    ALL heavy whipping creams have .4 grams of carbohydrates per tablespoon. The manufacturers don't have to report on heavy cream labels this amount. 1 cup of heavy cream has 6.4 carbs.

      I also only purchase 0 carb HWC but know that the zero is allowed to be reported when there is 0 to .4 per serving. So I always figure .4 per tablespoon which does make it 16 x .4 per cup before you add in the milk powder. Sorry. Wish it wasn't so.

      I ran the numbers. For 1 cup of milk with your new recipe it was still right under 1 and a half carbs. That's not so bad.

      I wish the labeling laws would change to disallow the number fudging. It’s important for those of us trying to minimize carbs and especially so for people like Victoria that need to stay in ketosis to manage epilepsy!

      Yeah, I found it unbelievable that someone who focuses so much on low-carb, didn't know that it's not 0g but just under 0.5g, and, rounds down to 0g on nutrition labels: That's why you will see 1g for Half & Half because it is 0.6g/Tbs & rounds up to 1g.

    I don’t drink milk very often. Her recipe gave me the idea that if I need milk for a recipe I use 1 part heavy cream to 3 parts water and it works!

    Anything under 1 carb per serving is considered 0 carb, that does not mean it has 0 carbs they are just hidden carbs.

      I think technically the rules are .5 grams and less is 0 but above rounds up.

    Food manufacturers are allowed to label a food as having zero carbs if it contains .5 grams per serving (which in this case is 1tbsp). Therefore a cup of this heavy cream would contain around 6.5 carbs.

      Manufactures deceive us on the label sometimes. That is true about the carb under 1g don't have to be reported. Also, just a note, when a product says zero sugar or no sugar added, that doesn't mean it don't have carbs in it. Manufactures are trying to play on our ignorance. Now if a label said that it has zero glycemic effect on your glucose level, that's a diff story.

    Your heavy cream still has carbs. Total carbohydrates is a required listing unless there is less than 1 gram, at which point it can be expressed as “contains less than 1 gram,” or if less than 0.5 grams per serving, it can be expressed as zero. Beware of hidden carbs.

    Just a helpful note from my heart. Victoria, there is carrageenan in your creamer. I used to buy protein shakes that had that in them and it caused my son to have terrible stomach issues for a long time and we didnt know why. Carrageenan is commonly used to thicken foods, but it has no nutritional value. Scientists believe that carrageenan can induce inflammation and lead to chronic illnesses such as diabetes, digestive disorders, heart diseases, neurological disorders and even something as serious as cancer. Please look for a cream that doesn't have it. Im so thankful for all your videos and how they have helped me and I just wanted to share with you a helpful thing I learned as a Mom. Prayers for many blessings in your new home and kitchen :0)

      My stomach blew up and was tight as a drum from the carageenan in almond milk. Took me a will to figure out what was going on.

    This is a Godsend! I just walked in the door from my Publix grocery store where I found out they stopped carrying Rebel milk (1g carb/cup). I had grown to depend on it in my cold brewed coffee toddy drinks and my low carb cereals even though it was in excess of $6/half gallon. Thank you Victoria, and I havent seen it mentioned in a while so thank you also for your testimony!

    No, ALL heavy cream has 6 or so carbs PER cup. That's .4 carbs per tablespoon. It's the serving size game. They can round down to zero legally if the serving size is less than half a carb. This recipe is still nice and low carb, but the heavy cream does contribute almost 5 carbs to this particular recipe.

    I just add water to my heavy whipping cream to make milk. Easy peezy!

      Yeah, I have tried that. It is easy, but the taste and texture aren’t quite right. Milk has a sweetness to it from the lactose that is missing in cream. And the xanthan gum gives a nice silky texture in addition to helping to emulsify all of the other ingredients.

      Same. And if I’m having a keto cereal I’m going to add sweetener to it because that’s what cereal life is all about lol I don’t even measure, eyeball it in the bowl as I pour it over the cereal. Stir quickly so the water doesn’t sog your cereal. Perfect for me.

