I love turkish food. And this pickle are usually on display in turkish shop looks like with no color next to olives and cheese. But damn I tried it and it was delicious even carrot. Now I have 4 liter jar at home and drink even brine for taste, vitamins and salts which are in hot weather sweated out.
A friend gave me some turshi pickles yesterday that she made herself, and she said she heated up the water with the vinegar and added garlic, turmeric and other spices before covering the veg with the mixture. The pickles are very tasty, and have a lovely yellow colour.
I agree, this was very simple compared to other Torshi. I am not Iranian, but my brother in law is, and I am making this for the first time. Another recipe I found used more spices..

Best way to do it is in a large deep pan(one you use to make tea) add salt, vinegar and mineral water and all the spices(Black pepper, red pepper chilli flakes, bay leaves, what ever else) and cook it for a few minutes and add all the veges in too and cook for a few more seconds. Then wait for the mixute to cool for a bit then with tongs add everything in layers lemons and chillis at the botton and lvegetables ontop. This way everything is covered evenly in the brin water.
Thank you,but i have 2 question to ask, first can i use sea salt, also why keep it in the fridge, usually can be store in a cool and dark place out side of fridge, and also the vinegar is it white vinegar...i guess 3 question all together !
Dear Sameer, In this recipe I use white vinegar. You can use any kind of vinegar, as long as it is at least 5% acid. Each vinegar adds it’s own personality to your pickling project of course.
you can make your turshi with less vinegar, so not so sour. But it cannot last for so long.Therefore you can make smaller portions of turshi with a little vinegar in it.
Is there anyone here who really knows, why my Shoor is even after 4 weeks, still is hard as Oak wood 🥴😅 I did EXACTLY as she showed in this vid. PS: cooking is NOT in original shoor recipes, so I just washed the veg. And let it dried completely overnight, but after 4 weeks only cucumbers are ready and for rest u’ll need some steel teeth 😎
