Quinoa Banana Oat Muffins (Vegan)

  • I wanted to make a delicious yet nutritious muffin for my granddaughter “Sweet Pea.” So I came up with this amazing vegan Quinoa Banana Oat Muffin that my entire family enjoys. It is a made without flour, oil or sugar. Naturally sweetened with very ripe bananas, applesauce and spiced just right with ground cinnamon, freshly grated nutmeg, cardamom and vanilla powder. Use certified gluten free oats and you have an easy gluten free muffin! This muffin is hearty, healthy and kid friendly yet adults love them too!

    The Recipe
    Quinoa Banana Oat Muffins
    • 20 ounces mashed over ripe banana - about 2 1/3 cups of mashed banana, frozen bananas thawed out is fine
    • 1 cup unsweetened applesauce
    • 1/2 cup prewashed quinoa -dry - uncooked ground into a powder - see video
    • 2 cups Quick Cooking Steel Cut Oats
    • 2 1/2 cups Old Fashioned Oats
    • 1/4 cup ground golden flaxseed meal
    • 1 tablespoon ground cinnamon
    • 1 tablespoon baking powder
    • 1/2 teaspoon ground cardamom
    • 1/2 teaspoon nutmeg - freshly ground is best - see video
    • 1/2 teaspoon vanilla powder or 1 teaspoon vanilla extract
    Preheat oven to 350 degrees.
    In a large bowl mash the bananas using a potato masher or a large fork. Mix in the applesauce. Add the cinnamon, baking powder, cardamom, nutmeg and vanilla powder or vanilla extract. Stir until well incorporated. Add the quinoa powder, quick cooking steel cut oats, old fashioned oats and ground flaxseed meal. Stir until well combined.
    If using metal muffin tins use baking cup liners to prevent sticking or use silicone muffin pans. Using a 1/2 cup measuring cup divide batter evenly into 12 muffin cups. Bake for 30-35 minutes - depending on your oven. They take 30 minutes in my Breville Smart Oven Air on the bake function.
    Let cool completely. May be frozen for future enjoyment.
    Yield: 12 muffins
    Note: To make these Gluten Free be sure to buy gluten free oats.

    So nice to have a recipe for a really filling muffin that's good for you, thanks. Also thanks for including a cup measure for us in a metric system. Also for mashing things a traditional way is to use a cup or mug. Mm nutmeg can't wait to try these.

    I am watching all of your videos from the very beginnning and enjoying you guys so much. I found nutrition facts and Dr. Greger back in July 2017 and got even healthier on whole foods. So I found your channel because you were testing out recipes for the HNTD cookbook! The extras at the end of this video were a nice touch - good job with filming and editing and creating.

      There is nothing wrong with using a microwave oven. Dr Greger has read all the research and the scientific evidence is that they are ok to use. nutritionfacts.org/?s=microwave+oven

    What if you just have ordinary quinoa? You have to soak & wash them & leave overnight? Do I just dry them out in oven to get the dry quinoa?

      Just use oats or you can buy quinoa flakes or use millet and grind it.

      We are still watching and got your nice reply. The lunch sounds good except we do not facebook. We are 80+ and never saw the need for it. We don't have a smart phone either. But, we do face time and get all our video off the net instead of cable and sat dish. So we are not all cave man era and get great entertainment with no bill.

    I just made these tonight. I don't know - mine did not rise; at all. And boy, do they look dense. They're too hot to taste test - so I'm wondering how they'll taste. I got all my ingredients measured out in bowls just like you - and started putting it together. At first you think, no way will there be enough moisture to absorb the dry ingredients. But there was. I was amazed at the fact each cup took exactly the 1/2 cup full of batter. That's what I call a precise recipe. Well, my husband just commented they look like hockey pucks (LOL); sure hope they don't. Always ready with his 2 cents. Well, after I've tasted tested them I'll have to get back and add an update (if I can figure out how).

    I finally made these muffins. To grind the quinoa I used a coffee grinder. It works like a charm! Thank you Tami. I love all your recipes.

      If you use certified gluten free oats they are for sure gluten free. Oats are naturally gluten free but may be processed on equipment that also is used for grains that contain gluten and could be contaminated with gluten.

    Can regular steel cut oats (not quick cooking) be used? I can’t find quick cooking anywhere

      Just put the regular steel cut oats in a food processor and cut them up a bit more before using them.

    Looking really forward to making these. I have a serious reaction to gluten (even cross contamination) and need to be tested for ceoliac disease (test is horrendous) I still bake the good stuff for my family but haven't come across anything really decent that's gluten free for myself - although I did make my regular red velvet cake gluten free and turned out fantastic

    This is such delicious and mouth-watering Gluten Free Quinoa Oats Muffin recipe. These are really very easy to prepare, looks delicious & super healthy. One of my friend suggested me about a very Healthy and Clean Label Food Brand, True Elements and she is very happy about it. Tried these recipe using True Elements Gluten Free Rolled Oats, Steel Cut Oats and Quinoa and they turned out to be super tasty. Would highly recommend it to everyone. Do give it a try :)

    DO YOU USE PROCESSED OILS?
    Do you use processed foods: pasta, dairy, and meats?
    Why not use flax seeds egg for the oil, instead of processed apple sauce?

