I can imagine my grandmother ages ago as I heard from my mother, preparing more than 1 bread for 6 children for the whole week ,I felt sorry for her. 1 tablespoon of salt would kill the yeast and make the bread very salty. A tablespoon of sugar and a teaspoon of salt seems more likely to be the case. The sugar will help the yeast and the salt to bring out the flavor.

Add vinegar to the water then to the dry ingredients. Mix until combined. Put in a greased loaf pan and place into cold oven. Set oven to 390F (non-convection) and bake for one hour. Take out of pan and cook on a rack. I also make a gluten-free version by replacing the spelt flour with 300 g King Arthur’s Measure for Measure and 200 g buckwheat flour. I also sometimes add raisins. When using gluten-free flours I increase the water to 500 ml. This is a very dense bread and cuts a bit easier the next day. But you still need a sharp bread knife - and be careful. Enjoy

Will definitely try your recipe. I grind my flours with a stone on stone mill & may mix it with rye and use caraway seeds along with the flax seed. I am 66, a great gramma writing from North Pole, Alaska. Used to manage the fair Bake-Off and won with my rye bread. Just can’t beat freshly milled berries or seeds. Commercial flours have no bran, to avoid it going fowl. Have used the mill since 1985. It’s heavy & a workhorse!!

If you have or can afford a KitchenAid stand mixer with a dough hook, that works great. I use it for almost all my bread even though I could hand knead if I wanted to.

I’m sure time is the same in the USA as it is where you are. 1 hr + 10 min + 30 min + 5 mins = 1 hr 45 min not 5 mins. I’m confused how this is shorter. Please do not promote bread that is ready in 5 mins that takes almost, if not over, 2 hrs to make. It is misleading. I’m sure the bread is delicious. It was just a click bait technique that brought us all here to view this video. The recipe is not bad, but the execution sucks. She uses far more than 25 ml oil from the looks of it, the kneading with the spatula is really bad for the dough, the intermediary folding is simply brutal. She is stressing the dough greatly, the shaping and scoring techniques suck and the bread is definitely undercooked.

Greetings: It's been some years since I made bread in this manner... I always liked using organic ingredients, unbleached flour or a mixture of whole wheat flour. I baked it in regular bread pans, or muffin tin for rolls, and even medium sized flowerpots. It was wonderful to make, eat, and share, and the taste was great! When the remainder dried out, I'd make stuffing from it as a side dish with poultry, etc. This recipe is quick and simple, and surely takes me back some 30+ years, a little less than half my life ago. So, natural cooking is high on my list, and this is a nice way to restart an earlier practice in my life... I don't believe the entitled video is misconstrued or misleading; baking takes any recipe a bit longer, but it's worth waiting for. Blessings and Thanks Much (or should I say "Munch")
