really , really thin. Delicious! Crispy, reminded me of Tate Gourmet Cookies. Kinda stuck to my teeth but even the candy did that anyway. A great hack. Thanks so much for finding it and showing to a wider audience.
I love Chef John's pizza chips. I make them all the time, and I've made them in the microwave too. Most of the time I don't even use sauce because I don't always have it on hand. They are great either way.
Keto Twinzies…😳😳😳 ( that’s 3 WOWS!) I just saw your video and I just so happened to have the TJ cottage cheese AND those individual parchment paper pieces on hand. So I IMMEDIATELY ( if not sooner) ran to my fridge to make the cottage cheese chips! Needless to say I started off with 5 little individual scoops of cottage cheese that all sort of melted together into 1 giant chip. I had to cook them a little over 3 minutes till all the liquid ( shall I say moisture 😜) disappeared and it looked slightly light brown. I let cool for about 20 seconds and then peeled off parchment paper then cooling rack for about 1 minute. I cannot explain how DELICIOUS and crispy and satisfying they were! I even had the Litehouse jalapeño ranch but actually the chips were Perfect on their own! Another KT WINNER!!!! Thank you for helping me “ stay on track” and NOT get bored staying on keto!🙏👻
I made them today with small curd (4%) cottage cheese from Aldi I used a 1 “ icecream scoop and put them in silicone baking pan for 4 minutes. They combined to form one large chip that I broke into smaller chips.

I used Kirkland brand protein bars - chocolate chip cookie dough flavor. I nuked at 50% power for 1 minute. Mine actually melted a bit to look more like little cookies. They taste great! I love salad, but our high school had dressings in huge pump containers and we could get all we wanted anytime, salad or not. I used to get carrot sticks and ranch dressing almost every day. I still love carrots with ranch. But I HATE bottled ranch. For me, it has to be the buttermilk ranch made with buttermilk, mayo, and powder. My favorite is the kind schools and restaurants use, which I believe is usually Lawry’s brand or maybe CF Sauer, but home cooks can’t easily get that, so the Hidden Valley Ranch powder is what I use at home.
I was making some pancakes on my griddle this morning and since I had gotten the cottage cheese I thought I'd give the chips a try. They were so easy! I didn't do any spices other than salt and pepper, but the next round I'll add in garlic powder too. I didn't get Trader Joe's brand, I got Wegman's organic small curd because sometimes additives hurt my stomach. That brand worked great!! This is crazy how easy and delicious these little crispy morsels are. I had some cottage cheese that was going to go bad and remembered this video. I was VERY skeptical and I’m not a huge cottage cheese fan. You would NEVER guess these were made from cottage cheese. The possibility of flavors are endless. I mixed two batches with different spices and I found the sweet spot at 2min 30 sec on normal temp. It did take a minute because you can only make a small batch at a time and I had 2 cups of cottage cheese, but oh man was it worth it. I want to experiment with doing it in the oven and making more at a time. Amazing recipe, thanks so much for coming back and revisiting this. It’s a keeper for sure.
I have square silicone cupcake holders. I use several at a time and they come out great. I also use Kroger brand whipped cottage cheese. For a sour cream/onion type chip I'm going to try to mix in some green onion dip mix powder. I'm hoping for good results.

