    I just made these yesterday’s coincidentally and I have the quarter size epicurean pans (two of them) and I usually make the ground beef version because I’m adding it to lasagna so I never worry about turning them into noodles other then cutting them to fit my pan. This time I decided I would try the meatless version and I couldn’t believe how much the pasta looked like regular cooked lasagna noodles!! It turned out incredible!!! I was able to make the most incredible lasagna that I’ve ever made and that’s even with regular whole wheat pasta noodles!!! These are incredible lasagna noodles and they held together and I found the easiest way to get it off the silicone was to hold the silicone liner and peel it from the pasta and it came away so much easier then trying to pull the pasta from the liner. If you pull the silicone liner away it leaves the pasta perfect in one complete sheet and doesn’t stick at all as long as you remove it when the pasta is still warm. Super simple and I just love it! I’ve used the noodles just cutting them with a knife after rolling them up into a cylinder shape and just with a very sharp knife slicing whatever thickness I want and then I use them in beef stroganoff and chicken noodle soup and of course lasagna and I’ve found they freeze fantastic and they reheat in the soup without any difficulty at all and they are perfect!!!     For the kitchen aid option I’m kind of thrilled because I already owned one and was disappointed every time I saw it sitting in its place thinking I would never use it again. I ha bought it for a Xmas gift for myself one year.This made me quite happy actually.

    Try recalibrating your stove. I've heard newer ones that are electronic are capable of it. Mine is a 70s model so just sharing what I've heard. Steve at serious keto was the first i saw. He's the gadget guru. 😁❤️

    inspiration from you once again! While looking at your sheets I thought about how I used to make ravioli. i have a mold that you put the sheet on then add filling, top with another sheet, then roll a rolling pin over the top to seal and cut. I'm thinking undercooked keto pasta might wok with a little brush of egg to help seal. Now I have to try it. Just imagine keto ravioli! Thank You

      Yes, I've been pondering this as well! The sealing part is the tricky part I think but maybe egg would be enough to do that!

    We make egg noodles all the time, we just let the noodles sit on a towel til they are dry or some use a rack.

      The last batch I made was especially delicious because I only had a little bit of fat in each of my respective jars (beef tallow, bacon fat, pork fat, chicken fat) so I mixed it all with my egg and vinegar for mayo. Soooo good with the egg for pasta! Yummy. Thanks for giving me all these great ideas Anita! You have made me a better cook.

    I have the silver roller and I’ve had it for years. My sister sent it to me as a gift when I was in my 20’s. She taught me how to make pasta from scratch and I used it maybe 3x?? It doesn’t connect to my current counter at all. I saw Alton Brown connect it to an ironing board and I was thinking of using that, Now I don’t make real noodles, but maybe I’ll try it. I usually just slice my Nili crepes into noodles with a sharp knife.

      It will work with Nili's crepes! Maybe cut them in half first and run them through!

    Pretty cool. I would go with the cheap as I am cheap and maybe I try them on my egglife wrap recipe and make them into noodles

      @Alan's Awesome Keto World...me too, it looks easier. I have a manual pasta roller, haven't used in years. I'd end up giving up and using a knife rather than fidgeting with trying to get the noodles started. LOL.

    Depending upon where you live, you can find canned roast beef and pulled pork. Walmart and Costco have a canned beef that is really tasty. I may give them a try

    I can type it in myself but I just wanted to point out that the ingredients, and their amounts, are not the same as the recipe links posted. I find CopyMeThat service very helpful and it's great to use printable recipe to save to that service. Again, not trying to be a pain, just reporting that, unless I missed the exact recipe, and again, I can make notes from your video. I really do appreciate your videos, thumbs up and shared.

    love this, thank you Anita, very helpful in deciding which one i’d want, definitely not the silver manual one, i’d get so mad at it i’d throw it out, i think the little tool would be good. I’m wondering if you rolled over the pasta again but just a bit over the row u cut if u could make spaghetti , 🤔. So happy our weather is cooling down, yay ❤️

    I was watching one of your other videos and you mentioned the LMNT electrolytes. Is one serving a day the recommended amount? I heard something about the possibility of taking too much potassium. Love your videos!!

    I use the pasta cutter(the one with the variable sizes) for polymer clay. On mine you can adjust it for the thickness of what you are feeding in. Might make it easier for your noodles?

      On two of these cutters, the roller can be adjusted for various thickness, is that what you mean? I should try that before cutting!

      Yes, I've done chips by baking it super long at low heat. I have not tried frying them.

    How do these noddles compare to a normal noodles? Taste and texture? IMO, that manual maker seems more trouble than it’s worth. I would opt for the kitchenaid maker.

      The noodles I made in this video are quite good for soup and casseroles. You can't really compare to a normal noodle as there is no gluten to make them chewy. My original pasta noodles are similar to this but more noodle like (people tell me this!) so maybe check those out here: ketogenicwoman.com/keto-pasta-noodles/

    Did you weigh the Turkey/ chicken after draining? I have found the , so called 12 Oz cans of Costco chicken only actually have 5-7 Oz chicken. So I’m asking so I know how to adjust amount of egg white. Thanks!

      I don't have a recommendation because none of the breads I make would work in a bread machine! THere is no real dough or any kneading that happens. Maybe search for someone making keto breads that use more traditional ingredients?

    Do you put any flour on them before you cut them? No right?! I don’t have a silicone mat and can’t buy one. Can I put it on parchment or grease the cookie sheet? What do you think? Thank you for sharing!

      You can put them on a parchment paper, it will get a bit wet and wrinkly but will will be ok! DON"T put them on a bare pan with spray or oil, you may be scrubbing and soaking for days on end! No flour needed or wanted for the cutting!

    Do you have any ideas for making this into orzo noodles?
    I'm looking for rice replacement other than cauliflower.
    Can egg white powder be substituted for liquid egg white?

      I saw someone make orzo like things using the viral noodle recipe and running the mixture through a colander with holes. Yes to the egg white powder, you'd have to check the back of your container to get reconstitution instructions and go from there!

      Yes! I have done it and the paper gets a little wet and wrinkly from the batter so I do prefer the silicone. But it does work!
