My Dad (may he rest in peace) got 2nd place for his chili out of 200 entries, in a contest held on our U.S. Army base, over in Germany, back in the late 1980's! The other guy used chunks of filet mignon, whereas my Dad used a mix of ground beef and regular steak. Honestly, I think if you can make ground beef compete toe-to-toe with filet mignon-- you're the better cook, lol. Whenever Dad would make a HUGE pot of chili for us to live on for a few days, the neighbors would catch wind, and be lurking around wanting some. My Mom said it would just sooth her after a long work day. Sometimes we ate it with saltine crackers, sometimes cornbread. Then we would make all kinds of things with the leftovers-- chili mac, chili dogs, or cook it down super thick and make pan-fried burritos. Dad always sorted, rinsed and cooked his own pinto beans from scratch. I'm making a big pot of his recipe for me and my boyfriend tomorrow. I make it just like Dad did, in honor of him.
A tip my Momma taught me about tomato paste in the little cans.... Place can on paper plate or a plate. Use can opener.. Flip the can and open bottom side first. Then flip it over.. Use can opener and take the 'lid' off. Pick it up at an angle.. Remove bottom lid... Then SLOWLY push TOP lid through...pushing out the tomato paste onto plate. And there ya go! It pushes out ALL the paste and NO scraping inside with a spoon or spatular needed!!! A tip from me to y'all!! 😊😊

@@crawleyr4919 Italian sausage is excellent for making chili. My dad also makes a chili with rabbit, it’s wonderful! If you like rabbit, of course, not everyone does.
I heard one day.. how an ingredient like cayenne or for instance celery.. its one of those items that isnt a strong flavor, but if you skip it, you will notice its missing.. but when its in there, its not something so strong per say like cumin.. :D if i leave the celery out of my Vegetable soup, you will notice somethings missing.. but when its in there, you cant really taste it.. but it makes the dish!!! love it.. ill definitely have to give this one a go.. :D
Tip: To get all of the tomato paste out of the can: Wash can first, then remove top. Hold can over pot (or plate/bowl) and open the bottom of the can. You can then push the bottom through like a push-pop to remove contents :) This dish looks DELICIOUS!

I'm an Elementary school teacher, and our school has a contest every year. I decided to enter, following your guidelines. Well, needless to say, my entry won (out of 10 entries), winning a nice $25 gift card as a bonus! My daughter did the same thing at her work soon after, using your recipe, and yes, she won as well! Just finished putting this all together & on the stove. Looking forward to it & it already smells great. I had to substitute 12 oz of cola since I don't have beer, but will be sure to have that on hand for next time. Also only had green pepper on hand & had to substitute 28 oz crushed tomatoes for the diced, so I'm sure it'll be close to the original recipe. I'm sure my husband's going to be pleased. Update - PERFECT! This is my new go-to recipe for chilli. Just wish I had some sour cream to dollop on top!

I brown off all the ingredients, put it in a slow cooker. Put the crock in the fridge overnight. Then before I go to work put the crock in the slow cooker, turn on low. When I get in from work late dinner is ready!
Looks wonderful! One thing I do that may be unusual is I add a tablespoon of sugar to every pot of chili, soup, or stew that I make. I can tell now if I have forgotten to add it. I was told this by an older gentleman than ran the tiny local grocery store in our small town. It really makes a difference!

I think most chili beans are good. Amazing how similar they are made with the same basics. I tend to choose healthier ingredients such as; ground sirloin and organic vegetables. I don't like grease from the 80/20 or 85/15 ground beef to be part of my chili. I totally agree with you that seasoning at each layer provides more flavor depth. I think there is a tremendous amount of flavor that is missed by not browning the sirloin and allow the natural juices from the meat to thicken before adding the onions, peppers and garlic. Sometimes I will add a half can of beer and allow it to reduce and create an extremely flavorful base for the chili. All this takes longer but the broth with the chili is rich and delicious. I always use 3 jalapeños or Serrano peppers for the heat. Often I will use dried Mexican peppers to add a flavor twist. Sometimes I will add a lean pork chop or maybe a small amount of Sticky Fingers barbecue sauce. It is my experience that with the ground sirloin base you add almost anything to it and the results will be incredible. This recipe has evolved to this over the past twenty years. Taste is subjective but it's hard to find a bad home chili on a cold Friday night. Best holidays to you and your family.

