    Thank you Annie. This is my girlfriends favorite but it was always takeout. Then one day when we had some shrimp that needed cooking I looked up the recipe. My gf loved it better than take out! Thank you!

    The back of each shrimp will be open slightly after deveining. This will certainly give a BETTER taste to the shrimps during the deep frying procedure and particularly when they are stirred fried slightly at the end with the salt and pepper which will get into the meat of the shrimps. It is a day and night difference with and without the back slightly open. IF you have tasted what deveined shrimps tasted like, you will immediately noticed if they were NOT deveined !!! YES, it is that serious !!!!

    Ah close to what I was looking for as it’s made similarly, but the taste isn’t the same. I had this dish on rare occasions when my previous boss invited me to eat with them, and it’s typically made with lobster but sometimes whole shrimp. The dish was sweet but I couldn’t pinpoint the taste. I’ve been trying to recreate that taste for a bit. This is a good start for me though

    You'll get a better result if you use corn or potato starch rather than wheat flour. (even rice flour is better)
    And I would add Sichuan peppers to the white & black mix. That _'mouth tingle'_ is part of the experience of the recipe.

    Great recipe! However, please clean your frying pot and the back of shrimp, also cut off sharp peak.
    Final product looks delicious.
    The reason why I have mentioned to be clean, is because the whole world is watching and learning!

    Only question I have is if these shrimp are "fast and easy" to make like she said at 0:06 I wonder why it takes so long for the Chinese buffet I eat at to get them out!?

      I've been to expensive to low end buffets, all seafood in these places are rubbish. We are eating seafood 1 grade higher then cat food.

      Novatsi, I have to agree! Not only that but a lot of these people who work at these Chinese buffets look to me like they're "just off the boat" and wouldn't know good hygiene if it walked up and kicked them in the butt!
      About 20 years ago my wife and I ate a Chinese buffet; long story short my wife was so sick after eating there she almost had to go to the hospital. Half of the cooks looked unkempt, dirty and spoke only broken English or no English at all. Well about a month later I read where the local health dept. had shut that same buffet down due to multiple cleanliness and hygiene violations. It reopened about a month after that with an "under new management" sign in the front window but we never went back.

    I love fried shrimp! And I love jalapenos! I have never made them though. I usually got them from a restaurant. Can not do that any more. Love this recipe. I want to try it but I do not like buying it with the shell. Is there a cooking time I should adapt to, when cooking with out the shell?

      Should just be flash fry if you don't have the shell. You can also coat the shrimp with flour before frying or make a batter for it using some egg and flour.

    Did you clean the shrimp? I have never done this before and was under the impression that it was necessary to remove the intestines and what not. I ask because shrimp that have been cleaned tend to open when heat is applied, or so I thought. Thanks.

      You leave the shell on and eat the shell up to the tail. You are supposed to devein the shrimp cutting through the shell with a sharp knife(I prefer a shorter knife with jagged teeth as to work its way through the layers of armor). You also cut off the mouth of the shrimp or remove the whole head if youre not asian(asian tend to leave it on though but cut off the sharp mouth).
      It cooks really fast too so no sooner than you fry it, its done in less than a minute usually. My critique on the recipe is that I use cooking wine(asian rice wine being the best and sherry being just as good) once I start stir frying and I also use a garlic clove chopped and I sprinkle a tiny drizzle of sesame oil as I stir fry(I also sprinkle some umami aka MGS and before anyone questions that do your research and stop following the crowd...MSG is not harmful nor proven to be though too much can ruin some of your flavors).
      Some people use corn starch instead of regular flour, some also use egg in the batter to add more of a texture. I tend to let my shrimp rest in a few drizzles of cooking wine and a light sprinkle of garlic salt before I batter them. This is one of my fav foods! Dont be afraid to use plenty jalepinos too because its kinda hard to get the heat to transfer onto the battered shell.
