I am from mumbai, i do this baath cake every year for Christmas. When we were small, my mom use to use fresh coconut, later we tried doing it with decicated coconut. We mix it before going to bed and in the morning we give it in the bakery to bake, since we do in large quantity. All my friends and neighbors love it.

I have just made this cake using another recipe and then saw your recipe. Yours was significantly different after the 8 hours and getting the Baking powder to fizz and ...oooo .. the nutmeg! It also rose better and I bet it isn't as crumbly . So I AM going to try yours....Thank you for combining the tradition with a twist - and to come up with , hopefully, an authentic taste. I shall be back!

Yes Cheryl, you could replace fresh coconut with desiccated coconut. But after soaking if the batter becomes too dense you can add just a little milk to thin it out.

One is a cake the other is a cookie. Although similar, they are yet very different in texture and flavour😋🎄

If it is too hot you can refrigerate it but make sure it comes to room temperature before adding in the baking powder.
