I have never been a good cook. That meant that my 10 year old son had to learn how to cook If he wanted to ever eat good food. I remember the 1st time he made meat loaf. I never much cared for meat loaf, so I wasn't looking forward to it when I came home from work. What a shock!! It was, and still is, the best meatloaf I ever ate! He used Stovetop Stuffing instead of bread crumbs. It had a firmer consistency than most I had ever tasted. He also put cheese in the middle and the same topping you did on yours, only he used less on top of his, and He served it with a small bowl of that topping, so you could add what you wanted. It was soo yummy! He is 36 years old now, and still a great cook.

Paula, thank you so much for the tip about using bread in the bottom of the pan to soak up the grease! I was never taught to cook in my childhood and in my adulthood I prefer not to use recipes. I watch a couple of TH-cam videos when I want to make a specific dish and I take a little bit from one in the other until I make it my own. I had never made meatloaf in my life before the last time I saw this video and I could not believe how well that bread in the bottom thing worked not a speck of grease! And right now, I have my second ever meatloaf using the same trick. I didn't use the oats but used a combination of Panko and Italian bread crumbs instead.
Oh Paula, this brought back some really happy memories for me. We used to always say my mother's meatloaf was legendary. She would make it with ketchup on the top. The big difference is she would put it in a 9 x 13 pan in the middle and all around it she would put those little small canned potatoes and then pour some of the tomato sauce over them as well. As the meatloaf cooked and the juices came out they soaked in to the potatoes, making them amazingly flavorful and delicious! Haven't made it in a while. I really need to do that! Mom may be gone, but I make many of her recipes still. ❤
Usually when I asked my husband what he'd like for dinner, he won't say, but lately he has been asking for meatloaf. We always use the recipe off the Quaker Oats box which is very similar to this (you use more onion & some peppers)--I always use the tomato sauce instead of tomato juice because it's just the right size. My favorite part is the sweet ketchup topping. I got some 80/20 ground beef today and he's going to get his meatloaf!
My mom’s recipe used crushed up Ritz crackers instead of bread or oatmeal as a binder. It works great and adds flavor. I also use a touch of Worchestershire sauce
Hi, I learned from grandma to use Ritz instead, also Worcestershire sauce, ketchup and brown sugar topping. And line pan with double layer parchment for easy removal.

I'm making meatloaf for tomorrow's dinner. I don't use green pepper because it upsets my tummy. I'm using 2lbs of ground beef and 1lb of ground pork. I might try your oatmeal idea. I usually use bread crumbs. My husband can't stand ketchup or mustard so I'll just pour some brown gravy over it. I love the idea of putting the bread in the pan. I wish I had seen that years ago. I've since bought a special loaf pan for meatloaf. The pan has holes for drainage and it sits inside another pan to catch the drippings.
My aunt used bread in the bottom of her pan. None of us ever used a loaf pan but you can still use the bread. I use 2 pounds of 80/20 ground beef and Johnsonvill breakfast sausage in the 1 pound package. It's already got some seasoning with pepper and salt and other spices. I use bread crumbs and on-two eggs depending on size on hand (I usually have jumbo so one will do). Then whatever else I have on hand. prior to getting the ingredients together I fry up abut 6 strips of thick sliced bacon, then chop it up after draining on paper towel. After mixing my meatloaf, I make a "ditch" down the middle of my football shaped meatloaf and put the chopped bacon in the ditch and then squeeze the top of the meatloaf over the bacon. You can top the meatloaf any way you want. I put in oven at 325 about 1 1/2 hours. after all it is at least 3 pounds. Sometimes I put potatoes around with celery and carrots or onions. I prefer the bulk carrots to cut myself. Love the "reruns" as my hubs calls leftovers through the week. One morning it sounded so good I heated a slice up and had fried eggs on the side. After all it did have sausage and bacon in it so why not.
Paula - when it came to meatloaf, a staple in our home growing up, my grandmother Adams said it best: don’t mess with meatloaf. Meaning, she kept it simple and didn’t experiment with different ingredients. Her recipe is pretty much the same as this one except she used tiny pieces of leftover bread for the tightener (Depression Era people never threw anything away!).
Hubby and I feel like we’ve.been on house arrest since last March! So I’ve been cooking up a storm and it’s your fault! I do need a reliable meatloaf recipe as I’ve never ever been able to duplicate my mom or dads recipe! Thank you Paula and hubby thanks you too! Your bread on the bottom is a fabulous idea!
Yes we're all quarantined for public health. I wouldn't trivialize "house arrest" given we are very punitive society and have ruined many people's lives by thinking punishment, rather then rehabilitation, solves problem (we're 5% of world population; 25% of prison population). Fortunately we will come out of covid quarantine without a prison record to follow. I think of it as we have to isolate for common good. But I hope it ends soon, we're social beings, being isolated is horrible.

