Mary's Nest, here's a laugh for sharing with you: I was just at a channel and I was the only second viewer, etc. The first viewer commented to the channel owner with: " You think you are making cottage cheese but if you want real cottage cheese go to Mary's Nest. What you are making is more like cream cheese; not cottage cheese ! " ... LoL I commented to the second viewer and posted: " I love " Mary's Nest ! " Now I have forgotten the name of that channel, Mary ! " ... LoL

I'm a 56-year-old female bodybuilder. I have spent THOUSANDS of dollars on cottage cheese over my lifetime. With the inflationary prices of 2021, I will be trying this soon! I pay almost $4 for a gallon of milk and almost $4 for a 24 oz container of cottage cheese. When cottage cheese goes on sale, it's like a gift from the angels. LOL Thanks You So So Much Mary!
I am from Ukraine , and live in the US for over 30 years, I am used to live on natural, home made cottage cheese, and not like an American version, watery and salty, but cottage cheese that you can cut with a knife and dryer yet not salty and tastier... this is great video and I think it is close to what I am used to have way back when. Thank you kindly for posting it.
In my 7th grade foods class, (60's) I was taught to make Pie Crust using 1/3 c milk plus 1 tsp vinegar. I love my pie crust & have never seen a recipe like it. Doesn't use ice water but its very flakey. That tang is the best part of my pie crust.
Thank you Mary for teaching us this simple method. I came home disappointed from the supermarket as I couldn’t find one brand of cottage cheese that didn’t have a list of unwanted ingredients. Now I will make my own and I’m so grateful I found your video.
I live in France where it's always been nearly impossible to find commercial cottage cheese. Danone took a crack at it for a year, promoting it the same time as a variety of Skr products. It looks like cottage cheese has lost the popularity contest, as it's now off the market. This prompted me to hunt for a recipe, and yours was both easy and satisfying to make. The finished cheese is delicious. Who needs Danone anyway?!
@@Alice-nv7oo Really? I looked at Leclerc Gisors again last week and all they had was Skyr, which seems to have won out over Danone's cottage cheese in my region.
Love, love your instructions. Brings me back to the time back with my "baka" (grandma) in Croatia. She made everything from scratch and never used any gadgets.

I just made my first batch. I scored a gallon of Organic whole milk for $2.50! It is absolutely delicious! I like cottage cheese but I never eat it plain because it’s too salty for me. NOT SO with this homemade. I ended up with 3 cups of deliciousness that I can eat plain (no salt). Thanks Mary.

What a sweet lady you are!!! I am definitely doing this, I eat cottage cheese every single morning along with farmer cheese and Raspberries, hoping I can find a farmers cheese recipe so I don't have to keep buying it from the store either ❤❤!!
This is the BEST video I've watched in forever. I'm a perfectionist, so trying something new is seriously daunting, and if I'm scared I might mess it up, I won't attempt it - your reassurances and explanation put my mind totally at ease, I'll be trying to make this, this weekend! Thank you x
I just made it yesterday. I used 1% skim milk and vinegar. Came out wonderful. I don't taste at all the vinegar and I didn't rinse it out afterwards. Love it. Thank you so much. 😀
Thank-you, I found this very helpful, and personally reminded me of when my grandmother made cottage cheese. Loved when she would scoop a big spoon full of her cottage cheese into the scrabbled eggs...made the most fluffy eggs...yum.
Really, cottage cheese in scrambled egg ? I will certainly try this when I eat one again.....not much for eggs here....but occasionally I will eat one.....
My new favorite home cooking channel :) I was at the store earlier and thought that cottage cheese would be a nice snack on a hot day. However, I've made paneer a handful of times and it always reminded my of cottage cheese. So, when I got home I searched for a recipe and your channel popped up. I checked out a few of your other videos, and I have to say I LOVE your delivery of info, makes it so much more approachable than other content creators. No need for specialty ingredients, expensive tools, or super exact measurements. I mean our ancestors did this before sur le table came into existence! Time make me some cheese! Thanks Mary :)
Hi Mary, I had recently expired whole milk and added enough 2% milk to make a gallon...8 cups each. Drained, squeezed it in a nut bag and then added some heavy cream and whole milk and salt and It is very DELICIOUS!!!!! THANK YOU SO MUCH!!!
We make a similar version of this, we drain and squeeze the whey out, but no rinsing under water. And then add a little salt and any herb seasonings (such as basil, oregano, etc.) to the dry cheese and it makes a wonderful herb cheese. I had not thought to leave it as is once it was drained, so we are definitely going to give this a try! We LOVE LOVE LOVE cottage cheese! Thanks for sharing!
Omgoodness! I finally made this and this is the only way I'm going to have it... no more buying it from the store. I've made this and have eaten with canned peaches, was delicious... but my favorite so far is that I used it to make lasagna... and with my homemade sauce... between both, it was the best lasagna I ever made. I love it...