Something that worked for me was to put the cottage cheese in my mini blender with some seasonings then spooned on to the parchment paper. They came out better. I don't remember how long I cooked them. I have the silicone mats, now. I'm going to try those.
AHA! I was looking for You! I suggested blending the curds first for a smoother more controllable outcome but I've been too busy to try it myself and no one else has mentioned making a consistent slurry! Your experience validates my hypothesis! Now that I have more space and time I shall try this blended chip method myself . Thank you for the motivational boost.
Someone might have commented this already but the microwave plate spins so that the "heat waves" from the microwave will get to the food from different angles to heat the food evenly through out. You are not supposed to put anything in the middle like plates or bowls because it will just spin but not move around the microwave therefore all the heat gets concentrated into the middle with out having an opportunity to heat other parts of the food or plate or whatever is in there. You got the burning in the middle because the heat concentrated in the middle with out any movement around. I hope that makes sense. Start putting all food on the sides of the plate for even heat distribution.
These look delish! Things are getting overdone in the middle of the plate because that’s where the concentration of microwaves hit. Things around the outside are traveling further distances and aren’t as impacted as the center.That’s my take on it anyway. Lol
I wonder if pureeing the cottage cheese first would help the chips cook more evenly? e.g. Stick an immersion blender in the tub of cottage cheese until smooth, then dollop away.
I have never liked cottage cheese but I do make a jello cheesecake with cottage cheese and my family loves it. I will try those cottage cheese chips! I want to thank you for introducing me to Lavish flat bread. I cut them into squares and a little avocado oil, I make chips( I put a little salt on them). They also stay fresh for a good while. Today I cut 4 squares out of one of the sheets and made BUNUELOS! ( sprinkled with allulose and cinnamon)They were very crispy and delicious! 3 carbs per square!
Placing the food on the edge of the rotating plate means it evenly moves throughout the hot and cold areas, and evenly distributes heat throughout. The middle chip will burn otherwise.
You two are SO fun to watch and bring us so many new ideas! Have you ever tried plain pepperoni chips? Not my original idea, but I can't remember where I read it. I put as many as I can fit (12-16?), on a paper towel on a plate (very greasy), and microwave for 50-60 seconds in my microwave. As you recommend, stay nearby watching them. The microwave is always a bit smokey when I open it, but they've never caught on fire, yet, haha! The paper towel on the bottom absorbs most of the grease, but I do also blot the grease off the tops. They are so crispy and delicious. I usually eat them plain, but I sometimes dip them in a little bit of plain sour cream or marinara sauce. I also use them as croutons on my pizza salad (greens, mozz pearls, sliced black olives, green onions, mushrooms, bell peppers, pepperoncini...whatever you like on your pizza, & Kraft sun-dried tomato Italian salad dressing, sure wish I could duplicate their recipe, the flavor is perfect for this salad). Has anyone tried making cottage cheese chips ahead of time and taking them with you somewhere? How do they hold up? We visit my in-laws frequently, and everyone sits around eating chips out of an open bag which can be a HUGE temptation for me. Once I start I can't stop. It would be helpful if I have something already made that I can just grab. I'm going to give it a try if no one has experience with it yet!
I used 2 percent great value small curd cottage cheese and it worked great. I did not put any in the center just in a circle or kind of circle around the edges of the parchment paper. Ended up taking 6 or 7 minutes on 50% power but I don't know what wattage the microwave is. Also tried a couple variations. Things i normally like stirred into cottage cheese: Homemade keto strawberry jam Homemade keto sriracha Vinegar and salt All worked well. Strawberry one browned faster and darker than the rest but was good with just a hint of strawberry. If you use the Lucerne (Safeway& Albertsons) brand with 6 grams of cottage cheese in each teaspoon, 10 chips is 2 carbs. Safeway brand has 4 carbs per cup instead of 5 like most brands including great value.
Wow. I will definitely do the cottage cheese and pizza chips. I don't feel good after eating any Quest bars so I will skip that but lots of people will love them. How about some Tajin seasoning on those chips? Too bad I saw this after I got home from shopping!!! It does make me wonder if mixing some parmesan or mozzarella with sour cream or cream cheese might work similarly.

Diabetic here who seesaws between good girl and bad girl diet. Loved the cottage cheese chips. Could not make it work on skillet either. Made individual chips in/on microwave Silpat mat too. Much better with cottage cheese with additives. Family dollar Clover Valley worked best for me. No Trader Joe’s in my area. Power at 6 and time 4 min 30 sec. Also love whipped cottage cheese with vanilla, cinnamon and dates (chilled) but like organic brand for that.
I just made these and they will be my go-to “chip”! I used the Target Good & Gather low fat (it’s all they had in stock) cottage cheese. Added some powdered beef gelatin and powdered ranch seasoning, then microwaved on a silicone mat. Thank you for the inspiration!! 💗
Place everything in a circle on the outside when microwaving anything. Avoid the middle. Learned that from a chef. Also, when reheating most anything, use the weight defrost button and choose a high setting like 7 or 8 minutes, but always spread out the food and leave a hole in the middle of any plate you cook or re- heat in the microwave. You guys ROCK, BTW! You two have been my inspiration and my mentors❤️❤️
@Critter 400 of center on the outside. If you are trying to make more than one thing at a time, elevate one plate by adding a coffee mug (still on the outside), and then the rest of it on bottom on the outside of the other side.