I have been out enjoying myself pretty much everyday since April! Get out and enjoy do what precautions you feel need to do to stay safe. You certainly do not need to be locked up inside home. Get that Vitamin D from the Sun. Most people that have died from COVID have a lack of Vitamin D.
Hi Paula! I am in Louisville, KY and tomorrow is Derby weekend. I wore myself out cooking today....derby pies, country ham and biscuits, cucumber sandwiches, ham salad sandwiches, shrimp salad, veggie platters, etc. Now I am in bed relaxing with your videos. Such a nice way to unwind.
I hung clothes, then it rained so I brought them, hung them on a rack and turned on the fan. Maybe they will be ready for tomorrow. So, I decided to make a bigger "baby" blanket for my g-g-grandbaby. Her mama died of a blood clot in her lung when the baby was 10 months old. She is now 16 months old. I just love pampering her. My grandson is doing a great job taking care of her. My daughter watches her after she gets off of work and then her daddy goes to work. Thanks for giving me something to watch while I am crocheting. Thanks for sharing. Have a Blessed Day.
Just been working and hanging out with my hubby. The differences in our meatloaf recipe starts with the fact that we grind our own meat, so we control which meat is used and how much fat (personal favorite is chuck with bacon ground together). We also cook the veggies (especially the onions since even slightly raw onions upset hubby’s stomach). The last difference is the topping/glaze. My husband grew up eating meatloaf topped with thick beef gravy, which is actually quite tasty.
I'm an old English man living in South West France. I love the local food, my favourite dishes being based on things the hard working farmers have been eating for centuries. If you substitute barbeque sauce for the tomato sauce in the meatloaf it has so much better flavor. I use about 1/2 cup for a 2lb meatloaf. Instead of chopped onions, I use the Durkee fried onions crumbed into small pieces. Then you can top the meatloaf with the barbeque sauce too. My husband hates meatloaf and he loves this recipe.
Paula, I use celery, onion, garlic, sauteed together to get the water out of the veggies, and salt, black or white pepper and a little dried rosemary, tyme and parsley. I cut up bread and soak in 1/2 cup milk. 2 slices. Then after mixing in 1/2 cup tomato ketchup, spices, 2 eggs and hamburger I form in a loaf and put it in my special loaf pan which drains off grease and put your topping on, except that I add teasp of Worcestershire. Bake as usual. It's good, my husband loves it! Freezes well too!! Never heard of putting bread in the bottom of the pan. Do just pull it off when the meatloaf is cool?
Hi Paula, my meatloaf is a bit different from yours. I’ve been making it this way for ages and even people who don’t normally like meatloaf like mine. I do make the exact same topping though. 👍🏻👍🏻 What I do is buy the meatloaf mix at the grocery store, which is beef, pork, and veal ground together. The packages are usually about a pound and a third. To that I’ll add a beaten egg, half an envelope of onion soup mix, a few good glugs of Worcestershire sauce, a half cup milk, and a half cup dried breadcrumbs. I beat the egg into the milk and then add the soup mix and the Worcestershire to that so it’s all combined before I mix it into the meat. I pour the milk/egg mixture into the meat, squish it together, and then add the bread crumbs. I form it into a loaf in the center of a sheet pan and add the topping on all sides, which like yours is a few tablespoons of ketchup, mustard, and brown sugar mixed together. I bake for an hour at 350.
I have made this Paula Deen Basic Meatloaf many times. It is always perfect and everyone loves it! Going to make it for my mom on Saturday. Thank you, Paula!
Ms. Deen, thank you and aunt Peggy for the video and recipe. I made my mom's meatloaf tonite after being down with the flu the last week. After losing 11.5 lbs in a week I needed something wholesome. My mom and your aunt Peggy must have shared that recipe because it is the same. Tonight I used ketchup on top. The lean ground chuck produced almost no fat run off and so succulent meatloaf. Two differences, I put about 2 tbls of Worcester sauce and used italian bread crumbs inside instead of on the bottom. I like the bread on bottom idea. All other ingredients I used tonight were the same as yours. After a week of barely no food, this fed my soul. Thank you for the video.

I never used dried oats before, its usually the bread crumbs, but I tried it and it was Great! And the Bread on the bottom, great idea!! Didn't do the green peppers though due to I just never liked them, they taste okay, I usually skim out the chunks when making my pasta sauce, because its just the chunks I detest for some reason.. I love a simple recipe like this Paula but at 84 I am still learning. I found it really works to mix all your ingredients first in a separate bowl and then add to your meat, less handling.
I always cook my onion, peppers, garlic, and choped fine carrots to make meat loaf. That way u add a vegetable that no one knows is in it. Rest of recipe is the same

