Those look delicious, Louise! We lived in Germany for nine years, and there was a bakery just a half a block from our house. I fell in love with the brötchen (the German equivalent to these crusty rolls); they baked them fresh all day, every day! I'm definitely saving this in my repertoire to try in the future.

Well you did it to me now. French and Italuan breads are my favorite and I am having a hard time finding this type of bread that isn't stuck in a bag and soft crust. Since your Spring Minestroni I ordered the Combi. It will be here tomorrow, so to get this bread recioe I know I made the right decision. Thank you Louise for all your tried and true recipes.❤
The combi has become my favorite way to bake bread. It’s a great appliance and I will definitely try this recipe! The only drawback to the Combi is that it definitely holds water inside, even if you run the air fry function afterward. You just need to make sure it’s thoroughly dried out before shutting the door.
First time watcher great video! I got to say my first air fryer type product is the Ninja Combi. And it changed my life. whole meals in 15 minutes still working out the kinks but even the air fryer chicken wings and fries me I thought it was some type of trend, but it’s great.
your end results are what I was experiencing every time I split the dough between oven and ninja foodi, the ones in the foodi are shiny, crispy and soft in the inside, also the proofing is a lot better, while the ones from the oven denser and dull, and overall just not as good. I love the steam bake setting this is brilliant for buns and also for bagels!!!
I don't have the Ninja Combi, but I have a Cosori Dual Blaze, which has a crisper tray, so maybe I'll try the rolls in that. OR do them in my oven with a small pan of water on the lower rack. Is there some reason you didn't want steam in your oven? I've seen bread recipes that recommend putting in a pan of water.
After the video, Jeff did a blind tasting and he picked the oven ones over the Combi ones! I wish I would have thought to do that on video. I still prefer the Combi, but they both are good!
Louise, I am now living in my RV but my oven is only large enough for a small frozen pizza. I have the largest Ninja foodi, and the Ninja possible cooker. But I need something to bake in. Mainly bread, pastries, cakes, caseroles, cheesecake, flan and any other recipes that catch my eye. I'm looking at grills and smokers... Any ideas?
I've seen a lot of your videos with different Ninja machines, but couldn't find one where you make bread in a Ninja Speedi. Have I missed it? If not, can you make one with the Speedi where you proof and use the steam and crisp function? Thank you!

Yes. You can use the proof function if your model has that or you can use dehydrate on the lowest setting, but make sure to keep a moist towel covering the dough because the fan runs on the dehydrate setting.
Why don't you just admit that you are advertising for the Ninja Combi ? You didn't proof the oven rolls using moisture, nor bake using moisture, so not a legit comparison.
It is a legit comparison between an oven and the Combi. Most people don’t add steam to their ovens so I was showing the difference. I’m not advertising for the Combi. I create recipes for a living, I don’t sell appliances.
Ninja has probably sold more appliances due to this channel because Louise actually uses them and teaches people how to use them for great results. They should be paying her a hefty commission but she is NOT sponsored by them. If you actually watched her channel you would know that.

I think you may have needed to extend the proof on the oven buns. But they all look great

I'm going to try these in my combi this weekend. I wonder if cream puffs would work in the combi. Have you tried that yet?

Covering with a damp cloth is proofing with moisture.
