      Just one question how can differentiate if the kefir grains we buy are made from same starting culture that just have at max 8-9 probiotics species.

    I've been making kefir for a few months now. I started with grains ( milk) and havent looked back.
    The flavour was an issue at first but I blend some mango in to flavour it.
    My grains have increased to amounts where I need to give them away, freeze or feed to my dog. She loves them.
    I'd love to find out the amount of calories and nutrients in a glass of milk kefir.

    Thank you for this! It was very informative. I'm new to probiotics and making kefir. I was about to hit SEND on my order for the powdered packets, and so glad I watched this first because now I think I want the grains. There's one question for me still: I'm not clear what the health benefits are (or are not) based on the number of CFUs and strains. (You mentioned you like 8 minimum) but what does that equate to for our health. 300 billion vs 5 billion CFUs? Is there a law of diminishing returns...is 5 billion enough? What is the health benefit of the low billions vs the high billions? A billion is such a high number it's hard to translate. Thank you so much if you can clarify!

    Start out with powder; then, start using grains. However, the clear winner is indeed grains, not powder.

    What can you recommend if you live in a country that you cannot have access to the grains , how can you make it ? Or will you be left with using the powder ? , considering the grains cannot be transported unless in a container with liquid milk.

    Just get grains imo. If you need a break, fill up a medium to large jar with milk and put in the fridge. I forgot about them for close to a year and they were still alive and produced fine after giving them more milk.

    Can we store milk kefir in 10 cups of milk and leave it on the counter for longer? (Set it and forget it.) Can we feed milk kefir with coconut milk and prebiotics and sugar indefinitely? Does using plant based milk such as coconut milk have the same benefits as milk kefir using regular milk?

      Yes you can use coconut milk with kefir grains. Sit the grains in a glass container full of milk with lid and it should be done within 24hrs if you make sure it’s in a warm area. I turn my microwave on with a wet rag and let it get hot and steamy… then sit the glass in the warm microwave. Leave the hot steamy rag in there too. Try not to use the microwave for a full day and don’t open the door.
      If that’s not possible, turn oven on for a little bit then turn off and let it cook down. Then sit your kefir milk in there once it’s just barely warm. This will insure your grains WAKE UP and create kefir in under 24hrs. Depending on where you get your grains. I’ve run into those who couldn’t get the grains to cultivate in 24hrs. This is likely due to ultra pasteurized milk. It kefirs very fast with raw milk. But ultra pasteurized milk may take a little longer but it will work if you sit it in a warm area. Set it and forget it. Strain and then fill back up with milk and sit in frig till you’re ready to do it again. Good luck.

    How about No keifer grains and just pour 1cp store bought keifer in pasteurized milk is the quality the same?

    This is a kefir grain chicken-and-egg question, a company advertised that their dry-packet kefir starter will turn into kefir grains, but it didn't. How did sellers create the kefir "grains" then? I am sure it's easily producible as kefir has existed for 100s of years. Why couldn't modern people produce kefir "grains"? Chick-n-Egg question.

    I’m so confused. I thought that the kefir starter turns into kefir grains, that’s why I bought them ……… ?! A kefir company did a video showing that if you ferment for a week, it turns into grains and I don’t see any grains ……….

      Same question. I think from Mary's Nest to ask around friends or neighbors; they are robust and grow quickly, like kombucha SCOBY. I suspect you'd have better luck with unpasteurized and non homogenous milk (basically raw milk); but I don't get raw milk around me. So I may have to order online. The price has gone up 2X.

    Can't find ONE video saying what different "grains" or not grains to use to activate yourself.
    I'd rather go buy whatever these kefir grains are myself, like can you use oats, shredded coconut, seeds, or actually grains, like what base grain can you use to begin this process yourself.
    I'll be amazed if someone answered me

    I brought the freeze dried kefir grains from Walmart online independent vendor to make milk kefir. It was a one week process according to the instructions to have the kefir grow. I have being using it since 3 months have kefir daily.
    I have noticed using the 2% milk the drink is not as thick than whole milk. I still prefer 2% as I’m going healthy.

    This is a helpful video. Thanks so much. Nonetheless, although the bacterial counts and "contents"? were touted for the kefir grains, I didn't hear the names of the species/strains of the cultures in them. Being somewhat experienced with yogurt cultures, finding the names and stains - for the most part - is not difficult: so lwhat's with the kefir? Also, finding that our narrator's investigative team only got proper responses from one of eight producers of the starter culture type, suggests that - for some inexplicable reason - the producers of these products, whether kefir grains OR kefir freeze dried starters, have a strange sense of doing business. And them (the companies) saying that info is unavailable for "proprietary reasons", is hogwash. This video was made a year ago, perhaps some kefir companies have woken up by now? If so, please let us know! Meanwhile, keep up the good work. P.S. I did find one company which gave the culture names for their starter product. Unfortunately, when queried about the "leuconostoc mesenteroides" in it, I was referred to the internet where I found that this particular bacteria 'may have pathogenic properties' or words to that effect. That doesn't sound too good!

    I dont feel the same health benefits when drinking my homemade kefir made from kefir grains, vs just buying a bottle of kefir from the shop. Why is that? Are the probiotics all dead when you buy it at the shop?

    Why not use a multi bacterial strain Probiotic rather than the Kefir starter powders? you can find probiotics with15 20 bacterial strains. These work very well. I use one capsule per litre/quart. Thanks.

    Ok, I bought the powdered kefir under the false assumption that I would get my kefir grains from the first batch I made. I guess that’s why I never found any grains in my first batch.

      I got 10 gram from ebay, and after 9months with a month in freezer , i have 400G grains, i need to give some away or sell . it costs money to feed them and multiply, so i freeze again and just use small amount for a longer ferment.

    But how can you remake another kefir from those sachets again and again ? Can you explain on this matter please ? Otherwise if not it will be not worth it . I just bought a box of 5 sachets in it and it says you can make 40 liters out of them but instructions are italian and nothing to explain how to . Just only pour a sachet with 1 liter of milk and that’s it .

      Hi .u use 1 sachet make use, until 1 cup left then top up add 1 fresh litre of milk let set again. You've made another full batch. Can do this 4 or 5 times with t the one sachet.

      Grains can be used & grown continuously. Sachet limited reuse. So grains are the cheaper option in the long run.
