The Best Vegan Chocolate Chip Cookie Recipe!! Also Gluten Free! So gooey with crispy edges!

  • These gooey on the inside but crisp on the outside chocolate chip cookies are vegan and gluten free! You can use gluten free flour, dairy free milk, and a vegan butter(I would recommend something that is a butter substitute rather than just oil or shortening).
    My brother’s friend that is a cookie lover said this is one of the best cookies he’s ever had; and he’s not vegan or gluten free!

    Vegan Chocolate Chip Cookies Recipe
    Ingredients:
    Shortening (or Vegan Butter/Coconut Oil): 1/2 cup (120g)
    Brown Sugar: 1 cup (200g)
    Granulated Sugar: 3 tablespoons
    Dairy-Free Milk (e.g., Unsweetened Almond Milk): 1/4 cup
    Vanilla Extract: 2 teaspoons (10ml)
    Flour (Gluten-Free or Regular): 1 and 3/4 cups (240g)
    Salt: 1/2 teaspoon
    Baking Soda: 1 teaspoon
    Dairy-Free Vegan Chocolate Chips: 1 cup
    Directions:
    1. In a mixing bowl, combine shortening (or vegan butter/coconut oil), brown sugar, and granulated sugar. Mix until well combined.
    2. Add dairy-free milk and vanilla extract to the sugar-shortening mixture. Mix until thoroughly combined.
    3. In a separate bowl, combine flour, salt, and baking soda. Mix well.
    4. Gradually add the dry ingredients to the wet mixture. Stir until a cookie dough forms. Use a whisk or spatula for easier mixing.
    5. Fold in the dairy-free vegan chocolate chips until evenly distributed throughout the dough.
    6. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    7. Scoop out portions of cookie dough onto the prepared baking sheet, leaving space between each cookie.
    8. Bake in the preheated oven for approximately 9 minutes or until the edges are lightly golden brown. The cookies will be soft and gooey when done.
    9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
    10. Optionally, sprinkle a little salt on top of the cookies for enhanced flavor, especially if using gluten-free flour.
    These cookies turned out so good. I had my friends try them that don’t eat vegan or gluten free and they couldn’t tell that they were different, they liked them!