Here’s what I’ve been doing: binge watching your videos and revisiting my love for cooking! Cooking for one is tough so I’ve gotten out of the habit of making a regular meal. Somehow tho I managed to put on Covid weight ha! I’m also a card maker so when I can I make cards to sell as well as donate to nursing homes and my church card ministry. How is aunt Peggy doing? Did she go back to Albany? I miss seeing her in your guest house videos!! Love to all of you!!
I caramelize my onions quickly by sautéing them with a cover and deglaze with water to scrape up all the yummy brown bits when it starts to stick to the bottom. At the end I add some sliced button mushrooms bc they soak up all the juices in the pan, and this sounds weird but if u add 3 or 4 chopped anchovies at the very end w a splash of Worcester sauce, it adds a really nice meatiness to it. Even people who say they hate anchovies love my meatloaf!
Did that in addition to my normal way that my mom taught me. But sodium. So I barely do it. But I habe plenty of times. I add other stuff that I can't mention cause it's a secret and that already has sodium so I don't use the lipton anymore.
So this is in the oven for the next hour. I have made it many times and it has to be one of the best and easiest Meatloaf recipes. Today I'm doing the bread on the bottom of the loaf pan. I have always slipped that step but not today. Love your cooking. Nothing better than good ole southern home cooking.
My mother always covered the top of her meat loaf with slices of bacon instead of tomatoes if any kind. Loved it. Plus she always sautéed her shopped onions, carrots, etc in butter prior to adding to meat.
I don’t use a recipe for my meatloaf either- but my boys love it.I use ground round, egg, 1 envelope onion soup mix, diced bell pepper, grated Parmesan, Italian breadcrumbs, ketchup, salt and pepper, and a tiny bit of mustard. I top mine with a mix of ketchup and brown sugar- no mustard. It usually takes an hour on 350 degrees. I’m making some for supper tonight, with baked potatoes and a salad.
Hi Ms. Paula, My meatloaf is very similar to yours except I partially sauté my veggies first and I also found for my taste all oatmeal was to gummy. I use half oatmeal half saltine crackers.. & I do not add the diced tomatoes to the meatloaf I use a couple tablespoons of good quality ketchup or Heinz chili sauce and mix in,. My topping is the same as yours in addition to yellow mustard I use a little grey poupon, onion powder and mustard powder. I place my onions carrots and potatoes around the meatloaf and that sauce from the meatloaf flavors the veggies perfectly. I have found the veggies need to be cut fairly small or precooked to be done at the same time as the meatloaf.. It’s a cold dreary day here in Pennsylvania and I’m baking sourdough bread. It’s been my hobby since Christmas.
Looks so good… I make mine with ground chuck, Meatloaf Fixin’s…by Hunt’s, old fashioned oats, onions..s Alf and pepper…NO EGG. I bake it in a long cake pan, surrounded by carrots, onions and potatoes red ones… I put BBQ sauce on top. The veggies get a wonderful glaze on them. This was, one of my husband’s fav meals…of course he loved meatloaf sandwiches,,, Yum.
We always have used the Quaker Oats “prize winning meatloaf “ recipe that was on the oatmeal carton. It’s pretty much the same as what you did except I add a couple shots of Worcestershire sauce. I use Lawrys seasoned salt instead of regular salt, I don’t put green peppers in it just onion. Then I top mine with 2-3 strips of bacon. Thanks for sharing your recipes with us! I have really enjoyed watching!
I grew up with meatloaf made with brown mushroom gravy sauce. Never had it with tomatoes or green peppers. My recipe is finely diced onion, mushrooms, garlic, yellow or red bell pepper sautéed in butter, then mixed in with ground beef, egg, Italian bread crumbs, fresh parsley, salt & pepper, smoked paprika, ground mustard, a splash of soy sauce & some shredded cheese. Bake. On the stove top make a gravy with sliced mushrooms sautéed, flour, beef broth, splash of Worcesteshire sauce & Italian seasoning. Spoon gravy over baked slices of meatloaf & mashed potatoes.
I use breadcrumbs instead of oatmeal, and ketchup instead of tomato sauce. I also add a little brown sugar. Every thing else is the same as yours. soooo good!
Good Sunday morning Ms Paula and friends!👋🏽 Over the years, I've made meatloaf various ways. However, I've never used nor have I ever heard of using oatmeal in meatloaf. I've used either crackers, bread crumbs or actual broken up bread soaked in a little milk. The seasoning combination that my family and I seem to like best is the McCormick meatloaf seasoning pack. I use onion, bell pepper and egg. Sometimes I've used tomato sauce, ketchup, ketchup mixed with bbq sauce, or even spaghetti sauce or marinara sauce. I prefer using spaghetti sauce, a little in the meatloaf mixture and on top. Either way, my meatloaf has always been💣!!! 😁
I never put peppers in mine I don't like them cooked just raw. I will add some brown sugar a can of vegetable soup some parmesan cheese with some of the ingredients you've used and toped with some tomato paste or crushed tomatoes. It's amazing what you can add to meatloaf to make it your own. When I was younger and just started cooking I would do a basic one crackers, onions, egg, bbq sauce and cup of frozen mix veggies. I liked your idea with the bread on the bottom. I'll use it next time I cook one.💕
Hi I love your videos. I have every one of your cookbooks and use them a lot. Its nice to see your videos to see the way you prepare it instead of just in print. An extra benefit to your delicious recipes my family and I enjoy..And best part is you are so sweet and welcoming and your expertise in the kitchen amazes me. As far as meatloaf recipes our family going back to my Grandma has always used bread soaked in milk..we are Italian. I agree that the bread is a really good idea…..although I recently bought a meatloaf pan that is two parts-the top pan has holes in it so the fat drains into the bottom pan. I have made this several times. It is good I only change I use bbq sauce instead of ketchup. I find it does not hold as slices. I do not bake in jelly roll. When she did it on her show she baked in a 9x13. I could be using too much tomatoes because I used the 14oz can. But it is good. I make it because it uses oatmeal which I always have instead of bread which I don’t always have.

I'm a 60 yr. old man that loves to cook for me & my wife ! However ,,, I sauté my yellow onions , I do use oat meal , 2 teaspoons of liquid smoke, 1 egg, I leave the peppers out cause my wife don't care for em. Sparingly on the salt because she has High Blood pressure , but double the black pepper , we use our own canned tomatoes, but for the Topping I use Heinz " Moonshine & Honey bar-B-que sauce ! It a make ya Tongue Slap your Brains out ! I Usually Sauté some asparagus or bacon fry some green beans & fix some soupy potatoes ! Lord have mercy , say my name ! lol
I use same ingredients for meatloaf, but no tomato and I use beef bullion instead of salt, bread crumbs instead of oats and I add garlic and fine chopped portabella mushrooms. vegetables are minced and sautéed until soft before adding. I don't put the ketchup topping on, but I cook it and serve it on the side. I cook mine on a rack until the top and sides have a nice brown crust. I then remove the meatloaf and let it stand, covered. I scrap all the drippings into a sauce pan and make gravy, by adding 2 tablespoons of flour and whisking. once the flour has cooked, I add 1 cup of beef broth and a sprinkle of pepper. Taste test for salt, pepper and garlic. you can also finely cut up more mushrooms and onions and cook before adding the flour. Ready 2 ways, with the gravy or the ketchup sauce.
Mmm mmmm I just kove meatloaf. I dont think theres a person who doesn't like meat loaf.... I love to put red yellow or orange peppers in mine as well as some mushrooms finely chopped and also i love to use veg or original breton crackers it just add to it so much. I bought the Dean Family cookbook while visiting your restaurant in Savannah in 2012 and have been making Aunt Peggy's meatloaf since!! I can't use peppers because they give me heartburn but I absolutely love this recipe it's the only one I use! I never used the bread because I don't think it was written in the recipe but I might give it a try next time! 😋

