Coffee Sponge Cake

All Purpose flour. 1 Cup ( 125g )
Egg 4 separated
Milk 1/4 Cup (Warm) (60g )
Sugar 1/2 Cup (100g)
Instant Coffee. 1 tbsp
Oil 1/4 Cup ( 60g )
Vanilla Essence. 1 tsp
Baking Powder 1/4 tsp (optional)
Now thats a perfect coffee cake...!!!🦋
I made this cake (coffee) with a frosting topping and now doing another batch with vanilla flavor - that I will cut into two parts to fill in with strawberry jam. I wanted a simple easy and quick recipe, so thank you for doing that. I did not taste it yet but so far it is looking good ! (baking now)

I just made this to incorporate into a Dacquois. I didn't have 6" pans, so *I used 2 - 8"* and thought I'd just cut the baking time in half. Unfortunately, *it was over done (30 min.) ~Anyway, I just thought I'd let others know in case they're thinking of doing the same as I did*
I should've listened to my 'inner baker' lol - and take it out about 22-24 min, when it was nice and puffy. (mine sunk😔) It's still a nice easy recipe and it'll be hidden between layers of meringue, crème pâtissière & buttercream. 😊

Yummy cake and easy recipe. Only my cake baked in 30 minutes 😮. I used a convection oven with the bottom rod on. Any idea why it baked so soon? Nevertheless, I'm planning to make a coffee buttercream frosting for it.😍

what happens if i dont whip my egg whites till a soft peak is achieved? my egg white consistency was thick but it didnt hold itself. Does that affect the taste or texture of the cake?

Yes you can make cupcakes with this recipe @180c . Temperature can vary depending upon the size of the cups from 12 to 20 minutes

you can do that without oven but the time depends on the heat and the size of the pan. you can eyeball it after 30 minutes or so

This recipe is disgusting my cake was also flat😔
The trick is in mixing . Don’t overmix and deflate the egg whites. Gently fold in the batter . The rice is from the air trapped in the whites . So careful not to over mix . Please follow the method in the video

You can skip baking soda.. then you should be very careful while mixing the egg whites ..you should not deflate the meringue..

you can place a pan of hot water under or beside the pan.. this will help to keep the cake moist and prevent cracking..

If you drop even a bit of egg yolk , it won’t work.only egg white

This has one point when egg white is blending couldn't have this creamy because mixing with sugar. This seems you didnt add sugar for egg white to be creamy. I think egg white must be purely blend to be like cream.
egg whites can be whipped with or without sugar to be creamy .. i have added sugar while whipping. Adding will make the meringue more stable
I just baked it and it still not cooked from the inside why is that?! I did let in the oven for 1 hour as in the recipe

@@antarasdelicacy5438 baking time depends on the depth of the batter ..in a 9 inch pan you cant have as much height as the 6 inch .. add 5or 10 minutes and keep a watch afterwards and do a skewer test to see the doneness
The oven temp and timing i think its too long . I make today my cake burned
I kept it for 30 min in the oven
I used a 6 inch cake pan and the batter went all the way to the tippy top. It spilled over the tin as it baked. Next time, I think I'll use an 8 inch pan. You live and learn.

1. How long do you pre-heat the oven at 180 degrees Celsius for?
2. The printed recipe steps mentions using a 7 inch lined baking pan, but the tips mention using a 6 inch baking pan. Would there be any change in quantities of the ingredients depending on the size of the baking pan? Could you please clarify.

You can preheat the oven 10 minutes prior to baking or you can switch it on when you start mixing the batter.
You can use either a 6 inch or 7 inch pan . Both works well for this recipe. The cake will be taller for a smaller dia pan .

i tried beating the egg with an electric hand mixer for around 40 minutes but it looked like nothing but soapy water. still finished the batter, was very liquidy. just popped it in the oven and i’ll see the results. don’t know where i went wrong 🥲