    Hello, Victoria,
    I really hate to tell you this, but the label on the heavy cream is deceiving. 3/4 cup of heavy cream is actually 5 carbs. The reason that your heavy cream shows 0 carbs is because the serving size is 1 tablespoon, so the manufacturer can get away with saying it is 0 carbs. However, 5 carbs per 3/4 cup is not bad, considering. Please adjust your carb count for your milk. Again, I apologize because I hate telling you this 😔

      Any time I am dealing with dairy, unless it butter, I go ahead and assume half a carb per tbs until changes in nutrition label regulations change where I reside...😒

      Yep. If you add the 3/4 cup heavy cream as she suggests (for 1/2 gallon), that's 5.1 carbs. Plus 6 carbs for the milk powder, that's 11.1 carbs per 1/2 gallon (64oz). Which is 1.4g carb per 8oz cup. Still phenomenal, just not quite as low as she thinks.

    I'm fairly new to your channel. I found you through highfalutin low carb when' I made his dream biscuits with your 2.0 flour. I've been loving everything I've made with it. I made peanut butter cookies the other day and now I've made this milk to drink with them. I didn't think much of it at first when I tasted it after first making it, but I let it chill in the fridge overnight and OMG! This stuff is amaze balls!!! It really tastes like whole milk! I've been mixing HWC with water for recipes forever, but this kicks it up a notch so it's actually drinkable.
    I also don't truly like the flavor of nut milks and I just thought I had to deal with it... not anymore. You rock! I will be following. I started some of your keto sourdough this morning too and I can't wait to try it next weekend. It's going to miss Thanksgiving, by a day, but it's just me and my husband so the stuffing can be late . Thank you for doing all this work and sharing.

    I have made a few of your recipes already. 👍🏼I am Ketogenic after Carnivore & after AIP.
    ✅ I recently had to find some organic HWC. My husband has to grocery shop ( I am an Airborne Reactive Celiac, so I cannot breathe in gluten particles in grocery stores…& we have to wet-wipe everything that enters our home ), anyway, he had just been speed shopping & sometimes ultra pasteurized HWC with long list of ingredients would get thick but not whip into light, airy & fluffy whipped cream. 😑😮 So I politely told him he cannot buy anything like that anymore with all those ingredients! 🤣
    😡 It’s so upsetting all the ingredients they put into everything & I am at the mercy of my wonderful hubby who is doing his best in a very difficult circumstance.
    No, we cannot afford shopping services & their fees. I mean, it is just so difficult, even my husband makes mistakes…

    Have you used the milk to make Hot Cocoa/Chocolate? I use heavy cream and almondmilk. The heavy cream is so rich and the almondmilk is weakon their own. Together the heavy cream over powers, in my opinion, making it really rich.

    Additionally, people do metabolize 1/10th allulose as well so that is nonzero at 2 tablespoons as well. Cannot go by labeling when using any more than one, usually inappropriately sized, serving.

    my favorite milk blend is 3/4 cup macademia to 1/4 cup cream (though it is high calories) I enjoy it for my cereal

    Victoria, I just made this recipe to the letter - and it just tasted like watered down heavy cream to me, despite adding the 2 tbs each of allulose and whole milk powder ( made 1/2 gallon). I followed your recipe exactly, the only thing I did different is I used a hand mixer instead of an immersion blender. What am I doing wrong?

      Same. It tasted like watered down cream. I think a bit of splenda and a touch of sodium is needed.

    Producer's brand natural heavy whipping cream doesn't have carrageenan in it. The only thing it has in it is : Cream. Now, Producer's does have a couple different varieties of cream. Make sure to get the one in the solid pale cream colored container. Do not get the one in the brown container. The brown one DOES have carrageenan in it. I find Producer's Natural Heavy Whipping Cream at my Walmart. It's the only place I've been able to get it.

    I love the whole milk...have missed milk soooo much. This works for me and the carb count is doable. Especially if you are using it on cereal....use only about 6 oz . Thank you Victoria for taking the time to fine tune this. Yummmmm.

      @christinacharlick1190 I get the Keto Ratio. They have a Vanilla Almond Crunch & Maple Almond Crunch..I love them both! There's also one called Magic Spoon that has different flavors & Catalina Crunch

      ​@@ashleylee7523 ":ratio KETO" has corn meal, whole grain corn, maple syrup, corn bran and sugar. (Sugar being the 6th and 8th ingredients in the flavors you mentioned.) All of those ingredients are decidedly NOT keto. I check the labels on EVERYTHING, even if the product claims to be keto. Sorry to be the bearer of bad news, but ":ratio KETO" is NOT a keto cereal. I eat Wonderworks Keto Friendly cereal (available at Walmart) when I want cereal. Just 3 grams net carbs per cup for the Fruity flavor (similar to Fruity Pebbles in taste and my favorite), 1 gram net carbs per cup for the other 2 flavors (chocolate and peanut butter).