Paula, I make my meatloaf similar to yours but I form mine into nice big patties an inch to an inch and a half thick like a hamburger and then wrap a strip of bacon around them and secure them with a tooth pick. For my topping I use ketchup and Sweet Baby Rays BBQ sauce in equal portion I reserve half the sauce and set to the side to use at the table; I use the other half to baste the top of the patties with. I cook these on a sheet tray with a wire rack to remove the grease. I hope you try this one some time its great my family love it! Love you Paula!
I’m a lucky lady I married a super picky eater and had picker eater children. The ONLY meatloaf my family will eat is the one I came up with years ago they request for it often . meatloaf: ground beef garlic powder onion powder saltine crackers your favorite jar salsa glaze : ketchup bbq sauce my husband and kids hate onion,green peppers but, they’ll eat jar salsa 🤷♀️🤦♀️
I am making this for dinner tonight. I made a few changes because my husband eats Keto so I put parmesan in place of the oats. I used sugar free bbq sauce and an alternative brown sugar (Sukrin Gold) with Dijon mustard for the topping!
Hi Paula😊 I tried this meatloaf recipe way back when you had your first show many many years ago. I always made two of them at a time because of two teenage boys. The first time I made it both meatloafs got devoured. From that moment on I have used your recipe. Now when the boys come for supper your meatloaf is always requested.
What happens with your egg allergy? I found out a couple yrs ago I was allergic to eggs. Now I know why I get a headache within a minute or so after consuming them.
I use oatmeal as well Ms Paula, however I throw in a can of rotel for my plain meatloaf. My Italian meat loaf i use basil, oregano, thyme, with marinara sauce as my binder and top of with cheeses.
Meatloaf is an all-time favorite! But when I was working and preparing lunches in advance, I actually burned myself out on meatloaf. But I'm finally able to eat it again. Growing up we put bell pepper and onion in the meat mixture along with oatmeal, egg, salt, pepper and worcestershire sauce. We put part of the 8 oz can of tomato sauce in the mixture, reserving a small amount for the top. This was always good with mashed potatoes and green beans or other green vegetables. But the leftover meatloaf was never eaten as a full meal again, like when it was just baked. I think the best part was making meatloaf sandwiches with mayonnaise and ketchup. In fact, I think we enjoyed the sandwiches more. Through the years I've added different things to meatloaf for different variations, I even put boiled eggs in the middle for a surprise when cutting into it. Meatloaf doesn't have to be fancy because the best end result is the sandwich. Well a week ago we were buried in snow and today it was in the 70's. That's Texas for you. 🤠 We've been cooped up for so long but today my sister and I went out for a hamburger. 🍔 Not just any hamburger but the kind of burger that you crave. And we had been craving it since the snow last week. And this wasn't from a chain restaurant, it's a family owned place that puts a lot of effort in what they make. It's a big juicy burger served with fries. My sister and I go together because neither of us can eat a whole one. We also walked over to a local bakery and got a cinnamon roll and whoopie pie. I love living in a small town where you can just walk around the square and find so many things. And it was nice to get out after such a long time. Hope everyone is enjoying the weekend. It's nice to have some decent weather again. Don't get too jealous, next week will be down in the 50's until at least Friday. Just in time for another very pleasant weekend. 💞
I do different versions as well. I do one like this with a topping of ketchup mixed with karo syrup. Sometimes I used Lipton onion mix as a seasoning. And I use whatever binders I have on hand: cracker crumbs, dry oatmeal, canned bread crumbs just whatever I have. Sometimes I add ketchup in the meat or canned tomatoes sauce. Again, whatever is on hand. We eat some meatloaf in my house.
Micki D. I do this recipe but instead of oatmeal, I tear 2 slices of loaf bread into small pieces and I add half a can of tomato sauce. The other half I add 2 Tbsp of dark karo syrup, 2 Tbsp of mustard and 2 Tbsp of vinegar and mix together and pour over top. It gives it just a little twang. Sometimes I will sprinkle just a little brown sugar over it before baking. It has been a huge hit for 60 years when I fix it for get togethers at work and family.
There is a brown sauce made with bourbon that is so delicious over meatloaf. First time I had it was at a restaurant so I went hunting for the recipe. I found it and put it in my recipe book (I thought) but its been so long since I made it I don't remember the name of it and hope I can find it again. I like the sauce you put together too for the top of the meatloaf. Much better than just ketchup. Will have to try the bread trick too.

Hi Paula! Instead of your bread trick, which is awesome, I have a two piece meatloaf pan set. The top pan is perforated for the grease to drip through! I use breadcrumbs instead of oatmeal, I saute the veggies before adding and always mix in brown sugar, ketchup and mustard. Once in the pan, score a diamond pattern on top so grease will drip down off the top. I add the glaze on top 15 minutes before done. The glaze has brown sugar in it, too. We sometimes like to make our hamburgers like this, too. There's a few more spices I add, too. So delicious! And don't forget the mashed potatoes! Always served with meatloaf at my house!! Please try it!! 😋❤👍
Good morning Heidi! That sounds like exactly what I do, diamonds and all! I, too, like to saute my veggies before adding, and I soak torn bread in a bit of beef broth for extra flavor. Going to be a beautiful sunny day down South in Savannah. 84 and sunny😎! Grilling outdoors today n will save meatloaf for cooler days.

Hi Paula! Meatloaf similar to the one I make. I add chopped parsley, a tad of Worchester sauce, mustard, and sautéd onions. I don't use green peppers. Lastly, I spread tomato or BBQ sauce (whatever you like) on the meatloaf for the last 30 minutes of cooking time. Turns out good every time. Love your videos, and I miss you when you take a day off!! LOL
I just throw mine together every time & I never have leftovers anymore for meatloaf sandwiches!!! I have to use more than a pound of meat, I also use oatmeal, had a nutritionist tell me that that’s the healthiest way to make it!! I use anywhere fro 2 eggs up, depending on how much meat I’m using, I’m allergic to bell peppers so I never put them in, my son thinks he’s allergic to onions, so I can’t put those in if he’s eating also...but I do add salt, onion powder, garlic powder, a splash or more of Worstershire sauce & ketchup & just mix the entire thing with my hands, shaping it into a loaf I put it in a casserole dish & cover the top with just ketchup Cooking it at 350° for an hour also, but most the time I add water to the baking dish before putting it in the oven, not much, not even a quarter cup & bake it for an hour. My ex daughter-in-law hated meatloaf, but my son bribed her into tasting mine after they’d been married about 5-6 yrs, she ate the whole piece & asked if she could have more!!! I’ve had to make to make a 5+ lb meatloaf before & STILL had no leftovers for sandwiches!! I already had plans on making one for dinner tonight for my 2 teenage grandson’s & myself for dinner. I’m HOPING for leftovers!!!!

I’ve never heard of using oats! My family has always used breadcrumbs. I’m ready for everything to go back to “normal”. I’m planning a trip with my mom to savannah (she’s been twice already and I’ve had to miss both trips) it sounds amazing the way everyone talks. We’re from indiana so it’s not too bad of a drive! My meatloaf recipe that I got from my mother is very similar to yours with a major addition... Jimmy Dean sausage. If the recipe calls for 1 lb of ground beef, also add 1/2 lb regular sausage. It's delicious. 😋

Paula, I also use oatmeal as well. Instead of using the tomato sauce, I use Country Bob's....it is excellent! Also, for the topping...I also add spicy mustard instead of regular mustard and add dried onions. YUM!!!! Of course, cheese on anything is exellent too!