I will absolutely try those cottage cheese chips though I do not like cottage cheese, lol! I feel like it will taste different as a chip! Hi ladies! Tried these today with Good Culture brand cottage cheese. Worked fabulously. I added Trader Joe's Onion Salt mix = sour cream and onion! I noticed the first 4 - 5 minutes on power 5 seemed to evaporate the moisture then another minute on regular power did the browning. Thanks so much!
@@pinehillart I liked it. I made 2 batches! I probably used around 1/2 tsp to 1 tsp for one batch of chips. Could add a bit more if you really want it more intense. But I am happy with the results.

Microwave ovens cook differently than a regular oven. As you noticed the one in the center tends to burn. It is better to place your items in a circle around the edge of the plate for more even cooking.

Oh yeah lol I been doing that microwave quest protein bar hack for a while. I love love love it!!!! But shouldn't be in the microwave more than 20-30 seconds. 1 minute is way too long.
I personally really hate Quest bars. Alternatively, I make large batches of keto cookie dough, roll it in wax paper and freeze each roll in a ziploc bag. When I know I will need cookies, I take some dough out a little ahead of time. I bake at 350 degrees on the upper racks. It's my own slice and bake cookies. Better than anything you could buy in the stores. Another tip is to add a capful of bourbon into each batch of dough when you're making it. Doesn't add any carbs, but adds a ton of flavor.
I like to do the protein bar cookies in the oven. Let them melt a bit..flatten and return to oven just enough time to slightly brown. Love the chocolate chip quest bars. 😋
Love this recipe! I just use regular grocery store cottage cheese and zap it smooth with a stick blender. Then use the back of a spoon to spread the mixture on the parchment paper.
I have baked the Quest bars at 300 degrees for about 5 to 10 minutes. If you want a crispy outside and warm, chewy center….try that! Keep an eye on them….once they start to brown, they are done.
I just made them this morning and they came out great. I used Meijer brand cottage cheese small curd. It took 7 minutes total. Put about a table spoon on a sheet of Parchment paper and had no problem taking them off. I will make them again.
Looking forward to trying the quest cookies, will cook in a ring around the outside rather than through the middle. Even when i reheat i use an of center location due to the concentration through the middle, love Chef John
Definitely avoid the middle. It’s basically not circulating around in the microwave but staying in one spot. Most microwaves do not cook evenly. So the food needs to move around the whole space.
I tried it today. I used Publix supermarket low-fat cottage cheese (because that's what was available) on a sil mat full power for 2.5 minutes. Will make again!

I don't think it is your glass turntable plate but the way microwaves work that concentrates the heat in the middle.

My favorite is the kind schools and restaurants use, which I believe is usually Lawry’s brand or maybe CF Sauer, but home cooks can’t easily get that, so the Hidden Valley Ranch powder is what I use at home.
I was making some pancakes on my griddle this morning and since I had gotten the cottage cheese I thought I'd give the chips a try. They were so easy! I didn't do any spices other than salt and pepper, but the next round I'll add in garlic powder too. I didn't get Trader Joe's brand, I got Wegman's organic small curd because sometimes additives hurt my stomach. That brand worked great!!

This is crazy how easy and delicious these little crispy morsels are. I had some cottage cheese that was going to go bad and remembered this video. I was VERY skeptical and I’m not a huge cottage cheese fan. You would NEVER guess these were made from cottage cheese. The possibility of flavors are endless. I mixed two batches with different spices and I found the sweet spot at 2min 30 sec on normal temp. It did take a minute because you can only make a small batch at a time and I had 2 cups of cottage cheese, but oh man was it worth it. I want to experiment with doing it in the oven and making more at a time. Amazing recipe, thanks so much for coming back and revisiting this. It’s a keeper for sure.

I have square silicone cupcake holders. I use several at a time and they come out great. I also use Kroger brand whipped cottage cheese. For a sour cream/onion type chip I'm going to try to mix in some green onion dip mix powder. I'm hoping for good results.
In the microwave or oven? I'm very curious how the oven would work.

