@Sukira69 I've been to Mauritius many times. The best Chinese food I've ever had was in Port Louis. Mind you, I lived in Malaysia for 6 years, where's there's a very big Chinese community. But the Port Louis Chinese restaurant was far better.

Mix 125g pumpkin preserve, 125g sultanas, 125g raisins, 50g dried black currants, 65g ginger preserve, 65g chow chow preserve, 65g candied orange peel, 65g dried cherries, 125g chopped cashews, 1 tsp almond extract, 1 tsp rose extract, 1 tbsp brandy, 1 tsp honey, and ½ tsp allspice in a bowl. Cover and let it rest for 3 hours.
Beat 6 egg yolks and 125g sugar until pale and creamy. Add the zest of 1 lime and mix well.
Add the fruit and nut mixture to the egg mixture and mix gently until fully combined.
Toast 125g semolina in a dry pan until golden and fragrant, then mix in 125g unsalted butter until smooth. Add this to the batter and mix well.
Combine 15g flour and ½ tsp baking powder, then stir it into the batter along with ½ tsp vanilla extract.
Beat 2 egg whites until soft peaks form, then gently fold into the batter.
Pour the batter into a prepared cake tin lined with 2-3 layers of parchment paper to prevent burning. Smooth the top with a spatula.
Bake at 160°C (320°F) for 1 hour and 20 minutes. Check for doneness with a toothpick.
Let the cake cool before removing from the pan. It gets better as it rests, making it perfect for the holidays!

Cant we use rice flour instead of semolina
You can use rice flour instead of semolina, but the texture will be softer and less firm since rice flour is finer. Toasting it might help add flavor, but it will not give the same nutty, coarse texture that semolina does. It is worth trying if semolina is not an option!

It really depends on where you live, but these ingredients can definitely be tricky to find! I managed to get most of mine from specialty stores locally, but I have also included some Amazon links in the description below the video that might help.
