Super easy 1-2-3 pickle recipe Cucumber, carrots & onions

  • This is a super easy pickle recipe for anyone to do at home! It follows a common formula used in Sweden where sugar is used instead of salt. You can also choose to add some salt to the mix as well if you want to.
    For one jar of about 1 liter in size you need:
    1 Cup of 12% vinegar
    2 Cups of sugar
    3 Cups of water
    Fill each jar with herbs and spices to your liking and any vegetable you might want. Don't forget to turn the jar upside down afterward.

    A lot of people are commenting on the amount of sugar. Remember, this is a traditional Scandinavian recipe. Pickles come in many different forms and variants and sugar is most definitely a common ingredient for some cultures and styles.       The last guy I saw a video on doing this was doing it with onions and he took equal parts water and vinegar and put a certain amount of salt in the mixture while it was boiling on the stove top, he then poured that into his jars let them cool, put the lids on and then stuck them in the fridge.

      It's true that one should only get the taste of the blend, than the taste of the sugar up front
      There are many experts in India,
      who will avoid normal potatoes which are sweet!
      The sweetness, according to them, is due to the potatoes which have been in cold storage. This is a fact!
      One is as they say, conditioned to going back to their personal preferences when it comes to sweetness.

      @@the1tigglet The recipe you've seen probably used a vinegar with 4-6% acid concentration. In this recipe it's over 10%

      Try pickling these vegies as they are good for the "gut"..you never know you might go on to bigger and better things.
      Like you i am bored out my brain, usually now we would be in New Zealand seeing friends, family and just enjoying that beautiful country..
      Will not risk going into other states and i haven't seen my son for 15 months..mind you i am not the only one in that situation.

    Thank you so much, I love this picking recipe, I make pickles but I use salt a little salter than cooking food and for each jar I use 1 big spoon of sugar only and I use vinegar too.
    I learned this recipe from my grandmother God bless her soul in Jordan.

      I think to get rid of the extra water, other wise the cucumbers will release water for a couple of days.. I had that problem. Bottle over flowed...

    How long can you store this without it going bad? Wand to send out for Christmas, how long can they stay unrefrigerated before going bad?

      It all depends on the storage temperature and the pickling fluid you use. These will stay fresh unrefrigerated for some time as long as you don't open them too often. Once you start consuming these you should keep them in the fridge. In reality, a few weeks or months is realistic if you refrigerate them. But you should not be worried about the room-temperature if you want to make them as a gift, as long as they stay sealed. Think about all the canned goods you see in the store and that often times they are not refrigerated for a very long time. As with any type of food you should try to consume it within a reasonable time to avoid throwing out good food.

      Foods that are not processed in Water Bath method or processed in Pressure Canner method, do not have long term shelf life. The ones pickled as shown in the video should last a good few months if refrigerated once opened. I think the ones at the stores in the USA are processed with canning methods and also have preservatives added to them.

      Salt is indeed a more popular alternative in many areas around the world. Salt and sugar are both good at preserving food and preventing micro organisms from growing. The ratios and recipie itself is a traditional Scandinavian method for preserving vegetables and meats. I will publish another recipie using salt instead for my next video!

    Last time I made pickles similar to this, couldn't even wait a day for the goodness to settle before eating at least one jar clean. Nothing better than the home made stuff, in my opinion.

    From where do you get 12%vinigar liquid. It is not available in market freely. Only 5% is what you get in the market !

    You cooked your pickles pouring that hot brine on them. Cool it first for crunchy pickles.

    Fun vid! My grandmother did her peppers this way and my grandfather loved the pepper sauce. She did sterilize the jars as if canning and got the lids hot. My uncle tried to figure out her recipe. He tried canning, every way from Sunday and couldn't get it. We got a good laugh from listening to him tell of his adventure. I don't know if she ever told him. She let me watch. haha.

    Try beetroots. Use ground mustard seeds for the tartness instead of vinegar. It may take 48 hours to pickle but worth the wait.

      Water should be cold because you can kill bacteria otherwise. Also do not add vinegar. Pickling is the process of fermentation and vinegar is like sulfuric acid if compared to lactic acid in real pickles. Mellow!

    These look simple and good. I only made pickles once 'a million years ago' but that was it..
    The only thing close I used to do sometimes is put some vinegar and a little sugar in a bowl of canned beets. It was my quick way to make pickled beets.

    Cheers! I'm going to try this, I love sweet and sour. I also like making pickles with a mixture of white vinegar and white wine (proportions half pint vinegar and quarter pint wine, plus a teaspoon of salt or more if you like and a table spoon of sugar, plus a bit more until it tastes just right.

    The problem with this recipe is how short the shelf life is. A month to two months is not going to save your summer vegetables for the winter. To me that would be the objective. I can keep fresh vegetables from the garden in my fridge for a month easy.

    I want my pickles a little less aggressive and I have been adding only 1/2 tablespoon per cup of pickling liquid

    I understand the fact that sugar can be used for preserving. But I'm one of those people that doesn't like any kind of sweet pickle. I hate sweet relish. If the mustard pickles are overly sweet then you ruined them. Don't add sugar to your pickled beets... they already have lots of sugar! But it's all good. If you're eating them then make em the way you want. Just don't tell me they're awesome cuz I'll be lying when I agree with you...

    I’ve only ever seen 5% vinegar in my local stores. I think I would therefore have to double the amount and reduce the water.

    i followed ur method and made the pickle, only diff i made is used Apple Cider vinegar and put all the 3 vegetables in one jar as i don't have enough space fr 3 jars in the fridge 😂😂...the pickle was really nice to have with meals sometimes in stuffing. Now the veggies are over but i have half jar of the brine, do i need to throw it ? or i can use it for next batch or for anything else ? plz do suggest

      You can use pickling brine twice, right away. Just toss fresh veggies in it. You can do this with jars of store bought pickles, add new cucumbers, but keep them refrigerated. If the brine goes cloudy, toss it. Don't use over twice.

    in india use worm oil and to much mustard and salt . and to much read chili .no use of venegar

    I would never have known if I haven't watched this video that pickle is sweet also but in my tradition pickle is spicy and I'll stick to the spicy one as sweet pickle doesn't attract me.

    I cant wait till the gardening season kicks off then Ill be pickleing non stop. Nandoes have a pickled carrot salad mix, called rainbow salad bowl. I will be trying it next time i harvest :)

    Can you please make a video about how to EASILY include pickles in meals? is it an appetizer before the meal? Is it a side dish (like meat & potatoes/rice and vegetables)? Is it a garnish? is it part of a salad? I'm not looking for complicated recipies that include pickles. I have pickled cucumbers as a snack but I'm asking how to use pickles (any pickled vegetable) in a meal. Buying fresh vegetables in the winter (I'm in Canada) will become too expensive; so I'm looking to use pickled vegetables in my meals. Thanks
