Since you made this a few times I was hoping maybe you’d be able to answer a few questions about this video: -after i take the chicken out the oven the first time like after cooking it that first 30 minutes , do I have to unwrap the chicken from the aluminum , and then just stick the chicken in the oven to cool for about 30 minutes? Or is there something else I was supposed to do during that time the chicken is cooling ? - the third time I put the chicken in the oven it’s to cook for 15 minutes with sweet chili sauce and ketchup , do I wrap with aluminum then as well? Please let me know! Trying this tonight for sure! Thank you very much in advance !

This is my favorite chicken and I probably cook it up to 230 times a year and give it out to my co-workers, and do it at large events. Real Jerk Chicken is reeaaall work! People only see what’s on the grill, but don’t realize all the work/ that goes into one man cleaning, prepping, and bagging 1,000+ pieces for an event. Real jerk is appreciated by anyone who likes a little or a lot of spicy flavor on their tongue. It beats fried chicken hands down, but over hot coals with some type of fruit wood (not a lot) for added flavor will step it up. I’m not from Jamaica, but I was taught by a pro. Again,thanks.

@Rick Steel you are also correct I flew a mission to Hawaii to Miami Florida. At the time Hawaii’s food game was weak (jerk chicken was trash) l landed in Miami. The Jamaican food was mouth watering done just right and believe it or not the beaches are better in Miami. Also I was surprised I had some Jamaican food in Okinawa it was incredible. The woman and her husband both Japanese lived in Jamaica for 25yrs so when they moved back they brought the culture of the food with them. I’m stationed in Japan now there will be a Jamaican festival in July I’m interested in the foods that will be there.

You’re supposed to add other seasonings before adding the jerk. Go watch the Jamaicans make it…they add other seasoning. You may have used too much jerk if it was too salty.
Looks great, made it 2 ways, i did marinade overnight, cur slots in skin(saw on tv lol), the walkerwood powerful, think used too much🫤, did some as you did, and some on baking sheet with rack, they baking sheet on rack was done little faster, crispy skin, juicy, but no sauce for rice, tyvm tc
I made this for my grandson and we loved it. I am now making it for a second time. This is my go to recipes for Jerk Chicken. I use the hot and not the mild. Took the advice and I let my chicken marinate 24 plus hours. MMM Good! Next I will try this on the grill.

Instead of using the sweet chili sauce use the jerk bbq sauce made by the same people that make that paste. They also make a jerk marinade. I bet you get better flavors with those vs Asian sweet chili sauce

If people cannot handle spicy food... Do not try this at home! Lol it has a kick to it!! For those complaints, this is oven baked jerk chicken not open fire roasted and not jerk sauce made from scratch so why would you expect an EXACT jerk taste! Oh yeah especially if you let it marinate a couple of hours it's better for it to marinate overnight so it will marinated more properly better delicious the next day.
Looks good man, flavors on point, like you said isnt authentic. If cut slits in skin while marinade it gets more flavor, sweet chili sauce (thai chili sauce) better off making own cuz simple, but i too buy on occasion, the great value thai sweet chili sauce is dirt cheap and better than any brand tried👍

Right I made the mistake of adding additional seasoning and it was too salty unfortunately 😔😩 the sauce is all you need!!

I do mine opposite, roast high heat 30 mins. Cover bake low heat 1 hr. Uncover drain broil on high 10 mins