Mary's Nest I think I am.. I had your one playlist playing on screen and fell asleep (it was bed time.. your not boring) but I woke up to you as well 😂 thanks for all you do!
I am so happy to find this recipe. I once read that making cottage cheese was very complicated in a factory so I never even thought about making it! I have some store-bought in the fridge that is 400 mg sodium in 1/2 cup which is ridiculous. Can’t wait to try this! Thank you for the video.
Thank you for yet another fantastic recipe. LOVE your instructions and detailed "lessons". I grew up in Switzerland and we always drank raw milk right from the farmer next door. The cows grazed in lush pastures filled with alpine herbs and flowers. I wish you knew how delicious that resulting milk was... American milk is sadly very bland. However, I have become accustomed to it. I will be making this recipe tomorrow. Thank you again!!!
Thanks for mentioning ... makes me realize the sky is perhaps the limit for infusing chosen herbs or citrus peels into the milk while warming (citrus peel may likely require adding to the vinegar, as commented above, to avoid curdling the milk early)
It worked with A2 ultra-pasteurized milk too :) Can't find any A2 cheese in my area, so I looked how to make cottage cheese... and it works :) Thanks :)
You are a good domestic teacher. You teach or instruct with great clarity. You are gentle and make the environment much comfortable and you are also a clean cook. In some other demonstrators way of making cottage cheese, I wondered why it is ever necessary to rinse away every whey indirectly introducing some harmful bacteria in the cottage cheese that could be trapped in the process of that extra rincing.. thank you so much for teaching me better. May God bless and favour you in all your culinary endeavours.
Thank you so much for all that you share here. I enjoy all that you show by example and your shared knowledge. Your site here is one of my favorites. I have made my own homemade ricotta and I used it to make some nearly flourless Gnocchi... You're very good at explaining things...I enjoy your channel...I've got a lot of catching up to do!
Very clear very traditional very healthy! It’s amazing how some practices are similar in any corner of the world - south of Mediterranean here - we apply almost the same, especially the finger test 🙂
Thanks so much Mary! We made some and it was a really nice dry cottage cheese. My husband loved it without any cream. It was a lot like eating crumbled mozzarella. I liked it with a little cream and salt, I really enjoy your channel. In such an isolated world, coming to your channel is like visiting with a friend. Thank you for taking time to share your joy and knowledge!
Made it in Korea with 10.5 % vinegar. Used 1/2 the amount called. Separated nicely. Cottage cheese is expensive here as well as hard cheese. Needed some for eggplant lasagna. Turned out great. Just tested my milk with my finger. Thanks for sharing this information. 🤗🤗
Hi Mary! I love your instructions - super clear and helpful. I wanted to share that I have also used white vinegar that I infused with orange peel. The citrus isn’t strong, but that little hint is just lovely and helps to hide any remaining vinegar flavor.
I've been watching several cottage cheese videos this afternoon, and yours wins hands down. I love all the extra explanations you give. Thanks so much for the information -- it really helps me to understand all the options available. Liked and subscribed!

