So far I never make it into a big one, but with the same recipe, it should still fluff up. Even without the cross drawn with oil, it will still fluff and open (I didn’t make cross with oil for some of my steamed cakes recipe on YT channel), the cross most of the time allowing the cake to open to the way you want, it will open randomly if not making the cross or the oil not enough for the cross (based on my experience). Yes it works well with any steamer.😊

Can you use cake flour instead of self rising flour?
Can. But you need to add baking powder. About 1 tsp of baking powder per 100g of plain flour.