I made the cottage cheese chips quite a while ago. I'd forgotten about them! Something that worked for me was to put the cottage cheese in my mini blender with some seasonings then spooned on to the parchment paper. They came out better. I don't remember how long I cooked them. I have the silicone mats, now. I'm going to try those.
AHA! I was looking for You! I suggested blending the curds first for a smoother more controllable outcome but I've been too busy to try it myself and no one else has mentioned making a consistent slurry! Your experience validates my hypothesis! Now that I have more space and time I shall try this blended chip method myself . Thank you for the motivational boost.
Someone might have commented this already but the microwave plate spins so that the "heat waves" from the microwave will get to the food from different angles to heat the food evenly through out. You are not supposed to put anything in the middle like plates or bowls because it will just spin but not move around the microwave therefore all the heat gets concentrated into the middle with out having an opportunity to heat other parts of the food or plate or whatever is in there. You got the burning in the middle because the heat concentrated in the middle with out any movement around. I hope that makes sense. Start putting all food on the sides of the plate for even heat distribution.
These look delish! Things are getting overdone in the middle of the plate because that’s where the concentration of microwaves hit. Things around the outside are traveling further distances and aren’t as impacted as the center.That’s my take on it anyway. Lol
Ooh Yes no trader joes in canada but these would be good with kernels popcorn seasonings. Ketchup flavour .. dill pickle or salt & vinegar

I wonder if pureeing the cottage cheese first would help the chips cook more evenly? e.g. Stick an immersion blender in the tub of cottage cheese until smooth, then dollop away.
I have never liked cottage cheese but I do make a jello cheesecake with cottage cheese and my family loves it. I will try those cottage cheese chips! I want to thank you for introducing me to Lavish flat bread. I cut them into squares and a little avocado oil, I make chips( I put a little salt on them). They also stay fresh for a good while. Today I cut 4 squares out of one of the sheets and made BUNUELOS! ( sprinkled with allulose and cinnamon)They were very crispy and delicious! 3 carbs per square!

Placing the food on the edge of the rotating plate means it evenly moves throughout the hot and cold areas, and evenly distributes heat throughout. The middle chip will burn otherwise.

You two are SO fun to watch and bring us so many new ideas! Have you ever tried plain pepperoni chips? Not my original idea, but I can't remember where I read it. I put as many as I can fit (12-16?), on a paper towel on a plate (very greasy), and microwave for 50-60 seconds in my microwave. As you recommend, stay nearby watching them. The microwave is always a bit smokey when I open it, but they've never caught on fire, yet, haha! The paper towel on the bottom absorbs most of the grease, but I do also blot the grease off the tops. They are so crispy and delicious. I usually eat them plain, but I sometimes dip them in a little bit of plain sour cream or marinara sauce. I also use them as croutons on my pizza salad (greens, mozz pearls, sliced black olives, green onions, mushrooms, bell peppers, pepperoncini...whatever you like on your pizza, & Kraft sun-dried tomato Italian salad dressing, sure wish I could duplicate their recipe, the flavor is perfect for this salad). Thanks so much for entertaining and educating us! I always look forward to your new cooking videos and your keto lessons learned.

The concept of cooking it down to remove the cauliflower flavor was brilliant. I tried the spice combination that you suggested and it was great, but I would like to do a couple of more riffs on that, one more plain and maybe something else to go with say, Indian or Asian dishes. Has anyone tried making cottage cheese chips ahead of time and taking them with you somewhere? How do they hold up? We visit my in-laws frequently, and everyone sits around eating chips out of an open bag which can be a HUGE temptation for me. Once I start I can't stop. It would be helpful if I have something already made that I can just grab. I'm going to give it a try if no one has experience with it yet!
They are very dry, thin, and crispy so yes they would absolutely be fine treated as other nonperishable foods.
I used 2 percent great value small curd cottage cheese and it worked great. I did not put any in the center just in a circle or kind of circle around the edges of the parchment paper. Ended up taking 6 or 7 minutes on 50% power but I don't know what wattage the microwave is.
Also tried a couple variations. Things i normally like stirred into cottage cheese:
Homemade keto strawberry jam
Homemade keto sriracha
Vinegar and salt
All worked well. Strawberry one browned faster and darker than the rest but was good with just a hint of strawberry.
If you use the Lucerne (Safeway& Albertsons) brand with 6 grams of cottage cheese in each teaspoon, 10 chips is 2 carbs. Safeway brand has 4 carbs per cup instead of 5 like most brands including great value.
Do the cheese and pepperoni. I dip them in sauce
Wow. I will definitely do the cottage cheese and pizza chips. I don't feel good after eating any Quest bars so I will skip that but lots of people will love them. How about some Tajin seasoning on those chips? Too bad I saw this after I got home from shopping!!! It does make me wonder if mixing some parmesan or mozzarella with sour cream or cream cheese might work similarly.
Sarah’s a genius. That’s how microwaves work. When you cook in them, put things in a circle, not like you would on a cookie sheet for a regular oven. Great job! Love your experiments!! ❤
Diabetic here who seesaws between good girl and bad girl diet. Loved the cottage cheese chips. Could not make it work on skillet either. Made individual chips in/on microwave Silpat mat too. Much better with cottage cheese with additives. Family dollar Clover Valley worked best for me. No Trader Joe’s in my area. Power at 6 and time 4 min 30 sec. Also love whipped cottage cheese with vanilla, cinnamon and dates (chilled) but like organic brand for that.
I just made these and they will be my go-to “chip”! I used the Target Good & Gather low fat (it’s all they had in stock) cottage cheese. Added some powdered beef gelatin and powdered ranch seasoning, then microwaved on a silicone mat. Thank you for the inspiration!! 💗