I think that different distilled vinegar have more or less flavour. Usually I’ve been using Heinz. But I’ve been using Allen’s recently. There is a distinctive fruity flavour to it! It’s really lovely and also it seems sweeter tasting!
I have been getting very bad boating from store bought cottage cheese! I love it, so I am going to try this with high quality milk and see if i can tolerate it
Dear Mary, I’m so grateful, I made a delicious cottage cheese :) I did not wash it or add any cream. Just eaten with a pinch of salt and a bit of extra vergin olive oil. Your explanations are so clear, truly a treasure. In a couple of week I will also have your vinegar ready to taste ;-) . Thank you 🙏 🙏 🙏
Mary you are not only full of knowledge and explain everything in detail for the beginners but also very considered in giving different alternatives if one might not get hold of the same product. Thank you for your time, knowledge, carding and sharing. May you n your family be very blessed.
I used a thermometer and let it get to 120 but it turned out more like ricotta cheese. I think I like more of a vinegary taste to mine but it is good but I think it can be better. Thank you for teaching me something new to work on. :)
Hello Mary. I found you by accident and every time I see you videos it reminds me of my mom and her way of making home made food it’s just always a wonderful look back to my childhood. Thank you

This sweet lady keeps showing me how I have been basically bamboozled buying these easy to make things at home mass produced and highly priced in the stores. I will be rethinking how I spend my money and take a little time to do these things at home. I have a parent that has specialized diet needs such as no or low sodium and low carbs. These makes all these things so much more nutritious and they don't seem to take any time at all and nor are they labor intensive requiring all kinds of "strange" ingredients. I am convinced. Thank you, dear!
I have just discovered Mary's Nest and I'm so excited to find this recipe for cottage cheese. I have been making yogurt for some time because I hate buying all of the plastic containers. For that reason I have avoided cottage cheese for years. Now I have an option! Thanks, Mary.
This is a wonderful presentation. Thank you - I will try this with some yummy organic milk. I may try adding some homemade kefir instead of cream to the cottage cheese to give it a probiotic zing.
Love this! Watched this morning and just made a batch. Even got some organic milk at the store dated 2/11/2020 for half price. Just put it in the fridge for chill mode. But, I tasted it and even warm it’s amazing. Already made ricotta last weekend, also amazing. I am adding more things to my “ never buy again” list. Oh yeah, also picked up some tomato paste. Gotta make fermented ketchup.
Going to try this !! We have been buying regular cottage cheese . And having organic blueberries and fruit for breakfast for my husband lowfat high protein keto diet. 😋

