A smash burger is meant to be smashed into the pan using a metal spatula or weight until its ultra thin. The smashing causes it to crisp up more as the meat compresses against the hot pan.

@@tlholland64 They are called a few different things, smash taco is just one of them. I think it mainly gets the "smash" name because you want to thin out the meat, like a smash burger. But often the videos for these "taco burgers" shows people cooking the meat and taco together, like Barry is showing. And honestly nothing great about them, I found them to just be a greasy mess when I made them. Not to mention the bun helps balance out all the meat flavor, the taco shell does nothing.

Love the vid! One thing with the potatoes, if you toss them into a pot of boiling water with a tablespoon or so of vinegar for a couple minutes before you start skewering and stretching, it'll make them more flexible and less likely to break!

The dump cake made me think of something our local Woolworths demonstrated once. They made bread and butter pudding using stale hot x buns. That was very good.

Totally a thing. They come in a lot of varieties, the ones most common when I was growing up had pie filling and canned pineapple and maybe a coconut and nut topping. Super common at church potlucks.@@mrbarrylewis
I've done those Big Mac Tacos before but the trick is to make the beef even thinner so that they don't need to be in the pan as long and then use american sliced cheese instead so it melts quicker and you don't need to use the lid which makes it go soggy. This way you get a just cooked beef patty which is still really juicy, ooey gooey cheese and a crispy taco shell which is still slightly chewy in the middle.

You literally take the meat , throw it in a pan and get a burger press or a good spatula and smash it down as thin as you can get it . The potatoes have to be cross hatched when you cut them , when it pulls apart it will look like a waffle fry and instead of baking it , get a shallow pan and fry them . Or a deep fryer and dunk them . And as far as that dump cake goes , that's just diabeetuss . .

The Big Mac taco has so many possibilities! Switch up the seasoning: Greek seasoning, some feta, & tzatziki… I live alone, so I was thinking about setting them up ahead of time and freezing them with some parchment paper between them, then cooking from frozen as needed for a super-fast dinner. If they’re thin enough, you could cook from frozen in just a couple of minutes.
The key thing if you want to make good Smash burgers is you don't want to pack them tightly when you are making the patty like you would a normal burger, you want a somewhat loose patty. (You don't have to worry about it falling apart because you will compact it a bit when you "smash" them down). That way when you smash it down it's surface is bit more rough and gives it more surface area to caramelize and brown giving it a very unique texture and consistency compared to regular hamburgers. It's what makes smash burgers so dang awesome.
Pretty sure I read a chemistry textbook once that said if you combine cake mix and donuts you'll synthesize vitamins A, B, C, D and E as a by-product. A secondary side-effect is that all the calories evaporate in the oven. Dig in, people!
The big mac one reminded me of something I saw the other day - a sausage roll wrap. Get a wrap, get some sausage meat, some herbs (or whatever else you want in the roll), spread the meat mixture across the wrap, roll it, cut it into bite size chucks then cook it (I think for between 16-20mins depending on how much you had). Would be interesting to see how it turns out if you get a chance to do it!

Try the taco burgers again, except next time smash it down into the pan with a spatula. That will thin the burger even more and make it have full pan contact for better browning, while making it fully stick to the tortilla. Edit: You can also try sprinkling a thin layer of onion under the burger. The onion will push into the burger and partially caramelize.
When I make "fast n easy pie" I put down fruits or berries in the pan. Then I mix flour, sugar, vanillasugar, bakingpowder together n dump it like that cakemix on top and then cover it with thin slices of butter. 😊

Try the accordion potatoes with a metal skewer! Metal is smoother and would be way easier to fan out and twist the potato on. Wood is porous and grips onto things. Though this is two months old, so for all I know, you’ve already done this
One little thing... You messed up the smash burger big mac taco... You are supposed to smash the burger in the pan while its cooking so you get a nice crust and crispy edges... Then you put the tortilla and flip it over... So then you arent worrying about the tortilla burning...
I love your videos but that big mac taco had me nervous for sure, the way you did them made me put my hands over my eyes lol the meat should not be put on the tortilla before hand rather half cook the meat then put the tortilla on top then flip and it evenly cooks at the same rate. I'd add some cinnamon and sugar to the butter at the top of the donut-dump cake. Make it even more unhealthy, but hey, it already has donuts and sweetened condensed milk, what's a little cinnamon sugar lol