Place everything in a circle on the outside when microwaving anything. Avoid the middle. Learned that from a chef. Also, when reheating most anything, use the weight defrost button and choose a high setting like 7 or 8 minutes, but always spread out the food and leave a hole in the middle of any plate you cook or re- heat in the microwave. You guys ROCK, BTW!

@Critter 400 of center on the outside. If you are trying to make more than one thing at a time, elevate one plate by adding a coffee mug (still on the outside), and then the rest of it on bottom on the outside of the other side.
I cut my Quest bars up and bake in my toaster oven. They come out like a real cookie! 350 for approx 5 minutes Yum!!!

I will absolutely try those cottage cheese chips though I do not like cottage cheese, lol! I feel like it will taste different as a chip! As for the pizza chips.....I did that in the microwave before and it was fast and came out very crunchy and delicious. Maybe try the microwave next! Thanks a million, ladies!!!

Hi ladies! Tried these today with Good Culture brand cottage cheese. Worked fabulously. I added Trader Joe's Onion Salt mix = sour cream and onion! I noticed the first 4 - 5 minutes on power 5 seemed to evaporate the moisture then another minute on regular power did the browning. Thanks so much!
How did the sour cream and onion flavoring carry through?
@@pinehillart I liked it. I made 2 batches! I probably used around 1/2 tsp to 1 tsp for one batch of chips. Could add a bit more if you really want it more intense. But I am happy with the results.

Microwave ovens cook differently than a regular oven. As you noticed the one in the center tends to burn. It is better to place your items in a circle around the edge of the plate for more even cooking.

Oh yeah lol I been doing that microwave quest protein bar hack for a while. I love love love it!!!! But shouldn't be in the microwave more than 20-30 seconds. 1 minute is way too long.
I personally really hate Quest bars. Alternatively, I make large batches of keto cookie dough, roll it in wax paper and freeze each roll in a ziploc bag. When I know I will need cookies, I take some dough out a little ahead of time. I bake at 350 degrees on the upper racks. It's my own slice and bake cookies. Better than anything you could buy in the stores. Another tip is to add a capful of bourbon into each batch of dough when you're making it. Doesn't add any carbs, but adds a ton of flavor.
I like to do the protein bar cookies in the oven. Let them melt a bit..flatten and return to oven just enough time to slightly brown. Love the chocolate chip quest bars. 😋
I used silicone muffin cups for the cottage cheese chips! It gave them a cheese puff texture. Very good

Love this recipe! I just use regular grocery store cottage cheese and zap it smooth with a stick blender. Then use the back of a spoon to spread the mixture on the parchment paper.
I'm thinking you could roll out those protein bars, cut them in little squares, nuke them and make cereal.
I have baked the Quest bars at 300 degrees for about 5 to 10 minutes. If you want a crispy outside and warm, chewy center….try that! Keep an eye on them….once they start to brown, they are done.

I just made them this morning and they came out great. I used Meijer brand cottage cheese small curd. It took 7 minutes total. Put about a table spoon on a sheet of Parchment paper and had no problem taking them off. I will make them again.
Looking forward to trying the quest cookies, will cook in a ring around the outside rather than through the middle. Even when i reheat i use an of center location due to the concentration through the middle, love Chef John

Definitely avoid the middle. It’s basically not circulating around in the microwave but staying in one spot. Most microwaves do not cook evenly. So the food needs to move around the whole space.
