So I always make enough to last us for a good part of the year so that we will look forward to eating our Hot Pot after the base is all eaten up. Today I made a noodle sauce with your base! I put in some more black bean paste, a little sugar and soy sauce. Sautéed some onions, minced beef, chives, lots of mushrooms and fresh tomatoes. Soo good! Thank you for your helpful videos. I made this soup base today. Luckily, I live close to a huge Asian market so every ingredient was available. OMG this was fantastic!! Absolutely perfect. I don't have the table top burner and I eat alone so I make everything on the stove then sit to eat like a soup. It was perfect, thank you!!

Sadly, there are very few Chinese or Asian restaurants where I live, so I decided I wanted to try making it myself. Recently I found Sichuan peppercorns for sale and decided to try making it, but all the recipes I found told me to use a pre-packaged soup base, which I don't have access to. So glad to see your video, with very clear and easy-to-follow instructions. You gained a subscriber!

It comes in handy for me as my family recently likes Mala Hotpot and we have been eating it for the past one month. :) We are using those pre-packed hotpot Chilli paste imported from China (I'm from Singapore) and I have reservations using them often. I believe there's some added preservatives and the oil used is not so ideal. There's also some synthetic taste to it. I actually fry the pre-packed paste in olive oil before putting it into the soup. Now with your recipe, I can make my own spicy hot pot soup base. yippee! 😁One suggestion as to how you can freeze them. Just scoop the amount you need for one hotpot serving and wrap it up with cling wrap before putting them into individual Ziplock bags. That's how I freeze my homemade curry paste for future use.

I took my temperature before and after eating a soup with homemade chili oil in it (I had a hunch), it rose almost 2 full degrees, but that's some of the best soup I've ever had.

NOW we have some serious spice! I love hot spicy food and this may be the base for many recipes that need an extra kick! I am looking forward to making this. Note: The chilies you called Face Heaven Chilies are known mostly as Thai Chilies. I have them growing on my porch right now. Those are the more mild ones that I use. When I can get them I also use Trinidad Scorpion peppers and Carolina Reaper peppers. It takes spicy food to a completely new level! Thanks again for a great video.

I used to live in Chongqing. This looks legit as hell. The fact that she is using lard is indicative of a good, authentic recipe. Plan on making this for some friends so they can try out some real CQ hotpot.

Hi, sorry for the late reply. Thank you for watching and trying the recipe. It sounds very nice. the full stuff version: besides the spices that I used in the video, you will need more stuff. Tian jiu [甜酒]: Chinese sweet rice wine. Chenpi [陈皮]: dried orange peel Lemongrass [香茅草] Some spices that I don't know the English name: cao guo [草果]. shan nai [山奈], sha ren [砂仁]

Hi Mandy First off finding licorice root is easy to find at any Whole Foods or any health food store as well as any Asian market. Second you should have a wish list on Amazon maybe some would buy you a new blender. And lastly I would put the portions of chili paste in separate bags so its not so messy. Watching you reminds me of the Korean cook Maangchi on TH-cam. I don't see any reason you cant achieve the same success she has achieved. I made a big batch of this several months ago. We've been eating "Hot Pot" soup almost every week with this base. I'm about to make more. I have to sub white cardamom pods for black. What change does that make? I also used Cao Pian for Gan Cao what is the difference in that flavor? Is it the same thing? I’m lucky enough to live in a part of Australia (an hour away from Sydney) where I can get most of these ingredients. Not sure if I can get the facing heaven chilies but if not, I am sure there are other alternatives. I’m craving to make this at home, I love Chongqing hot pot!

Thank you for the recipe!!! Try using the silicon molds to freeze the base so you don’t have to worry about waiting for the partial freeze.

Mandy if you pour base in to small muffin pan first then freeze it it is easier to transfer into plastic bags

looks interesting - I doubt if it would spoil quickly, even at room temp. but, the freezer idea is probably better.
