    Hello, and welcome to Nest & Nature! In this video, we're excited to share our delicious, homemade, easy one-bowl Banana Muffin (or cupcake) recipe with you all! Oh, and this recipe is gluten-free, refined sugar-free, and dairy-free! Whether you are gluten free, dairy free, or not, this recipe is such a tasty and easy treat. Here's what you'll need:
    Ingredients:
    2-3 very ripe bananas
    2 eggs
    1/4 cup melted coconut oil (we used Dr. Bronner's: amzn.to/3b1Al3r)
    1/4 cup honey (we used MADHAVA: amzn.to/2RvztfL)
    1 cup gluten-free flour (we used Bob's 1-to-1 GF)
    1 tsp baking soda
    1-2 tsp cinnamon
    1 tsp organic vanilla (we used Simply Organic: amzn.to/2Rv2yYB)
    Optional Add-Ins:
    1/2 cup crushed walnuts or
    1/2 cup chocolate chips or
    1/2 cup blueberries

    I used King Arthur Gluten Free Flour and maple syrup instead of honey. I also topped them with chopped almonds and they turned out very moist and delicious. Thanks for the recipe!🧁

    We are recently gluten free. This is the first recipe I made. Mine came out rubbery. Any tips for why? I did use a 1-1 ration flour. My bananas were small so I used four. Also my batter was a little thin compared to yours. The taste of the muffins was great. Any suggests would be great. I am a newbie when it come to baking gluten free.

      Hi Clarissa! Oh no, so sorry that happened! The batter may have been a bit over mixed which usually will result in a more rubbery consistency. Adding more flour can also result in rubbery muffins as well. Do you mind me asking which brand of flour you used?
      I would try adding another banana next time and mixing just until combined. You could also try separating the wet and dry ingredients and then folding the wet into the dry ingredients. Lastly, I have noticed with gluten free recipes, sometimes adding more liquid is better than adding more flour as the gluten free flour tends to be drier and require more liquid. If you don't have an extra banana on hand you could also try a little more oil. I hope this helps and please let me know if you have any more questions! :)

      Nest & Nature My flour is in a blue bag and just says all purpose flour. It honestly does not have a brand name on it. However I did fine the flour you used. I am going to try it again with that flour and your suggestions once o have a few ripe bananas. I will let you know how it turns out. Thank you for your help.

      Hello! Sorry about the confusion. You can use olive oil or coconut oil (or even avocado oil!) for your oil in the recipe. Hope this helps! :)

      Hello! You can substitute the eggs in the recipe :)
      Try 1/4 cup of yogurt or unsweetened apple sauce per egg. So 1/2 a cup for this recipe. You could also try ground flax seed. Mix 2 tbsp of ground flax seeds with 6 tbsp of water for this recipe then mix into the rest of the ingredients.

    If I use 3 or 4 bananas should I add extra flour or eggs ? Thank you❤

      Hi Leah! I wouldn't add more eggs- Start with the amount of flour called for in the recipe. Once you mix it together, if it seems a little too wet add additional flour, maybe 1-2 tbsp at a time. Hope this helps and happy baking!

      Hello! I have never made it with rice flour, so I am not 100% sure. You may need a leveling agent like xanthan if you do try. I'm sure a substitute like bobs gluten free 1 for 1 should work. Hope this helps!

    HELP .......W hat are the brown things in my mashed bananas....are they the seeds .... they are about 1/2 to 3/4 inch... and look like a little worm?, but I checked with magnifying glass and they don’t move or look alive .... please answer me someone!

      Hi Gale, It sounds like that is just part of the natural banana. If it smells and tastes normal I think everything is ok!

      Hi! I use honey in the recipe. You could also use maple syrup, coconut sugar or regular sugar if you'd like.

      Hello Linda, thank you for your comment. Eggs are not considered dairy as they do not derive from a mammal's milk like butter, milk, cream etc. If you cannot use eggs, flax seed makes a great substitute. Or Bob's Red Mill makes a great egg replacement as well. Hope this helps!