    I make my Yogurt with 2 quarts of heavy whipping cream, Inulin, and BioGaia LRueterie it comes out amazing if you are looking for a good Keto Yogurt

    I cannot get that kind of cream around this area. Apparently, it is rules and laws in selling grade-A cream. The only cream that is available in our area is whipping cream.

      So far Catalina Crunch brand is best keto cereal I've tried. Beware and read labels though because some "keto" cereals out there really aren't and have too many carbs still. Let alone always have to look out for the cheap bad sweetners like sorbitol, sucralose, Maltitol, maltodextrin

      @ashleylee7523 I finally found Magic Spoon in the Grocery Store! I tried the Fruit one and the Chocolate one. I will say that brand reminds me the most of regular cereal thus far, but it sure is pricey! But I'd rather pay for the taste of Magic Spoon over Catalina Crunch by comparison. I still haven't tried Ratio yet.

    I have been occasionally mixing water and HWC, but adding the sweetener and the thickener/emulsifier similar to alternative milks is a great idea.

    I only had regular powdered milk but it did improve the taste over the original zero carb milk video and you are right it taste just like real milk. Way to go!!

    I was looking for Sarah farms heavy cream at Costco. They don’t carry it. I always get the organic horizon and it’s delicious and pure contains no carrageenans. Some scientists believe that carrageenan can cause inflammation, digestive problems, such as bloating and irritable bowel disease (IBD), and even colon cancer.

      Fellow Canadian here on the west coast of Canada. Sadly I have been seeing that carrageenan has been added to most of the heavy cream brands that I buy! I may have to start doing the organic one!

      I use the carbmaster to make yogurt but I will make this for everything else! I make an egg porridge from Maria emmerich and I like milk in it. This will work well!

    You are not pointing out that the 2Tbsp of Allulose has 18 grams of Carb.

      It’s negative carbs. It’s like sugar alcohols their carbs do not count towards net carbs. It’s also like “fiber” the carbs are to be subtracted

    Why do you add sweetener? Since going keto/low carb I don’t like sweet stuff so much and I want my weight loss clients to not be depending on additives, especially sweeteners. We can’t buy allulose in Australia.

    I really like this milk, but am having troiuble with the "heavy cream" It separates and can kind of cause whipped cream if I mix it too much. I put the xantham gum in it, but it still feels a little watery. Have you tried putting Inulin in it?

    I appreciate your experimentations but I tried this recipe and it lacked sweetness and a little sodium. Just take a look at real milk’s nutrition label. I think that’s a good starting point when trying to recreate anything for keto. Again, I appreciate you and thank you for your videos. They are inspiring and I especially love your keto flour 2.0 recipe. 🙏🏽

    last I tried your old formula, it was way sweeter than your average whole milk. So I want to try it in a smaller portion, but I don't have spoons smaller that ¼ tsp for xanthan gum

      Xanthan gum is not sweet. It's a thickener. Allulose is what makes it sweet.

    BTW .75 cup of Heavy Whipping Cream is about 4.8 carbs. They get to say zero carbs if it is less than .5 carbs per serving size (in this case only a tablespoon).

      Indeed! Any time I use heavy cream, I automatically calculate .5 carbs per tbs to be safe. Nutrition label guidelines should more transparent. Some countries require 'to the tenth decimal point' reporting on the labels.

      There's Keto cereal now. It's quite expensive though. Catalina Crunch is one brand I can think of off the top of my head.

      I make homemade granola, Keto Cinnamon Crunch and Keto Vanilla/Chocolate Crunch Cereals which are all pretty nice with cold milk. I have been using almond milk but I will give this recipe a try for sure!

      You can make your own noncereal 'cereal' using recipes on the internet. Some are baked sweets and some use lupin flakes, hemp hearts, shredded coconut flakes, nuts and freeze dried low carb berries. We need a better word than one that is based on Ceres, the goddess of grain and harvest.

    Great video but you do realize that the heavy cream still has carbs. Companies dont have to disclose it if its below 1.

      Yup. And since heavy cream servings usually are 1 Tbsp, ½ cup is still 8 Tbsp of say .75 g of carbs. That would be 6 g of carbs - right where we are with standard milk.
