@@GetCookingNow Thanks so much for your kind response, appreciate it.I forgot to mention that I passed the line test for the shell cream and was thrilled but it turned a gloopy mass, so I left it in the fridge for a few hours, and dusted my moulds with icing sugar and my rolling mat too and that was the moment of TRUTH when the shell cream came perfectly moulded with the exact texture I wanted.Thanks sooooo much.Hats off to Sheryl your sweet daughter for motivating her parents.
Juliet, the milk cream dough is very sticky. You need to massage it for some time until it becomes soft & pliable dough. Then you can easily mould it into any shape. But Now that you have discovered a new way to make the dough mouldable by keeping it in the fridge. I must say that's a great discovery. Will definitely try it myself to see if it works for me too 🙂

Hey....i will surely try your Baath. my Goan friend..also makes awesome Guava cheese Channa Doce .. As everyone has their way of cooking. Last couple of years I watch her making this amazing goan baath cake.... She adds the semolina raw... Not roasted. She adds cashew pieces and handful of Raisins. But I tell you first time I had this.... And I have forgotten all the other cakes......

Yes Julien, you can bake this in a utensil with salt or sand at the bottom. But we haven't tried it yet. You will definitely find some videos on TH-cam that will explain it in detail. Please check it out! Hope this helps 🙂

Ivy, Follow the steps below to bake Goan Baath in a Pan: Spread a layer of salt or sand at the bottom of a heavy pan. Place a stand on the salt or sand. Preheat the pan on low heat for 10-15 minutes. Put the batter in a greased container and place it on the stand. Cover the pan and cook on low heat for 45-60 minutes. Rotate occasionally to ensure even baking. Cool and enjoy your Baath!

It all depends on the Oven you are using. Or you could use only the top heating for a few minutes to get the shade you prefer. Do try this next time. 🙂
Yes Jenny, you can definitely add a little nutmeg if you prefer the taste, but personally I prefer the taste of Cardamom. It all depends on personal preference 🙂

Venissa, in this recipe you have to use fresh coconut as we haven't used any water. The moisture comes from the eggs & sugar. So if you add dessicated coconut the Baath may turn out dry. You will need to modify the recipe to use dessicated coconut to get the moisture in the Baath.🙂
My Ba’ath had turned very tasty but it became dry 2nd day ,more dry 3rd day and so on. Wat was the reason for dryness. I had baked using baking paper . I followed the same recipe.
Hi Anbaeliza, How long did you keep the batter before baking? Was the Baath stored in an Airtight container after it was baked? Also how long did you bake it. It could be that you over baked it & therefore there was less moisture in the Baath.
I keep it in the fridge overnight removed it in the morning and baked in the afternoon.No I didn’t store the Ba’ath in an air tight container it was kept open. I baked 10 mins more as it looked uncooked on top.Thank for your reply will try again keeping your tips in mind.

Bibiana, it's easier to measure in Cups as the weight of the ingredients in grams is not consistent. You need to take a standard cup of around 240 to 250 ml. And then use the same cup to measure all the ingredients. Also lots of people do not have weighing scales. 🙂
Lata, Cardamom and vanilla are both used in making Baath to enhance its flavor and aroma. Cardamom adds a warm, aromatic, and slightly spicy flavor to Baath. Vanilla adds a sweet, floral note that combines well with the coconut and semolina in Baath. It helps to balance the flavors and adds depth to the overall taste of the dish. Together, cardamom and vanilla make Baath even more delicious and aromatic, elevating this traditional Goan sweet to the next level.
Sure Lata, I will definitely make something with toddy, but unfortunately it's not available easily nowadays and therefore people don't find it convenient to make things with toddy.

Yes Julien, you can bake this in a utensil with salt or sand at the bottom. But we haven't tried it yet. You will definitely find some videos on TH-cam that will explain it in detail. Please check it out! Hope this helps 🙂

Ivy, Follow the steps below to bake Goan Baath in a Pan:
Spread a layer of salt or sand at the bottom of a heavy pan. Place a stand on the salt or sand.
Preheat the pan on low heat for 10-15 minutes. Put the batter in a greased container and place it on the stand. Cover the pan and cook on low heat for 45-60 minutes. Rotate occasionally to ensure even baking. Cool and enjoy your Baath!

It all depends on the Oven you are using. Or you could use only the top heating for a few minutes to get the shade you prefer. Do try this next time. 🙂

Yes Jenny, you can definitely add a little nutmeg if you prefer the taste, but personally I prefer the taste of Cardamom. It all depends on personal preference 🙂

Esther, we used salted butter but you can also use unsalted butter. Just add a little more salt to compensate for the taste 🙂

Ophelia, Final Adjusted Quantities based on 1 kg Rawa
- Freshly grated Coconut: 11 cups
- Fine Sugar: 6.7 cups
- Eggs: 18 (room temperature)
- Butter: 444 gms (room temperature)
- Cashew Nuts: 1 ⅛ cups (around 100-107 cashews)
- Vanilla Essence: 4 ½ tsp
- Cardamom / Elaichi powder: 2 ¼ tsp
- Baking powder: 2 ¼ tsp
Remember to adjust the size of your baking tin accordingly if necessary. Happy baking! Let me know if there's anything else you need.

Can v use Dessicated coconut
Venissa, in this recipe you have to use fresh coconut as we haven't used any water. The moisture comes from the eggs & sugar. So if you add dessicated coconut the Baath may turn out dry. You will need to modify the recipe to use dessicated coconut to get the moisture in the Baath.🙂
My Ba’ath had turned very tasty but it became dry 2nd day ,more dry 3rd day and so on. Wat was the reason for dryness. I had baked using baking paper . I followed the same recipe.
Hi Anbaeliza, How long did you keep the batter before baking? Was the Baath stored in an Airtight container after it was baked? Also how long did you bake it. It could be that you over baked it & therefore there was less moisture in the Baath.
I keep it in the fridge overnight removed it in the morning and baked in the afternoon.No I didn’t store the Ba’ath in an air tight container it was kept open. I baked 10 mins more as it looked uncooked on top.Thank for your reply will try again keeping your tips in mind.

Why is the sooji roasted?
SD, By roasting sooji it will become non sticky & free-flowing hence it will not form lumps when cooked. It also speeds up the cooking process as it is already partially cooked.

Bibiana, it's easier to measure in Cups as the weight of the ingredients in grams is not consistent. You need to take a standard cup of around 240 to 250 ml. And then use the same cup to measure all the ingredients. Also lots of people do not have weighing scales. 🙂