I GOT MY MEATLOAF RECIPE FROM MY AUNT MARIE. SHE WOULD USE EVERYTHING THAT YOU USED IN THE LOAF, BUT SHE WOULD PUT HALF A CAN OF DICED TOMATOES ON THE BOTTOM OF THE PAN AND LAY THE LOAF ON TOP. THEN SHE JUST USED PLAIN KETCHUP ON TOP AFTER POKING HOLES IN IT SO THE KETCHUP WOULD SEEP DOWN IN IT. I LIKE THE IDEA OF THE BREAD THOUGH. LOVE AND BEST BLESSINGS

I have never been a good cook. That meant that my 10 year old son had to learn how to cook If he wanted to ever eat good food. I remember the 1st time he made meat loaf. I never much cared for meat loaf, so I wasn't looking forward to it when I came home from work. What a shock!! It was, and still is, the best meatloaf I ever ate! He used Stovetop Stuffing instead of bread crumbs. It had a firmer consistency than most I had ever tasted. He also put cheese in the middle and the same topping you did on yours, only he used less on top of his, and He served it with a small bowl of that topping, so you could add what you wanted. It was soo yummy! He is 36 years old now, and still a great cook.

Paula, thank you so much for the tip about using bread in the bottom of the pan to soak up the grease! I was never taught to cook in my childhood and in my adulthood I prefer not to use recipes. I watch a couple of TH-cam videos when I want to make a specific dish and I take a little bit from one in the other until I make it my own. I had never made meatloaf in my life before the last time I saw this video and I could not believe how well that bread in the bottom thing worked not a speck of grease! And right now, I have my second ever meatloaf using the same trick. I didn't use the oats but used a combination of Panko and Italian bread crumbs instead.

Oh Paula, this brought back some really happy memories for me. We used to always say my mother's meatloaf was legendary. She would make it with ketchup on the top. The big difference is she would put it in a 9 x 13 pan in the middle and all around it she would put those little small canned potatoes and then pour some of the tomato sauce over them as well. As the meatloaf cooked and the juices came out they soaked in to the potatoes, making them amazingly flavorful and delicious! Haven't made it in a while. I really need to do that! Mom may be gone, but I make many of her recipes still. ❤

Usually when I asked my husband what he'd like for dinner, he won't say, but lately he has been asking for meatloaf. We always use the recipe off the Quaker Oats box which is very similar to this (you use more onion & some peppers)--I always use the tomato sauce instead of tomato juice because it's just the right size. My favorite part is the sweet ketchup topping. I got some 80/20 ground beef today and he's going to get his meatloaf!
My mom’s recipe used crushed up Ritz crackers instead of bread or oatmeal as a binder. It works great and adds flavor. I also use a touch of Worchestershire sauce
I have used crackers too, like my mommy. Mom also puts a teaspoon of sage or Worcestershire depending on what she has.
Hi, I learned from grandma to use Ritz instead, also Worcestershire sauce, ketchup and brown sugar topping. And line pan with double layer parchment for easy removal.

I'm making meatloaf for tomorrow's dinner. I don't use green pepper because it upsets my tummy. I'm using 2lbs of ground beef and 1lb of ground pork. I might try your oatmeal idea. I usually use bread crumbs. My husband can't stand ketchup or mustard so I'll just pour some brown gravy over it. I love the idea of putting the bread in the pan. I wish I had seen that years ago. I've since bought a special loaf pan for meatloaf. The pan has holes for drainage and it sits inside another pan to catch the drippings.
Barbecue sauce instead
My aunt used bread in the bottom of her pan. None of us ever used a loaf pan but you can still use the bread. I use 2 pounds of 80/20 ground beef and Johnsonvill breakfast sausage in the 1 pound package. It's already got some seasoning with pepper and salt and other spices. I use bread crumbs and on-two eggs depending on size on hand (I usually have jumbo so one will do). Then whatever else I have on hand. prior to getting the ingredients together I fry up abut 6 strips of thick sliced bacon, then chop it up after draining on paper towel. After mixing my meatloaf, I make a "ditch" down the middle of my football shaped meatloaf and put the chopped bacon in the ditch and then squeeze the top of the meatloaf over the bacon. You can top the meatloaf any way you want. I put in oven at 325 about 1 1/2 hours. after all it is at least 3 pounds. Sometimes I put potatoes around with celery and carrots or onions. I prefer the bulk carrots to cut myself. Love the "reruns" as my hubs calls leftovers through the week. One morning it sounded so good I heated a slice up and had fried eggs on the side. After all it did have sausage and bacon in it so why not.
Paula - when it came to meatloaf, a staple in our home growing up, my grandmother Adams said it best: don’t mess with meatloaf. Meaning, she kept it simple and didn’t experiment with different ingredients. Her recipe is pretty much the same as this one except she used tiny pieces of leftover bread for the tightener (Depression Era people never threw anything away!).
Hubby and I feel like we’ve.been on house arrest since last March! So I’ve been cooking up a storm and it’s your fault! Yes we're all quarantined for public health. I wouldn't trivialize "house arrest" given we are very punitive society and have ruined many people's lives by thinking punishment, rather then rehabilitation, solves problem (we're 5% of world population; 25% of prison population). Fortunately we will come out of covid quarantine without a prison record to follow. I think of it as we have to isolate for common good. But I hope it ends soon, we're social beings, being isolated is horrible.

I hung clothes, then it rained so I brought them, hung them on a rack and turned on the fan. Maybe they will be ready for tomorrow. So, I decided to make a bigger "baby" blanket for my g-g-grandbaby. Her mama died of a blood clot in her lung when the baby was 10 months old. She is now 16 months old. I just love pampering her. My grandson is doing a great job taking care of her. Just been working and hanging out with my hubby. The differences in our meatloaf recipe starts with the fact that we grind our own meat, so we control which meat is used and how much fat (personal favorite is chuck with bacon ground together). We also cook the veggies (especially the onions since even slightly raw onions upset hubby’s stomach). The last difference is the topping/glaze. My husband grew up eating meatloaf topped with thick beef gravy, which is actually quite tasty.
My husband likes gravy on his meatloaf, too. Unfortunately, I don’t know how to make gravy.
I'm an old English man living in South West France. I love the local food, my favourite dishes being based on things the hard working farmers have been eating for centuries. I've been looking for a good recipe for meat loaf and this looks really good.