@@mrbarrylewis Type 2 diabetic here with some unsolicited info. 😅 IMO, the most important parts in sugar-free baking is finding a sweetener that's sufficient for baking, and has a low glycemic index (GI). Some sugar-frees, like maltodextrin (I'm in the States...it's made from corn, so this stuff is everywhere), have a higher GI than even normal sugar, but is still marketed as sugar-free. I would recommend a stevia leaf extract. Stevia is a natural sweetener, like sugar, but it has a GI of zero. It can be a bit too sweet on its own, so it's often combined with another zero GI sweetener, like erythritol or sucralose. I use a product called Truvia, but there are plenty others out there. Hope this helps! 🫡
This is the trouble being diabetic you can’t just have stuff that has no added sugar in, I see lot of channels on TH-cam where they put in the title “Sugar free cake” or “Sugar free ….” Only to see them not putting actual sugar in the recipe but then adding honey or other such fruit that is high in sugar. You have to been very careful in what you add as it’s not just the fact you don’t add raw sugar in the dish it’s what else you add also.
I totally prefer the old school Barry videos !! Making mistakes stuff on the lense just makes it feel more like it’s just you and us watchers ! If it’s not broken don’t fix it springs to mind , love your content whatever path you choose
If I were to do the tacos, I think I'd just cook the ground meat without the tortilla and maybe cut the patty into strips. Then again, I ALWAYS overcook my ground/mince (one of the issues with being colourblind). Whether beef or chicken I end up asking my wife "does this look done to you?"
Cooking the two together really binds them and adds a good flavor on the shell. I recommend trying at least one to see if you are confident to make them that way. They’re thin so they cook fairly quickly.
Then key to a smash burger is to start with a small ball and then with all your strength, press it flat with a metal spatula. it should be so thin that you could never pick it up raw without it falling apart. the entire burger should take like 30 -45 seconds to cook because of how thin it is
Next time maybe skewer the potato before you cut it? It should have more structural integrity that way, and the skewer would act as a stop as well. Then the potato is already on the stick, so turning it should be easy.
the Tortilla: Less meat, put it in the pan with out the tortial, smash it, when it's brown, turn the meat let it geht brown, slice of cheese an taco on it, turn it, "toast the tortial and melt the chees, take it out and put the rest on.... maybe it works better, like this?
I think the dump cake would be my favorite. I've tried the taco burgers, I think those would work better for people who have those outdoor griddle grills that are really popular now, Blackstone I think they are called. On the stove in a frying pan or sauté pan the angles are just too awkward. Maybe those pancake pans if you still have them.
Smash burgers are literally smashed super thin. About 3oz of beef into a "ball". No oil...it ruins the tortilla! Smash it into the pan with the tortilla. Should take only a moment on the beef side. Sear and flip, add cheese, a tablespoon of water (to create steam), and lid it up. It comes out perfect and is foldable.

deep fry would probably work wonders too, as they'd go crispy a lot faster, bypassing the soggy stage where they fall off the sticks.

I prefer a bit of tartness in a dump cake. Add some berries before adding the cake mix, and it's even better!

@@mrbarrylewis Type 2 diabetic here with some unsolicited info. 😅 IMO, the most important parts in sugar-free baking is finding a sweetener that's sufficient for baking, and has a low glycemic index (GI). Some sugar-frees, like maltodextrin (I'm in the States...it's made from corn, so this stuff is everywhere), have a higher GI than even normal sugar, but is still marketed as sugar-free. I would recommend a stevia leaf extract. Stevia is a natural sweetener, like sugar, but it has a GI of zero. It can be a bit too sweet on its own, so it's often combined with another zero GI sweetener, like erythritol or sucralose. I use a product called Truvia, but there are plenty others out there. This is the trouble being diabetic you can’t just have stuff that has no added sugar in, I see lot of channels on TH-cam where they put in the title “Sugar free cake” or “Sugar free ….” Only to see them not putting actual sugar in the recipe but then adding honey or other such fruit that is high in sugar.
You have to been very careful in what you add as it’s not just the fact you don’t add raw sugar in the dish it’s what else you add also.
Just so you know 1tsp of honey has 6.4g sugar

If I were to do the tacos, I think I'd just cook the ground meat without the tortilla and maybe cut the patty into strips. Then again, I ALWAYS overcook my ground/mince (one of the issues with being colourblind). Whether beef or chicken I end up asking my wife "does this look done to you?"
Cooking the two together really binds them and adds a good flavor on the shell. I recommend trying at least one to see if you are confident to make them that way. They’re thin so they cook fairly quickly.
Then key to a smash burger is to start with a small ball and then with all your strength, press it flat with a metal spatula. it should be so thin that you could never pick it up raw without it falling apart. the entire burger should take like 30 -45 seconds to cook because of how thin it is

Next time maybe skewer the potato before you cut it? It should have more structural integrity that way, and the skewer would act as a stop as well. Then the potato is already on the stick, so turning it should be easy.
the Tortilla: Less meat, put it in the pan with out the tortial, smash it, when it's brown, turn the meat let it geht brown, slice of cheese an taco on it, turn it, "toast the tortial and melt the chees, take it out and put the rest on.... maybe it works better, like this?

I think the dump cake would be my favorite. I've tried the taco burgers, I think those would work better for people who have those outdoor griddle grills that are really popular now, Blackstone I think they are called. On the stove in a frying pan or sauté pan the angles are just too awkward. Maybe those pancake pans if you still have them.

Smash burgers are literally smashed super thin. About 3oz of beef into a "ball". No oil...it ruins the tortilla! Smash it into the pan with the tortilla. Should take only a moment on the beef side. Sear and flip, add cheese, a tablespoon of water (to create steam), and lid it up. It comes out perfect and is foldable.
