These sound amazing. I've made handpies before but never empanadas.
I used King Arthur Gluten Free Flour and maple syrup instead of honey. I also topped them with chopped almonds and they turned out very moist and delicious. Thanks for the recipe!🧁

Gosh, I hope you're still monitoring. Love the concept. I'm trying to do something similar with a desert contempo approach. Have you done a follow up a year later, would like to see how big that Apricot tree is, now. I'm thinking instead of a Pomegranate tree (bush), and keep it bushie. You've captured the feel of the outdoor dining. I have a friend in rural France, he has this al fresco dining area I want to recreate in the hot desert. In my case, I will use a couple of shade sails. The string lighting, well done.
Hi Kevin! Thank you so much for your kind comment. I unfortunately do not have a follow-up as we moved but last I checked the tree was thriving! A pomegranate bush is a fantastic idea! That is definitely something I would like to grow next. Some structural rocks would be nice for your contempo approach. A fountain would be great too! Something we wanted to add but didn't have a chance to. Desert sage and ocotillo would be nice plant choices! :)
The best camping and fishing are the June Lake loop lakes.

Can I sub for rice flour
Hello! I have never made it with rice flour, so I am not 100% sure. You may need a leveling agent like xanthan if you do try. I'm sure a substitute like bobs gluten free 1 for 1 should work. Hope this helps!
That’s not dairy free when you’re using 2 eggs..!!!
Hello Linda, thank you for your comment. Eggs are not considered dairy as they do not derive from a mammal's milk like butter, milk, cream etc. If you cannot use eggs, flax seed makes a great substitute. Or Bob's Red Mill makes a great egg replacement as well. Hope this helps!
Woah, where is that hike at 7:22? What do you guys do to clean the pots? Is there water at that campground?
Hey George! That was a super easy hike, Overlook Trail to Mcway Falls. I'd highly recommend the Partington Cove hike, which is the one featured right after this one. However, I would double check if you're going anytime soon as some trails might be closed because of all the rain we've had. There is water at the campground- We use collapsible buckets from amazon to wash our pots in. Scrape out any food scraps to throw away, rinse and wash in two buckets with a heavy-duty scrub brush (since we use cast iron typically) and a biodegradable soap. Hope this helps and happy camping!

Did you take your own playpen? And what do you recommend to take or not take for a baby?☺️
Hi! We did bring our own playpen. Although it was an extra thing to carry, it was incredibly helpful. I am happy we didn't have to rely on our hotel having one. I linked a lot of the gear we brought below in the video :) But, my top things to bring would bring the pool float (it was a great little seat for baby on the beach, and he totally napped in it on the beach too lol). If bottle feeding at all, a travel baby bottle warmer. We have the Baby Brew Travel Warmer, which works for formula and breastmilk. There were times we were gone all day from the hotel, so the bottle warmer came in handy. He was about 5 months when we went on the trip. A good sun hat is super important as well, one with straps, it can get windy at the beach etc. (I linked the one we used above). Lastly, I would highly recommend a good baby carrier (It can be handy on the plane and while walking through the airport too) and just one or two of your baby's favorite toys for the plane. We also tried our best to feed him on take-off and landing to help with the altitude change and discomfort. Hope this helps! Happy travels!

Hello! Sorry about the confusion. You can use olive oil or coconut oil (or even avocado oil!) for your oil in the recipe. Hope this helps! :)