      No they don’t need yeast. You can skip the baking powder as it only adds a tiny bit of lift to the muffins.

    Great idea to pre-mix extra batches of dry ingredients - anything to save time! Do you find you use the full 32 oz jar of applesauce before it goes bad in the fridge? That's the only thing holding me back from getting that at Costco. Thanks for a recipe that I will absolutely have to try!

      We do use the applesauce up before it spoils most of the time. Of course our granddaughter enjoys eating it. You can freeze the leftover applesauce for up to 3 months. I would portion it out into 1 cup servings making it perfect for the muffin recipe. Enjoy!

      Also, if you store the jar upside down in the refrigerator the applesauce will keep much longer . Also works with tomato products like salsa.

    Not sure what I did differently but mine certainly did not turn out soft in the centre. They are almost as hard as pucks. Will have to soak in a bit of boiling water and eat as porridge I think. Thanks anyway.

      I haven’t ever had a batch turn out that way. You may have over baked them. They are dense and heavy but not dry. Also check the temperature of your oven with a small oven thermometer you can get at a kitchen store. Maybe your oven runs hot and you might need to reduce the baking temp. Remember these are not a light and fluffy muffin like we used to make.

      I don't know because I haven't tried that. I use the quick cooking steel cut oats but if you have regular steel cut oats you can process them a little bit in your food processor to break them up more.

    I am so excited to try these muffins. When our kids were young I used to make muffins all the time for them using what I thought at the time was a very healthy recipe.     OMG these are so good. I bought the silicone cupcake pans and the recipe fit perfect with all your info. One question...has anyone tried or do you think adding some blueberries would work? Maybe little less bananas to meet the 20oz and sub blueberries? A breakfast or lunch meal...had one for lunch with some mixed raw veggies...yummy, thank you!

    Log this recipe, but my husband can't have quinoa or most other grains besides oats. Can I make oat flower instead? He can't have nut flowers either.

      On a whole food plant based lifestyle we have no need to track individual calories. We eat until comfortably full from a wide variety of healthy Whole Foods. If we are in weight-loss mode then it’s advisable to keep our food choices to the lower calorie density foods - see my Calorie Density video for all the details. If you want the calorie information you can use one of the free on line calorie calculators where you plug in all of the ingredients with measurements to get the nutritional information.

      Hi Kristine I am sorry they didn't turn out for you. When we are baking with out flour and using bananas for moisture we have to eye ball the batter and decide if it is too wet - add more oats - or too dry - add more banana. Then we also have different ovens and baking pans so we have to adjust accordingly to our oven, some run hotter than others, different muffin pans act differently and so on. I can tell you that these muffins are dense - moist - not dry, but because we are not using flour they are dense and not a light fluffy crumb like traditional muffins. Whole food, no oil, no sugar baking creates a different final outcome for sure. It sounds like they may have been over baked and they may not have had enough moisture to start with. This is a tried and true recipe that is enjoyed by our followers but we all have different personal preferences and not every recipe is going to be liked by everyone. If you try them again know that the batter should be very wet - you might need to cut back on your baking time for your oven and your pans. Hope this helps!

    I don’t have the quick steel oats is there another type of oats that can be used?

      Use steel cut oats that you process in the food processor to make them smaller. You can use all rolled oats but I don't like the texture that way as much.

    I tried using my 12 pc muffin pan and the size of each muffin only holds 1/4 c measurement. So I now have double muffins. 24 small ones. I think your muffin pan is for 1/2 c size muffins which I think are considered large muffin. Next time I know better. Tami love your videos so helpful.

      I had standard muffin tins and standard size silicone muffin tins and they all hold 1/2 cup - how strange that yours are only 1/4 cup size. Well you get to have 2 per serving that way!     I love that batch cooking idea to take away on the weekends. Also, instead of buying 2 kinds of oats, I take half and pulse in the vitamix to break down- works great.

    Hi Tami. I'm making this tonight. I'm not sure if the 1/2 cup measurement of Quinoa means 1/2 cup before or after grinding them into a powder. Since I already ground them from the 1/2 cup measurement, I will use the entire powder results which yielded one cup plus 2 tablespoons plus 1 tsp. I'm hoping the extra doesn't impact the recipe negatively. I love everything you do and how you do it. Thank you! Have a blessed night!

    May I Ask why the Oat have to be steel cut Oak? Not every Costco carry it! Anything else substitute it. Very healthy recipe. Thanks

      ban nguyen you can use all rolled oats if you wish. The texture will be different but it will work. I use the steel cut oats to boost the nutrition.

      ak s I don’t know I’ve never tried them. The recipe works the way it’s written and I don’t know what will happen with peaches. You could make half a batch and try it. That way if it’s a fail you haven’t wasted too many ingredients.