Yes, you are exactly correct. All the stovetop cheeses are basically the same. I think with paneer you have to press it and then cut it into cubes, yes? Love, Mary
Fantastic! Everything so calmly, gently and stress free explained. Made me feel so confident that I will try this cheese without worrying when I make a mistake. Thank you!
fantastic video. your voice is so soothing and your instructions are so clear. i can’t wait to try this because i have not been able to find a single CLEAN cottage cheese in the stores. big thank you.
Thanks again Miss Mary. I just went to HEB to find some unpasteurized milk and the one I went to did not have it. The store also did not have any rennet tablets. Using your recipe, I can make cheese without all the extra stuff. I can hardly wait, but I must because I am making more soap tonight! Thanks a bunch!!
Wow!! Lala!! You are a busy gal!! Keep me posted on how your soap turns out. Yes, you can use pasteurized milk or ultra-pasteurized milk to make this stove top cottage cheese and you do not need rennet. Keep me posted on how it turns out!! Love, Mary
I LOVE cottage cheese. I will often have it for my lunch with some tomato and cucumber slices! I salt and pepper the combo to taste (yes cottage cheese can be salt and peppered) and enjoy a VERY tasty lunch. Thanks Mary. I'm doing this. Now I need to find some whey recipes.
Hey Chuck, Thanks for visiting! This really comes out great given there is no rennet used. Add some cream and salt to give it that grocery store cottage cheese feel. Love, Mary (PS - and I had to chuckle about the salt and pepper! My husband loves pepper on his cottage cheese!!)
Chuck you may even add chives and radishes to the cottage cheese and spread it on a buttered fresh baked bread, it is soo delicious. You may also add chives, radishes and a chopped up hard boiled egg. Try it :) I grew up on stuff like this and have lots of recipes.
Cottage cheese is a staple in my house! Grandparents raised me - grampa taught me to put some cottage cheese in half of a cantalope fresh from the garden or market in the heat of summer - and then sprinkle pepper over both! YUM YUM. Matter of fact I have a bowl beside me - I just ate some cottage cheese (store bought) and some canned peaches.
It is August 2024, and I just made my first cottage cheese, but I made some mistakes. I forgot I had my milk on low heat while I worked on my hydroponic garden in my garage. I then went with my husband to run an errand, when I remembered the milk was on the stove. I was glad my son was home to check on the milk and turn off the stove. When I returned home, I continued with the process and poured in 3/4 cup of vinegar, as you instructed. I waited for approximately 1-2 hours before straining the cheese. I let it strained an addition hour from the milk bag. After bottling all of the whey, I noticed some sediment at the bottom. Should I strain it again to remove the sediment or leave it? After tasting my cheese, I added some salt for taste, put it in a container and stored it in the refrigerator. Mary, you were absolutely correct, when you said the recipe is very forgiving of mistakes. The cottage cheese was perfect. It was moist with no vinegar taste at all. I loved it and will try more of your recipes. I also have your book in my Amazon cart to purchase. Thanks for all you do to assist those of us who value traditional home cooking.
When we lived in Ukraine, we bought cottage cheese from the farmer next door. It was pressed together so tightly, we could break it off into chunks and eat it. It was heavenly. I will try yours this week.
Hi Jean, I love cottage cheese with grape or cherry tomatoes cut in 1/2 and so does my grandson who won't touch a tomato to save his life unless I "hide" them in his cottage cheese. LOL
@@babygrandma8654 That makes sense. My family prefers it over ricotta cheese in lasagna. My son Daniel and I snack on cherry tomatoes as is. Lee doesn't like tomatoes texture so he'll only eat them when totally liquefied like in tomato sauce.

I just love your channel Mary! I've been binge watching since I found it. My favorite pansy apron is showing it's age, and I'd love to make some like yours. I'm about the same size as you, if that helps at all. Back to watching the cottage cheese video! 💖
Thanks for sharing this tutorial. And, I am so grateful you mentioned THM which we are trying to do. I especially appreciate your explanation of sweet vs acidic wheys.😍Bless you, friend.❤katie
In India, we usually use either a spoon of yoghurt or some lemon/lime juice to make cottage cheese at home. My favourite is lemon juice since it leaves a lovely lemony scent in the final cheese. I love saving the whey to add to dals or when cooking curries