I LOVE, LOVE, LOVE celery and celery leaves in my chili. I chop it really fine and nobody knows it is there. Plus I love adding a Pablano pepper to it! I love my peppers,onions, and tomatoes to be chunky! Making a small pot now even though you all know here in Southeast Georgia its 90°, lol!
Very similar to the chili I've been making for 40 years. Swap out the tomato paste for a can of tomato soup, and use cumin seed, instead of ground cumin. Definitely sweet yellow onions instead of red onions. Lots more celery too.

I always put cumin, chili powder, paprika, onion powder, garlic powder, petite tomatoes, tomato sauce, beef broth, and Worcestershire sauce in my chili
Bobby love the chili. Little tip when working with tomatoe paste the easy way to get it all out is after you open it hold the open side facing down in the pot and take the bottom off and you can slide it right into the pot. Your welcome.....

I recently made a pot of Cincinnati chili for the first time and cooked some Spaghetti noodles.... and man was it delicious! You can't have too many recipes for a good Chili. Your options are not limited with Chili recipes, they're all delicious, lol. TFS y'all!
On a pot of chili, this big try adding a 1/4 tea of cinnamon and about 1 1/2 tab of cocoa powder. It won't taste like either but it will give it something extra delicious.

I freeze my leftover celery leaves in ice cube trays and then just pop the ice cubes in my soup or whatever I’m making.

I always use 3 jalapeños or Serrano peppers for the heat. Often I will use dried Mexican peppers to add a flavor twist. Sometimes I will add a lean pork chop or maybe a small amount of Sticky Fingers barbecue sauce. It is my experience that with the ground sirloin base you add almost anything to it and the results will be incredible. This recipe has evolved to this over the past twenty years. Taste is subjective but it's hard to find a bad home chili on a cold Friday night. Best holidays to you and your family.

Celery and beef a marriage made in heaven. I add a carrot to help with the acidity. And then take it out at the end.
I’m with you in always preferring Vidalia onions. Always the best onion taste. I want to try it on the Fritos but we usually eat chili on top of rice then topped with cheese!
I LOVE, LOVE, LOVE celery and celery leaves in my chili. I chop it really fine and nobody knows it is there. Plus I love adding a Pablano pepper to it! I love my peppers,onions, and tomatoes to be chunky! Making a small pot now even though you all know here in Southeast Georgia its 90°, lol!
Very similar to the chili I've been making for 40 years. Swap out the tomato paste for a can of tomato soup, and use cumin seed, instead of ground cumin. Definitely sweet yellow onions instead of red onions. Lots more celery too.

I grow celery “tops” from the celery base. You can smell the flavor! Great to add to any dish/smoothies.

I always put cumin, chili powder, paprika, onion powder, garlic powder, petite tomatoes, tomato sauce, beef broth, and Worcestershire sauce in my chili
We just put ours in a bowl and have hot biscuits with it

Bobby love the chili. Little tip when working with tomatoe paste the easy way to get it all out is after you open it hold the open side facing down in the pot and take the bottom off and you can slide it right into the pot. Your welcome.....
Jamie, mine is the best but yours looks good too. I'm with you on the peppers and celery too! I make mine every year on Christmas Eve, cooks all day in a stone wear pot in the oven. No beans.

I recently made a pot of Cincinnati chili for the first time and cooked some Spaghetti noodles.... and man was it delicious! You can't have too many recipes for a good Chili. Your options are not limited with Chili recipes, they're all delicious, lol. TFS y'all!
I made this last night, the celery is so yummy in this!
On a pot of chili, this big try adding a 1/4 tea of cinnamon and about 1 1/2 tab of cocoa powder. It won't taste like either but it will give it something extra delicious.
