Now I understand what you mean by "Hard Chicken", its what a lot of the world calls a "fowl" ie, a chicken that was kept to lay eggs for many years, as opposed to a chicken raised in a very short time for meat only.
But the hard chicken in Kenya we call them kienyeji meaning a hen that is a tradition chicken with no substance that makes them to grow up fast. the traditional hen takes months for it to be eaten. Coz it grows slowly.
I’ve been going on a “food journey”, I have tried more traditional Mediterranean, Chinese, Korean, Japanese, and Mexican. I think I’m going to try my hand at West African food for the first time with this dish!!
I just made this tonight and words can't do it justice. It is the most wonderful combination of flavors that I have tried in a while. Thank you for bringing this into my recipe book!
I have some dear friends from Camaroon who invited me and a friend to dinner and name something similar. This brings back those precious memories. I'll have to try this.
A friend of mine married a man from Burkina Faso and at their wedding I had the most amazing dish with tomato and chicken. No one could remember what it was. I’m going to try this, I really hope this is it or similar!
My friend is from Sierra Leone and makes hers almost exactly Like this she just adds bell peppers and bay leaves and then serves it over jollof rice! So excited to try your recipe!
I made this recipe today and my family loved it. This is one of the best stew recipes I have ever made. Really appreciate the clear step by step instructions in the video.
WOW. We just made this dish tonight and words cannot express how flavorful this dish is. We will be making this dish every week from now on! We score this a 20 out of 10. Thank you!!!!!!
Even from here, at the other side of the ocean, I can tell your chicken smells like heaven. And, by the way, basil in Spanish is albahaca. Hoping you didn't burn your hands with the spills at min. 12:06 Cheers from Chile.
@@PreciousKitchen , it turned out ok and was quite tasty. The sauce was not as thick as in your video, but I’ll do better next time ! Thank you very much and Happy New Year.
I made this tonight. My husband is Ivorian and misses home. I’ma good cook but African food…I can hear my mother in law sticking her teeth at me from the continent. My husband enjoyed it. More importantly, I enjoyed it! Thank you for sharing! I think next week I’ll try okra soup.
I'm a student in the university and I was looking to go a little extra on cooking and this came out super tasty. Literally better than any form of stew I've made. Thank you Ma'am Precious

Cameroon 🇨🇲 to the world 🎉😊. I've never been more proud to be a Cameroonian🤧. Thank you for this recipe. Been following and watching you for some time now. As a woman I'm not proud to say I really don't like cooking as much as I like cleaning. But you give me so much confidence to just cook whatever, whenever😊. Can't wait to really intensify my coming journey with you☺️, it'll be epic😅. Ar die for here😅😂 Thank you Ma❤😊.
Sis, thank you for sharing this recipe with us! I thoroughly washed and cleaned my chicken legs and let them marinate over night. I can't wait until I finish cooking this stew! Also, keep washing and cleaning your chicken & meats. If you know how to clean your surfaces after handling...there is no need to worry about salmonella. We and those before us have cleaned hundreds of pounds of meat and have NEVER gotten food poisoning.
I made this following your every direction, and when I tell you it was so FLAVORFUL!! and delicious I'm doing it this way forever. I've fixed African stew before but never was it soooo FLAVORFUL 👍🏽 thank you for sharing 🙂
I made this today. It was delicious! I definatly added way too much water to my chicken though and had too much broth. I wasn't about to dump it though. I had a lot of sauce which is where all the flavor was so extra sauce for me! Thank you!!
Watching from Jamaica.i will try this i will use soft chicken..we hardly used this chicken in Jamaica to cook here in ja we call it common fowl.. Thanks much loving the recipe.
Made this tonite and turned out great, I added a teaspoon of sugar to balance out the acid from the tomatoes. Will add this recipe to my stable recipes
I just made this for my very fussy and difficult Tunisian mother and she absolutely loved it. I was skeptical about the skin on tomato but really great flavour. Thanks
You know what Precious?..... I've been eyeing on this for ages and now it's finally here. I need to surprise my wife and maybe one day I'll let you know how it went 😊😊. You're just incredible and a lovely woman, take care and be safe.
Tried it today, really good! The sauce turned out fairly thin because I used regular chicken (because I could not find hen in the store I was at); and the chicken was already falling apart quite early so I didn't have time to reduce it as much. (Also I'm impatient)

I had a neighbour from Cameroon, and her chicken stew always smelled EPIC. That caramelized tomato smell... Now I know how she did it! Thanks!
You are so welcome, Danie! Hope you enjoy this recipe!

Thanks for the explanation because I was wondering lol
Thank you for explaining, Ross!

in UK we call them 'stewing hens' since the meat is tough they are best stewed or braised
Stewing chicken here in Southern USA, as well.
❤️🍀
This lady deserves a time slot on the Food Network channel. I would eat this dish. Thank you for sharing. I enjoyed watching.