Your voice is so calming and cheerful at the same time, and your explanation doesn’t feel like a lecture.
Exactly, I was thinking the same way. Her voice is like I am having a sweet dream.
Yes, I almost don’t even mind the American accent 😂
I'm a 56-year-old female bodybuilder. I have spent THOUSANDS of dollars on cottage cheese over my lifetime. With the inflationary prices of 2021, I will be trying this soon! I pay almost $4 for a gallon of milk and almost $4 for a 24 oz container of cottage cheese. When cottage cheese goes on sale, it's like a gift from the angels. LOL Thanks You So So Much Mary!
Taq
If you have a Costco near you, the price is great. I pay a little over $5 for 3 lbs. of Daisy cottage cheese.
And you eat mostly thickeners.
It’s 2024. Bet you’re definitely making things at home now. 🙃🫤I eat lots of cottage cheese, going to learn how to make!
where I live it's $4 for 8 oz
I am from Ukraine , and live in the US for over 30 years, I am used to live on natural, home made cottage cheese, and not like an American version, watery and salty, but cottage cheese that you can cut with a knife and dryer yet not salty and tastier... this is great video and I think it is close to what I am used to have way back when. Thank you kindly for posting it.
I want her as my grandma, I'll be coming to her house every other day so I can eat her delicious cooking 😋
I wish my grands came to my house still eating their favorite yummies! They have grown up and are whey to busy for this old lady!😥
In my 7th grade foods class, (60's) I was taught to make Pie Crust using 1/3 c milk plus 1 tsp vinegar. I love my pie crust & have never seen a recipe like it. Doesn't use ice water but its very flakey. That tang is the best part of my pie crust.
Hi Stephanie, would you share that recipe??
Yes! Share, please!
Thank you Mary for teaching us this simple method. I came home disappointed from the supermarket as I couldn’t find one brand of cottage cheese that didn’t have a list of unwanted ingredients. Now I will make my own and I’m so grateful I found your video.
Im curious, how much cheese did you get from a gallon of milk?
I just wanted to tell you how nice your voice is. I'm learning English and I struggle a lot with listening, but your voice is very nice and gentle 😊
I have to say that you are such an inspiration. I read my Bible and watch your videos. Thank you so much for your time and knowledge. God bless you.
I live in France I buy it in leclerc all the time 😊
@@Alice-nv7oo Really? I looked at Leclerc Gisors again last week and all they had was Skyr, which seems to have won out over Danone's cottage cheese in my region.
@@OKKerryYes im in the Dordogne I have Danone cottage chesse in my fridge 🤣

I was at the store earlier and thought that cottage cheese would be a nice snack on a hot day.
Ooh great idea
Homemade cottage cheese!! NO WHEY!! ;)

@@MarysNest you are so helpful.
I just made this, after watching your video. I only used 1/2 gallon of milk. It turned out so good. Thank you!!
how much vinegar did you use. i’d like to start out using a quart but could do what you did. just not sure abt amt of vinegar.
how much vinegar did you use?
How wonderful! My husband is on a salt-restricted diet and loves cottage cheese! Thank you, Mary!
I am so happy to find this recipe. I once read that making cottage cheese was very complicated in a factory so I never even thought about making it! I have some store-bought in the fridge that is 400 mg sodium in 1/2 cup which is ridiculous. Can’t wait to try this! Thank you for the video.
You are great in explaining how to do things and to tell what to use if we don't have the right kitchen tool.
It worked with A2 ultra-pasteurized milk too :)
Can't find any A2 cheese in my area, so I looked how to make cottage cheese... and it works :)
Thanks :)
At 75 years, you CAN still teach an old dog new tricks. You've made this bachelor very happy. Keep up the great work that you do and know that you are teaching at least one soul the pleasures of cooking!!!
I love your teaching, not rushed, you show products needed well and altogether suits me well. I love your programs. 👍
Thank you! ❤️🤗❤️
I liked it with a little cream and salt,
I really enjoy your channel. In such an isolated world, coming to your channel is like visiting with a friend. Thank you for taking time to share your joy and knowledge!
You are so right! Like visiting a friend.
Thanks for sharing your recipe how to make cottage cheese
Made it in Korea with 10.5 % vinegar. Used 1/2 the amount called. Separated nicely. Cottage cheese is expensive here as well as hard cheese. Needed some for eggplant lasagna.
Turned out great. Just tested my milk with my finger. Thanks for sharing this information. 🤗🤗
Hi Mary! I love your instructions - super clear and helpful. I wanted to share that I have also used white vinegar that I infused with orange peel. The citrus isn’t strong, but that little hint is just lovely and helps to hide any remaining vinegar flavor.
what a sweet lady, reminds me of my grandma, beautiful video, God bless!
I've been watching several cottage cheese videos this afternoon, and yours wins hands down. I love all the extra explanations you give. Thanks so much for the information -- it really helps me to understand all the options available. Liked and subscribed!