If you substitute barbeque sauce for the tomato sauce in the meatloaf it has so much better flavor. I use about 1/2 cup for a 2lb meatloaf. Instead of chopped onions, I use the Durkee fried onions crumbed into small pieces. Then you can top the meatloaf with the barbeque sauce too. My husband hates meatloaf and he loves this recipe.

Paula, I use celery, onion, garlic, sauteed together to get the water out of the veggies, and salt, black or white pepper and a little dried rosemary, tyme and parsley. I cut up bread and soak in 1/2 cup milk. 2 slices. Then after mixing in 1/2 cup tomato ketchup, spices, 2 eggs and hamburger I form in a loaf and put it in my special loaf pan which drains off grease and put your topping on, except that I add teasp of Worcestershire. Bake as usual. It's good, my husband loves it! Freezes well too!! Never heard of putting bread in the bottom of the pan. Do just pull it off when the meatloaf is cool?
Hi Paula, my meatloaf is a bit different from yours. I’ve been making it this way for ages and even people who don’t normally like meatloaf like mine. I do make the exact same topping though. 👍🏻👍🏻
What I do is buy the meatloaf mix at the grocery store, which is beef, pork, and veal ground together. The packages are usually about a pound and a third. To that I’ll add a beaten egg, half an envelope of onion soup mix, a few good glugs of Worcestershire sauce, a half cup milk, and a half cup dried breadcrumbs. I beat the egg into the milk and then add the soup mix and the Worcestershire to that so it’s all combined before I mix it into the meat. I pour the milk/egg mixture into the meat, squish it together, and then add the bread crumbs. I form it into a loaf in the center of a sheet pan and add the topping on all sides, which like yours is a few tablespoons of ketchup, mustard, and brown sugar mixed together. I bake for an hour at 350.
I have made this Paula Deen Basic Meatloaf many times. It is always perfect and everyone loves it! Going to make it for my mom on Saturday. Thank you, Paula!

Ms. Deen, thank you and aunt Peggy for the video and recipe. I made my mom's meatloaf tonite after being down with the flu the last week. After losing 11.5 lbs in a week I needed something wholesome. My mom and your aunt Peggy must have shared that recipe because it is the same. Tonight I used ketchup on top. The lean ground chuck produced almost no fat run off and so succulent meatloaf. Two differences, I put about 2 tbls of Worcester sauce and used italian bread crumbs inside instead of on the bottom. I like the bread on bottom idea. All other ingredients I used tonight were the same as yours. After a week of barely no food, this fed my soul. Thank you for the video.

I never used dried oats before, its usually the bread crumbs, but I tried it and it was Great! And the Bread on the bottom, great idea!! Didn't do the green peppers though due to I just never liked them, they taste okay, I usually skim out the chunks when making my pasta sauce, because its just the chunks I detest for some reason.. I love a simple recipe like this Paula but at 84 I am still learning. I found it really works to mix all your ingredients first in a separate bowl and then add to your meat, less handling.
I always cook my onion, peppers, garlic, and choped fine carrots to make meat loaf. That way u add a vegetable that no one knows is in it. Rest of recipe is the same

I caramelize my onions quickly by sautéing them with a cover and deglaze with water to scrape up all the yummy brown bits when it starts to stick to the bottom. At the end I add some sliced button mushrooms bc they soak up all the juices in the pan, and this sounds weird but if u add 3 or 4 chopped anchovies at the very end w a splash of Worcester sauce, it adds a really nice meatiness to it. Even people who say they hate anchovies love my meatloaf!
I had a package of dry onion soup mix to my meatloaf delicious! It adds a lot of flavor and makes it very moist!

Did that in addition to my normal way that my mom taught me. But sodium. So I barely do it. But I habe plenty of times. I add other stuff that I can't mention cause it's a secret and that already has sodium so I don't use the lipton anymore.
So this is in the oven for the next hour. I have made it many times and it has to be one of the best and easiest Meatloaf recipes. Today I'm doing the bread on the bottom of the loaf pan. I have always slipped that step but not today. Love your cooking. Nothing better than good ole southern home cooking.
My mother always covered the top of her meat loaf with slices of bacon instead of tomatoes if any kind. Loved it. Plus she always sautéed her shopped onions, carrots, etc in butter prior to adding to meat.
I don’t use a recipe for my meatloaf either- but my boys love it.I use ground round, egg, 1 envelope onion soup mix, diced bell pepper, grated Parmesan, Italian breadcrumbs, ketchup, salt and pepper, and a tiny bit of mustard. I top mine with a mix of ketchup and brown sugar- no mustard. It usually takes an hour on 350 degrees. I’m making some for supper tonight, with baked potatoes and a salad.

My meatloaf is very similar to yours except I partially sauté my veggies first and I also found for my taste all oatmeal was to gummy. I use half oatmeal half saltine crackers.. & I do not add the diced tomatoes to the meatloaf I use a couple tablespoons of good quality ketchup or Heinz chili sauce and mix in,.
My topping is the same as yours in addition to yellow mustard I use a little grey poupon, onion powder and mustard powder. I place my onions carrots and potatoes around the meatloaf and that sauce from the meatloaf flavors the veggies perfectly. I have found the veggies need to be cut fairly small or precooked to be done at the same time as the meatloaf..

