15-20 Lbs Chitterlings 3 Lbs Hog Maws 2 Stalks Celery, chopped 1 Medium Onion, chopped 1/2 Green Bell Pepper, chopped 1/4 Red Bell Pepper, chopped 2 Tbs Butter 5 Tbs All-Purpose Flour 2 Qts Water 2 Qts Chicken or Vegetable Broth 1/3 Cup Apple Cider Vinegar 1/4 Hotsauce (optional) 2 Tbs Minced Garlic 1 Tbs Salt 1 Tbs Seasoning Salt 1 Tsp Italian Seasoning 1/2 Tsp Crushed Red Pepper (optional) 1/2 Tsp Black Pepper Instructions 1. Chop your onion, celery, red, and green peppers into small pieces. 2. Place vegetables in a food processor, then blend them until they become paste. 3. Cleaning chitterlings: The chitterlings should be shaped like a glove with a big hole in it. Rip the chitterling apart. As you are ripping the chitterling apart, you'll notice it begins to separate from the clear membrane. Pull the membrane from the chitterling and discard it. 4. Slice your chitterlings in half. 5. Remove and scrape off the membrane on the hog maws. 6. Chop and slice your hog maws into thin small shape pieces with cooking scissors. 7. Place your chitterlings and hog maws in a bowl of water. Add 1 tbs of salt, then scrub chitterlings and hog maws. Let them soak for an hour, then drain the water. 8. Combine your broth with flour, then stir in well. 9. Place a big pot over medium-high heat. 10. Add your minced garlic. 11. Add your paste. 12. Add your butter and seasonings. 13. Add your vinegar. 14. Add your broth slurry and water. 15. Cover with a lid leaving a crack on the sides. Cook for 3-1/2 to 4 hours or until juice cooks down and chitterlings and maws are tender. Let the juice cook all way down if you want a thin gravy. Stir the chitterlings every 25-30 minutes. 16. Once done, add your crushed red peppers and hotsauce, then stir in well.

Philly Boy Jay, Aunt Bessie's is a great brand for pre-cleaned and I use the same technique as you and I only buy Aunt Bessie's. Some brands say pre-cleaned and are just as dirty as those in the red bucket and require extensive cleaning.
Love Hog Maws & Chitterlings! I only get my chance once in a while. Not as often as my childhood. My only requirement! They have to be cleaned by someone I know & trust to clean them properly. My Mama used to put chunks of potato in hers to absorb most of the smell. It made a difference. I’d never eat any from a restaurant. I don’t know them.
I’m going to try to cook this meal next wkend hopefully. It’s been over 40 yrs since I had either. But the thickness of the juice made me want to give them another try. Thank you in advance. With some cornbread

Halapenos , onions, crushed red peppers, vinegar, salt & black pepper in mine. I used to clean & cook 'em but now I buy pre-cleaned and pre-cooked and cook the hell out of 'em some more. I do it the day before, then refrigerate them so that the fat that rises to the top solidifies and I can scoop it off before I reheat them for serving.

Why do you say that the membrane is unhealthy? I cook my chittlins with the membrane attached. It makes em chewier, and keeps them from falling apart while cooking They are not unhealthy

I haven't had chilling in so long because I only ate my mom's people didn't clean them well then my wife mentioned them now I'm on a mission to get some like my mom did so far this video is the closest to my mom's they look similar in the end and clean.

AlwaysaLady365 That's easy. It's just pan drippings w/few tablespoons of flour on medium heat, stir it together & let it cook for a min to cook the flour taste out. Turn it up to high & pour in water or broth and season it however you want. Once it thickens, let it simmer... there's your gravy. He has plenty of videos with gravy recipes. If you look for anything "smothered", he'll show you how. U can always cheat & add in "cream of mushroom or chicken too!

Great minds think alike. I use Aunt Bessie’s chitterlings too! I make sure that I soak mine in salt water solution and in vinegar. Looks delicious!😃

Small tip: add paprika for a little color and after cooking chittlins chop in smaller bite size pieces.

They are not unhealthy
The membrane is the portion of the intestine that has come into contact with the feces. It’s best to remove it due to that reason.

After my chitterlings and hog maws are done, I drain and give them a quick rinse. I replace the fatty broth with chicken stock. Done and dusted!

KY's (Chitterlings) has my house smellin like ass right now! I got my mother to stop eating pork, for the most part. But, she just HAS to have these on Thanksgiving still. So, I guess it's alright only once a year...FOR HER!!! I stopped eating this stuff 7 or 8 years ago!