I just made it. First time ever making cheese. Came out like Rocota and that is just fine. Thank you for all your help.
I think that different distilled vinegar have more or less flavour. Usually I’ve been using Heinz. But I’ve been using Allen’s recently. There is a distinctive fruity flavour to it! It’s really lovely and also it seems sweeter tasting!
A tablespoon or two of apple cider vinegar sounds interesting
I have been getting very bad boating from store bought cottage cheese! I love it, so I am going to try this with high quality milk and see if i can tolerate it
Dear Mary, I’m so grateful, I made a delicious cottage cheese :) I did not wash it or add any cream. Just eaten with a pinch of salt and a bit of extra vergin olive oil. Your explanations are so clear, truly a treasure. In a couple of week I will also have your vinegar ready to taste ;-) . Thank you 🙏 🙏 🙏

Use room temp milk- brings up to simmer faster.😀 Love your channel Mary, I have learned so much from you♥️♥️♥️👍🏻
Thanks Mary you are a great teacher. Your words are very clear and helpful ❤👌🏾
There are no words to describe the mess I made trying to pour my curds and whey into the colander. As usual, Mary makes it look so easy!! 🥰
😂 I understand, believe me!
Your tutorials are so detailed specific and clear to understand. Thank you for sharing your expertise.

wow your a cheese guru. I loved how you took the time to explain everything. thank you so much.
Dear Mary, Thank you very much for the wonderful cheese recipes, you are very knowledgeable and kind to provide so much extra information while making one recipe. For people like me on a tighter schedule, I wish you may keep the two things seperate, make the cheese demo fast then the info sharing as second half of the video. Once again thanking you and commenting this just because time is limited and wish to benefit more from your kindness.

I’ve gone 30 years not you could make it from home and not knowing it was this EASY! Lol! It turned out so delicious! I don’t think I’ll buy the grocery store cottage cheese as much anymore. Thank you for sharing! ❤️
When I lived in Morocco I often made cottage cheese and ricotta cheese. :-)
I love the way you explained! You’re so kind! Thanks for sharing ! Here in my country ( Brazil ) this kind of cheese is sooo expensive, this video is gonna help me out a lot!!! Thank you!! Sending love and light!
You are so welcome!❤️🤗❤️

Wow, so much knowledge and clear explanation. Brilliant. Thanks so much.
I've made paneer the process is basicly the same. Who knew. I'm going to try it as I love cottage cheese.
Yes, you are exactly correct. All the stovetop cheeses are basically the same. I think with paneer you have to press it and then cut it into cubes, yes? Love, Mary
Exactly.
Mary, Thank you much for the detailed DEMO.
Love, Mary
Ah, HEB how I miss it now in the Pacific Northwest 😔
Thank you for the delight of visiting you in your kitchen. Your warmth and joy is contagious. Thanks for the valuable lesson. God bless you too.
Grace Gniazdowska yep
Cottage cheese is a staple in my house! Grandparents raised me - grampa taught me to put some cottage cheese in half of a cantalope fresh from the garden or market in the heat of summer - and then sprinkle pepper over both! YUM YUM. Matter of fact I have a bowl beside me - I just ate some cottage cheese (store bought) and some canned peaches.
@@graceg1971 yes! I like radishes in it as well! I had totally forgotten!
You are a wealth of invaluable information! Priceless you are Miss Mary!
Thanks for sharing. Lee loves it on his salads. I love it with pineapple like my father did.
Hi Jean, Me too - I love it with pineapple. Love, Mary
I am appreciating your helpful vids so much. Thank you for so kindly sharing the extreme wealth of information you offer to us. You are such a wonderful teacher and articulate speaker, which I love. be well. bye now

@@MarysNest Great ideal, let us know when you make it.....:)
In India, we usually use either a spoon of yoghurt or some lemon/lime juice to make cottage cheese at home. My favourite is lemon juice since it leaves a lovely lemony scent in the final cheese.
I love saving the whey to add to dals or when cooking curries