I make mine with ground chuck, Meatloaf Fixin’s…by Hunt’s, old fashioned oats, onions..s Alf and pepper…NO EGG.
I bake it in a long cake pan, surrounded by carrots, onions and potatoes red ones… I put BBQ sauce on top.
The veggies get a wonderful glaze on them.
This was, one of my husband’s fav meals…of course he loved meatloaf sandwiches,,, Yum.
We always have used the Quaker Oats “prize winning meatloaf “ recipe that was on the oatmeal carton. It’s pretty much the same as what you did except I add a couple shots of Worcestershire sauce. I use Lawrys seasoned salt instead of regular salt, I don’t put green peppers in it just onion. Then I top mine with 2-3 strips of bacon. Thanks for sharing your recipes with us! I grew up with meatloaf made with brown mushroom gravy sauce. Never had it with tomatoes or green peppers. My recipe is finely diced onion, mushrooms, garlic, yellow or red bell pepper sautéed in butter, then mixed in with ground beef, egg, Italian bread crumbs, fresh parsley, salt & pepper, smoked paprika, ground mustard, a splash of soy sauce & some shredded cheese. Bake. On the stove top make a gravy with sliced mushrooms sautéed, flour, beef broth, splash of Worcesteshire sauce & Italian seasoning. Spoon gravy over baked slices of meatloaf & mashed potatoes.
I use breadcrumbs instead of oatmeal, and ketchup instead of tomato sauce. I also add a little brown sugar. Every thing else is the same as yours. soooo good!

Good Sunday morning Ms Paula and friends!👋🏽 Over the years, I've made meatloaf various ways. However, I've never used nor have I ever heard of using oatmeal in meatloaf. I've used either crackers, bread crumbs or actual broken up bread soaked in a little milk. The seasoning combination that my family and I seem to like best is the McCormick meatloaf seasoning pack. I use onion, bell pepper and egg. Sometimes I've used tomato sauce, ketchup, ketchup mixed with bbq sauce, or even spaghetti sauce or marinara sauce. I prefer using spaghetti sauce, a little in the meatloaf mixture and on top. Either way, my meatloaf has always been💣!!! 😁
I never put peppers in mine I don't like them cooked just raw. I will add some brown sugar a can of vegetable soup some parmesan cheese with some of the ingredients you've used and toped with some tomato paste or crushed tomatoes. It's amazing what you can add to meatloaf to make it your own. When I was younger and just started cooking I would do a basic one crackers, onions, egg, bbq sauce and cup of frozen mix veggies. I liked your idea with the bread on the bottom. I'll use it next time I cook one.💕

I agree that the bread is a really good idea…..although I recently bought a meatloaf pan that is two parts-the top pan has holes in it so the fat drains into the bottom pan. I have made this several times. It is good I only change I use bbq sauce instead of ketchup. I find it does not hold as slices. I do not bake in jelly roll. When she did it on her show she baked in a 9x13. I could be using too much tomatoes because I used the 14oz can. But it is good. I make it because it uses oatmeal which I always have instead of bread which I don’t always have.

I'm a 60 yr. old man that loves to cook for me & my wife ! However ,,, I sauté my yellow onions , I do use oat meal , 2 teaspoons of liquid smoke, 1 egg, I leave the peppers out cause my wife don't care for em. Sparingly on the salt because she has High Blood pressure , but double the black pepper , we use our own canned tomatoes, but for the Topping I use Heinz " Moonshine & Honey bar-B-que sauce ! It a make ya Tongue Slap your Brains out ! I Usually Sauté some asparagus or bacon fry some green beans & fix some soupy potatoes ! Lord have mercy , say my name ! lol
I use same ingredients for meatloaf, but no tomato and I use beef bullion instead of salt, bread crumbs instead of oats and I add garlic and fine chopped portabella mushrooms. vegetables are minced and sautéed until soft before adding. I don't put the ketchup topping on, but I cook it and serve it on the side. I cook mine on a rack until the top and sides have a nice brown crust. I then remove the meatloaf and let it stand, covered. I scrap all the drippings into a sauce pan and make gravy, by adding 2 tablespoons of flour and whisking. once the flour has cooked, I add 1 cup of beef broth and a sprinkle of pepper. Taste test for salt, pepper and garlic. you can also finely cut up more mushrooms and onions and cook before adding the flour. Ready 2 ways, with the gravy or the ketchup sauce.
Sandwiches made the next day from the leftover meatloaf are the best. 💯

I love to put red yellow or orange peppers in mine as well as some mushrooms finely chopped and also i love to use veg or original breton crackers it just add to it so much. I bought the Dean Family cookbook while visiting your restaurant in Savannah in 2012 and have been making Aunt Peggy's meatloaf since!! I can't use peppers because they give me heartburn but I absolutely love this recipe it's the only one I use! I never used the bread because I don't think it was written in the recipe but I might give it a try next time!

Hi Ramona! For me, sauteeing the green peppers first helped alleviate heartburn.
I don't use the Bell Pepper because I have food allergies and end up with anaphylaxis. 😨
I think Aunt Peggy's recipe uses tomato paste not sauce... it's a game changer...also Vidalia onions!

Paula, I make my meatloaf similar to yours but I form mine into nice big patties an inch to an inch and a half thick like a hamburger and then wrap a strip of bacon around them and secure them with a tooth pick. For my topping I use ketchup and Sweet Baby Rays BBQ sauce in equal portion I reserve half the sauce and set to the side to use at the table; I use the other half to baste the top of the patties with. I cook these on a sheet tray with a wire rack to remove the grease. I hope you try this one some time its great my family love it! Love you Paula!

I am making this for dinner tonight. I made a few changes because my husband eats Keto so I put parmesan in place of the oats. I used sugar free bbq sauce and an alternative brown sugar (Sukrin Gold) with Dijon mustard for the topping!

I love meatloaf. I'm allergic to eggs, so dont use them. I have never tried the bread trick but I will next time I make some meatloaf.
What happens with your egg allergy? I found out a couple yrs ago I was allergic to eggs. Now I know why I get a headache within a minute or so after consuming them.
I have stomach cramps and throw up. Sometimes it will last up to 24 hours.
I use oatmeal as well Ms Paula, however I throw in a can of rotel for my plain meatloaf. My Italian meat loaf i use basil, oregano, thyme, with marinara sauce as my binder and top of with cheeses.
Meatloaf is an all-time favorite! But when I was working and preparing lunches in advance, I actually burned myself out on meatloaf. But I'm finally able to eat it again. Growing up we put bell pepper and onion in the meat mixture along with oatmeal, egg, salt, pepper and worcestershire sauce. We put part of the 8 oz can of tomato sauce in the mixture, reserving a small amount for the top.
This was always good with mashed potatoes and green beans or other green vegetables. But the leftover meatloaf was never eaten as a full meal again, like when it was just baked. I think the best part was making meatloaf sandwiches with mayonnaise and ketchup. In fact, I think we enjoyed the sandwiches more.
Through the years I've added different things to meatloaf for different variations, I even put boiled eggs in the middle for a surprise when cutting into it. Meatloaf doesn't have to be fancy because the best end result is the sandwich.
Well a week ago we were buried in snow and today it was in the 70's. That's Texas for you. 🤠
We've been cooped up for so long but today my sister and I went out for a hamburger. 🍔 Not just any hamburger but the kind of burger that you crave. And we had been craving it since the snow last week. And this wasn't from a chain restaurant, it's a family owned place that puts a lot of effort in what they make. It's a big juicy burger served with fries. My sister and I go together because neither of us can eat a whole one. We also walked over to a local bakery and got a cinnamon roll and whoopie pie. I love living in a small town where you can just walk around the square and find so many things. And it was nice to get out after such a long time.
Hope everyone is enjoying the weekend. It's nice to have some decent weather again. Don't get too jealous, next week will be down in the 50's until at least Friday. Just in time for another very pleasant weekend. 💞

