I tried this cake without water bath style and directly baked on oven at 170 degrees, about 45 minutes. It came out just as wonderfully. Very soft and was easy to make. Instructions were very clear. It's not too sweet nor too bland, just right amount of sweetness. I love it! Will definitely use this recipe again. Thank you for sharing!

Just made it and using instant espresso powder!! I converted the Celsius to Fahrenheit, 140 C is 284 F. I wasn’t able to set to exactly 284 degrees, baked at 300 degrees with water bath, still came out very nice. It’s moist, light texture with a little bounce, a good coffee flavor, just right amount of sweetness, perfection!! Tku!! 👏😃

I get it. I always wondered how to get the texture so soft. You whip the egg whites to get air bubbles, then mix the whites in the main batter. But then you pour slowly into the pan to release the LARGE air bubbles. The final trick? Take a long tooth pick to get rid of the remaining large buubles. Now I know. Thanks.
