I heard an arrangement of this for a wedding (of course) but the bride also came down after the bridal party to the canon and the organist was AMAZING! He pulled all the stops for her and it was so incredibly moving and the crescendo brought tears to my eyes!
My wife and I used this song also! We both got goosebumps when we met with the organist to go over song selections, and when he finished this song we both said "Yeah that's the one", while wiping tears haha. When the wedding party was making their entrance, they closed the church doors so my wife and father in law could stand behind them. Then he timed the higher octave with when the doors were opened and I saw my wife for the first time... I was a mess lmao. I'll never forget that, it was the perfect touch.

I am a keyboard player, and I have always wanted to perform Pachelbel's Canon and Jesu Joy of Man's Desiring on a big church organ like this. I would just have to get the hang of the foot pedals because I don't normally play organ, so I am not used to playing a foot part.
really appreciate your observation...I was a church organist...having studied ONLY organ and though I played piano too...I had limits(left hand technique....I had not studied on the organ) but I could do pedal work limited...not as good on the right foot upper octave....now retired... I suppose there is no perfect study for the complexities of keyboard instruments