I do different versions as well. I do one like this with a topping of ketchup mixed with karo syrup. Sometimes I used Lipton onion mix as a seasoning. And I use whatever binders I have on hand: cracker crumbs, dry oatmeal, canned bread crumbs just whatever I have. Sometimes I add ketchup in the meat or canned tomatoes sauce. Again, whatever is on hand. We eat some meatloaf in my house.
Micki D. I do this recipe but instead of oatmeal, I tear 2 slices of loaf bread into small pieces and I add half a can of tomato sauce. The other half I add 2 Tbsp of dark karo syrup, 2 Tbsp of mustard and 2 Tbsp of vinegar and mix together and pour over top. It gives it just a little twang. Sometimes I will sprinkle just a little brown sugar over it before baking. It has been a huge hit for 60 years when I fix it for get togethers at work and family.

There is a brown sauce made with bourbon that is so delicious over meatloaf. First time I had it was at a restaurant so I went hunting for the recipe. I found it and put it in my recipe book (I thought) but its been so long since I made it I don't remember the name of it and hope I can find it again. I like the sauce you put together too for the top of the meatloaf. Much better than just ketchup. Will have to try the bread trick too.

I always used oatmeal in my meatloaf...the first recipe I ever used was on the Quaker Oat Meal box. :) It's a great recipe.... the only difference in yours is the addition of the bell pepper and I'm going to try that.

Hi Paula! Instead of your bread trick, which is awesome, I have a two piece meatloaf pan set. The top pan is perforated for the grease to drip through! I use breadcrumbs instead of oatmeal, I saute the veggies before adding and always mix in brown sugar, ketchup and mustard. Once in the pan, score a diamond pattern on top so grease will drip down off the top. I add the glaze on top 15 minutes before done. The glaze has brown sugar in it, too. We sometimes like to make our hamburgers like this, too. There's a few more spices I add, too. So delicious!
And don't forget the mashed potatoes! Always served with meatloaf at my house!! Please try it!! 😋❤👍

@@heidid5275 grilling chicken and yukon golds, sliced n seasoned with fresh herbs n butter in foil packets. About 15 minutes before potatoes are done, open packets to get that grill crunch. Yum! Hi Paula! Meatloaf similar to the one I make. I add chopped parsley, a tad of Worchester sauce, mustard, and sautéd onions. I don't use green peppers. Lastly, I spread tomato or BBQ sauce (whatever you like) on the meatloaf for the last 30 minutes of cooking time. Turns out good every time. Love your videos, and I miss you when you take a day off!! LOL
Meatloaf sandwiches are the best part of having left over meatloaf! With mayonnaise of course!!

I just throw mine together every time & I never have leftovers anymore for meatloaf sandwiches!!! I have to use more than a pound of meat, I also use oatmeal, had a nutritionist tell me that that’s the healthiest way to make it!! I use anywhere fro 2 eggs up, depending on how much meat I’m using, I’m allergic to bell peppers so I never put them in, my son thinks he’s allergic to onions, so I can’t put those in if he’s eating also...but I do add salt, onion powder, garlic powder, a splash or more of Worstershire sauce & ketchup & just mix the entire thing with my hands, shaping it into a loaf I put it in a casserole dish & cover the top with just ketchup Cooking it at 350° for an hour also, but most the time I add water to the baking dish before putting it in the oven, not much, not even a quarter cup & bake it for an hour.
My ex daughter-in-law hated meatloaf, but my son bribed her into tasting mine after they’d been married about 5-6 yrs, she ate the whole piece & asked if she could have more!!! I’ve had to make to make a 5+ lb meatloaf before & STILL had no leftovers for sandwiches!! I already had plans on making one for dinner tonight for my 2 teenage grandson’s & myself for dinner. I’m HOPING for leftovers!!!!

I’ve never heard of using oats! My family has always used breadcrumbs. I’m ready for everything to go back to “normal”. I’m planning a trip with my mom to savannah (she’s been twice already and I’ve had to miss both trips) it sounds amazing the way everyone talks. We’re from indiana so it’s not too bad of a drive! Great meatloaf! It maybe basic but we love it. For variety I sometimes add about 1/2 cup of shredded cheddar cheese.
My meatloaf recipe that I got from my mother is very similar to yours with a major addition... Jimmy Dean sausage. If the recipe calls for 1 lb of ground beef, also add 1/2 lb regular sausage. It's delicious. 😋

Paula, I also use oatmeal as well. Instead of using the tomato sauce, I use Country Bob's....it is excellent! Also, for the topping...I also add spicy mustard instead of regular mustard and add dried onions. YUM!!!! Of course, cheese on anything is exellent too!

I GOT MY MEATLOAF RECIPE FROM MY AUNT MARIE. SHE WOULD USE EVERYTHING THAT YOU USED IN THE LOAF, BUT SHE WOULD PUT HALF A CAN OF DICED TOMATOES ON THE BOTTOM OF THE PAN AND LAY THE LOAF ON TOP. THEN SHE JUST USED PLAIN KETCHUP ON TOP AFTER POKING HOLES IN IT SO THE KETCHUP WOULD SEEP DOWN IN IT. I LIKE THE IDEA OF THE BREAD THOUGH. LOVE AND BEST BLESSINGS
