So I cooked this a few days ago and it was so delicious. I made a mistake when I used palm oil & added crayfish but it still came out tasty. I’m making this same exact recipe tonight with pounded yam... 😋😋
I use fresh tomatoes with fresh garlic and ginger and blend them together. I marinated the chicken for an hour and I don't fry the chicken. It's a lot healthier and more flavorful. You can add veggies such as okra, mushrooms and egg plants ;)

Finally someone who fries there chicken before stewing like Me ... Don't listen to them. ... The oil give it the flavor ,..... I usually fry the meat with the seasoning and onions on a low heat to make the onions caremelized

The oil is everything. I get why a lot of folks are bothered by the quantity. But they stew is all about the oil. It’s not the same without that much oil. It’s fried stew. Eat in moderation , if it bothers you. Or use extra virgin olive oil or any other healthy version. But you must use the oil!🤣
